Simple Arroz Con Pollo= Chicken With Spanish Rice
4 boneless skinless chicken breasts 1 lb hot italian sausage 1 lg green pepper, chopped 1 lg red pepper, chopped 1 tbs garlic, minced 1/2 cup chopped onion, chopped 1 pkg yellow rice or saffron rice, family sized salt & pepper hot sauce good grade olive oil Coat the bottom of a large fry pan or saute pan with olive oil. Over med high heat, saute garlic and onion in the oil until tender but not browned. Cut the chicken breasts into 1.5" chunks. Remove the sausage from its casings and crumble into small pieces. I Need Some Help

Crab Stuffed Mushroom Caps
24 large mushrooms 1/4 cup extra virgin olive oil minced garlic any flavor Philadelphia (whipped) cream cheese 1 can crab meat Parmesan cheese 6 tablespoons butter Remove stems from the mushrooms. Carefully trim the mushroom cap back to expose the spore area. Do this at an angle so that the cap can hold more mixture. In a bowl, combine the container of whipped cream cheese, three tablespoons of Parmesan cheese and the crab meat. Fold the mixture over until thoroughly combined. Pour 1/2 teaspoon of extra virgin olive oil into each mushroom cap. Add a sprinkle of minced garlic into the oil. Add one tablespoon of crab mixture into each mushroom cap. Put the mushroom caps into a foil container. Slice the butter into cubes and add them to the bottom of the container. Sprinkle minced garlic over butter. Cover the container with foil and bake at 350°F for 45 minutes. Switch the oven to broil and remove the foil during the last 5 minutes of cook time. Makes 12 servings.

Beef Tamale Pie
1-1 1/2 lb. lean ground beef 1 tbsp. olive oil or vegetable shortening 1 c. chopped onion 1 clove garlic, minced 1/2 c. chopped green pepper (optional) 1 can (16 oz.) whole kernel corn 1 can (1 lb.) tomatoes 1 can (8 oz.) tomato sauce 1 tbsp. salt 1-1 1/2 tsp. chili powder 1/4 tsp. pepper 1/2 c. corn meal 1 c. pitted ripe olives Brown beef in skillet. Add next 3 ingredients and cook 2-3 minutes, stir in tomatoes, corn seasonings and simmer 5 minutes. Mix cornmeal and 1 cup water. Stir into first mixture. Cover and cook slowly 10 minutes. Add olives and pour into shallow 3 quart baking dish. Pour topping around edge of dish and bake in moderate oven (375 degrees) about 20 minutes. Heat 1 1/2 cups milk, 1 teaspoon salt and 2 tablespoons butter in heavy saucepan. Gradually stir in 1/2 cup yellow cornmeal and cook, stirring until thickened. Remove from heat and stir in 1 cup grated sharp Cheddar cheese. Then stir in 2 slightly beaten eggs

Simple Maple Sponge Cake
Serves 10-12 1 cup maple syrup 6 eggs 1 cup flour (1 tsp. vanilla - optional) Separate eggs. Put whites in a large bowl, yolks in a medium bowl. Sift flour several times, put in a small bowl. Beat egg whites until stiff, but not dry. Set aside. Beat yolks until light, add syrup (and vanilla if desired). Beat again to mix well. Pour yolk syrup mixture into whites and fold gently with wire whip unti blended. Gradually add flour 1 tbsp. at a time while folding mixture. Lightly dust large tube pan. When mixture is well blended, pour into tube pan. Bake at 325 for about 1 hr. Cool on rack, remove cake from pan. If you need to dress it up - just add strawberries and whipped cream.

Homemade Cracker Jack
6 quarts unseasoned popped popcorn 2 cups brown sugar 1/2 cup Light Corn Syrup 2 sticks butter 1 tsp salt 1/4 tsp Cream of tartar 1 tsp Baking soda Preheat oven to 200 degrees F. Divide the popcorn between two large bowls. Oil 2 lipped cookie sheets very well and set aside. In a deep saucepan combine brown sugar, corn syrup, butter, salt, and cream of tartar. Insert candy thermometer. Bring to a boil and cook the mixture over medium heat for about 5 min, stirring occasionally, until the thermometer registers 260 degrees F. (hard ball stage). Remove from the heat and quickly stir in baking soda. The mixture will foam. Pour the syrup mixture over the popcorn, half into each bowl. Work quickly to coat all the popcorn with the caramel. Spread popcorn evenly on the cookie sheets and bake for 1 hour, stirring 3 times. Remove from oven and spread on wax paper to cool, breaking up the larger pieces, if necessary. Store in airtight containers

Set the bird on a roasting rack in a roasting pan; breast side up and brush generously with half the butter and season with salt and pepper. Tent the bird with foil. 2. Roast the turkey for 2 hours. Remove the foil and baste with the remaining butter. Increase oven temperature to 425 degrees F and continue to roast until an instant read thermometer registers 165 degrees F in the thigh of the bird,

Serves 8 4 pounds pork spareribs 1 cup brown sugar 1/4 cup ketchup 1/4 cup soy sauce 1/4 cup Worcestershire sauce 1/4 cup rum 1/2 cup chile sauce 2 cloves garlic, crushed 1 teaspoon dry mustard 1 dash ground black pepper 1 Preheat oven to 350 degrees F (175 degrees C). Cut spareribs into serving size portions, wrap in double thickness of foil, and bake for 1 1/2 hours. Unwrap, and drain drippings. Place ribs in a large roasting pan. 2. In a bowl, mix together brown sugar, ketchup, soy sauce, Worcestershire sauce, rum, chile sauce, garlic, mustard, and pepper. Coat ribs with sauce and marinate at room temperature for 1 hour, or refrigerate overnight. 3. Preheat grill for medium heat. Position grate four inches above heat source. 4. Brush grill grate with oil. Place ribs on grill, and cook for 30 minutes, basting with marinade.

4 to 6 chicken breast halves, boneless, without skin bell pepper strips (use fresh or frozen pepper stir fry pepper strip combo) 1 can Pepper Jack cheese soup 3 tablespoons chunky salsa Combine all ingredients. Cover and cook on LOW for 5 to 6 hours, until chicken is tender. Serves 4 to 6.

This Weekend..09/23/06
This weekend was so awesome. Me and my Sis went out to play pool, and we met two wonderful guys that we met on here on LC. They were funny. The strange thing is we were skeptical about it at first, but now we are ready to meet all of our friends on here. We played pool, danced, talked, played more pool, and danced some more. I think my Sis has fallen in love...LOL. The good thing about LC is that you get to know the person first, and then the rest falls in place. TO ALL THE KIDS WHO SURVIVED the 1930's 40's, 50's, 60's and 70's !! First, we survived being born to mothers who smoked and/or drank while they were pregnant. They took aspirin, ate blue cheese dressing, tuna from a can, and didn't get tested for diabetes. Then after that trauma, we were put to sleep on our tummies in baby cribs covered with bright colored lead-based paints. Woman, 3 Children Safe After Hike
A woman and three children missing on Independence Pass since Monday were found safe this morning. Stephanie Sakson, 48, 9-year-olds Andra Sakson, Jillian Wentzel, Matthew Palomino and a Jack Russell terrier named Nik Nik Nik were found above treeline off the Midway trail at about 10:30 a.m., according to Pitkin County authorities. They were cold, tired and hungry, but otherwise in good shape, searchers said. Rain, snow and fog made conditions difficult for searchers, and aircraft were unable to participate. Salmon In Lime Ginger Sauce
Preparation Time: 10 minutes Marinade Time: 10 minutes Cooking Time: 15 minutes Serves: 4 Ingredients 1/4 cup fresh cilantro, chopped 3 Tbsps. fresh ginger, chopped 2 cloves garlic, finely chopped 2 jalapeño peppers, seeded and chopped 3 Tbsps. lime juice 1 Tbsp. olive oil 1/4 tsp. turmeric 4 salmon fillets, about 6 oz. each Instructions Combine first 4 ingredients in a blender or food processor. Process until smooth, adding a little water if necessary. Add next 3 ingredients and mix thoroughly. Transfer mixture to a shallow dish. Add fish fillets and toss to coat well. Cover and marinate 10 minutes in the refrigerator. Spread enough marinade to cover bottom of a large, heavy nonstick skillet. Add fish fillets to skillet. Spread remaining marinade over fish fillets. Cover skillet tightly and cook over medium low heat 15 minutes until fish is opaque throughout.

Stuffed squid are delicious, and can be filled with an unlimited combination of ingredients. As a general rule, to end up with a tender result, squid should be cooked quickly as in this recipe, or slowly over low heat in a sauce of some type. My Feelings About Everything

Graphic Arts Baby!!!!
Yeah i took one year of graphic art in high school. In order to take art major courses art students had to complete and pass drawing and painting which was pretty much an introduction to art major 1. So, luckily i did pass and i contiued to the art major's. We were luck enough to have a great art program that had three art major courses which each last a year. In other words it takes up three years of high school. I loved every moment of it too. It really taught me a lot about my abilities and lack there of. Ever since i was in elementary i've taken art courses if i was able. I don't think i have good drawing and painting abilities. So i desided that graphic arts would better suite me because of the newness of it. I really enjoy using photoshop and different graphic art programs. Someday i think it would be great to get a job in that feild. It's not often though that people get to do what they really want for a living. Maybe i'll be one of the lucky ones.

The Friday That Sucked Out My Brains...
Even minor holiday weekends suck. Especially when the store is severely understaffed. I came in, tried to clock in, got an error. I tried again, another error. Here is the truth. I am completely stressed out. I do not know what to do!! Grilled Pork Roast With Pepper Jelly Glaze
Ingredients: 2 pound pork loin roast Marinade: 1/2 cup apple juice 1/2 cup cider vinegar 1/2 cup hot pepper jelly Glaze: 1/3 cup hot pepper jelly 2 tablespoons cider vinegar Instructions: Place pork in large self-sealing plastic bag. Clam Fritters
1/4 C. all-purpose flour (unsifted) 1/2 Tsp. baking powder 1 egg 1 1/2 C. minced or ground clams half butter or margarine and half salad oil (about 1/4 c. each) salt and lemon wedges (optional) In a bowl combine flour, baking powder and egg with clams; mix until batter is well blended. In a wide frying pan, heat butter and oil (1/4-inch deep), over high heat until it foams but doesn't brown. Drop clam batter into hot fat by heaping tablespoonfuls, adding as many spoonfuls as will fit without crowding. Cook, turning once until fritters are browned on both sides (less than a minute on each side). Remove from pan, drain briefly on paper towels and arrange on warm serving platter; keep warm until all fritters are cooked. Add more butter and oil to pan, if necessary and repeat process with remaining clam batter. When all fritters are done, salt to taste, if desired and serve immediately. Garnish with lemon wedges. Makes about 20 fritters (2-inches in diameter).

im bored and couldnt fall back to sleep cuz ive been working midnight shifts so im not used to sleeping at a normal hour. i have to go to a training thing woohoo.. after work im gonna go look at a house so may be getting my own place which would be nice. i still sadly don't like my life.. it's boring, and still feels i have nothing meaningful but i guess i just have to hope that will change. umm nothing is really new. im a little worried cuz i think someone is messing with our dogs. cuz one night my dog kept not being on her leash and i found it tossed and wrapped around a high tree branch. yesturday she was off and the leash was wrapped around my puppy and connected. now that could not be done by a dog. it was taken off and wrapped around the other dog and resnapped on. he yelped when i took it off from around his waste. so that scares me, especially since i dreamt i found my dog dad before i moved here. so ya that's it a boring meaningless halloween and have just been working.

Chili Con Carne
1 lb. ground beef 1 onion, cut in bits 1 tbsp. fat 1 pt. canned tomatoes 1 tbsp. flour 1/2 c. rice 1 tbsp. chili powder 1 tbsp. salt 1/4 tsp. paprika 1 qt. kidney beans Put the meat, onion and fat in saucepan. We work at minimum, medium, and maximum security Correctional facilities. We are empowered by the state to enforce its penal laws, rules, and regulations of the Departmen of Correctional Services. In short, we are policemen (and women). Our beat is totally inhabited by convicted felons who, by definition, are people who tend to break laws, rules, and regulations.

Turtle Cake With Caramels
INGREDIENTS: * 1 German chocolate cake mix * 4 ounces butter or margarine, softened * 1 1/2 cups water * 1/2 cup oil * 1 can sweetened condensed milk * 1 pound bag caramels, unwrapped * 1/2 to 1 cup chopped pecans * . * Turtle Cake Frosting * 4 ounces butter * 3 tablespoons cocoa * 6 tablespoons evaporated milk * 1 box (1 pound) confectioners' sugar * 1 teaspoon vanilla PREPARATION: Combine and mix well cake mix, butter, water, oil and 1/2 can sweetened condensed milk. Pour half of the batter into a greased and floured 13X9X2-inch baking pan. Bake in a preheated 350° oven for 20 to 25 minutes. In a saucepan over low heat, combine caramels and 1/2 can Eagle Brand Milk. Stir mixture, heating until caramels are melted and mixture is smooth. Spread over the baked cake layer. Berries With Cointreau And Whipped Cream
This is similar to a strawberries Romanoff dessert, with blueberries and strawberries soaked in a sweet Cointreau mixture. INGREDIENTS: * 1 pint strawberries, hulled, washed, and halved * 1 to 2 cups fresh blueberries * 2 to 3 tablespoons Cointreau or orange juice * 1 tablespoon lemon juice * 1 teaspoon lemon or orange zest * 1/4 cup granulated sugar * 1 cup heavy whipping cream * 3 tablespoons powdered sugar, sifted * 2 tablespoons sour cream, optional PREPARATION: Put strawberries and blueberries into a bowl. In a cup, combine sugar and Cointreau; add lemon juice, orange or lemon zest, and sugar. Pour over berries and toss gently to coat. Cover bowl and refrigerate for 2 to 4 hours. Sautéed Scallops On Lemon Fettuccine
1/4 cup all-purpose flour 1/2 teaspoon salt 1/2 teaspoon cracked pepper 1 pound sea scallops 2 teaspoons olive oil 2 teaspoons margarine 1/3 cup vodka or dry white wine 1 teaspoon grated lemon rind 3 tablespoons fresh lemon juice 1 garlic clove, minced 6 cups hot cooked fettuccine (about 12 ounces uncooked) 1/4 cup finely grated Parmesan cheese 1/4 cup chopped fresh flat-leaf parsley Combine first 3 ingredients in a large zip-top heavy-duty plastic bag. Add scallops to bag, and seal; shake to coat. Heat oil and margarine in a large nonstick skillet over high heat. Add scallops; cook 2 minutes on each side or until lightly browned and done.
