So now that i'm working at Family Dollar, I once again realize how ignorant and dumb people can be. Over the past few days customers have annoyed the fuck out of me. For example, yesterday this lady had her two children in a cart, she left them by the clothes racks and she walked off talking on her phone, her children sat there tearing the price tags off the clothes! You don't go shopping an dleave your fucking kids in the cart while you go and shop and talk on your damn cellphone! Well, apparently, I'm even more talented than I realized. I provide both of my employers my schedule of availability several months in advance. It would seem, however, that my schedule of availability doesn't coincide with my June work schedule. Let's take June 4th for an example. I'm scheduled to work from 6 AM to 6 PM at the jail on the fourth. I'm also scheduled to start my shift at the Village at noon. How 'bout June 7th-8th? The Weekend
I figured I would tell you all about my weekend. Play got here on fri a lil after 3. We went to outback for dinner that nite and then after a few attempts to see At Worlds End(Pirates of the carribean) We saw it very late cuz it kept selling out. It was good! See it. Saturday we went to a few bike shops, out to lunch at Red lobster and then we saw the movie BUG. It was the worst movie we had ever seen. I mean it was AWFUL. After the movie we went to Best Buy and looked around then out to dinner. After dinner I figured I would get him some Smirnoff Ice and I wanted to give him an extra surprise for his bday. I got him a digital camera. So long story short he got his camera and then passed out on me. Sunday drove 3 hours to Seaside Heights. I kicked his ass at skeeball. Memorial Day
was pretty boring, but eventful LOL. Mom knocked on my door at 7:30 asking if i wanted to go to walmart, which really meants "you need to come to walmart with my to help me carry things" so i got up, went to walmart. we didnt buy anything there cause their flowers were really crappy so we went to lowes, got flowers, waited for like 10 minutes in the checkout cause they were having problems. Then we went back in to buy a grill. We had to wait ten more minutes for some high school punk to get it for us, wait int he checkout for a price check for some lady who was buying flowers, then had to wait for him to find the propane, i was agitated. SO i came home, put the grill together, took 3 hours. Planted some more flowers. By this time its too late to take a nap (to compensate for the 3 1/2 hours of sleep i got. i was wide awake until 3:30 ish) Im so tired lol. Just Stuff
Had a pretty good weekend. :) It always helps when I have my son with me. Had to take him home yesterday but still spent the day with him. He had a parade and then we wet to see a movie(Pirates). His mother knew we were at the movie and what time it started, and STILL called during the movie and on the way home to find out just when I was bringing him back. UGHHHHHHHHHHH!!!!!! Drives me nuts! I had to be the mean Dad on Sunday. He didn't eat his supper. I didn't say much. But when bedtime came he asked for his icecream. I said no, he could eat his orange he didn't eat. I had already gotten rid of the chicken. He cried, pouted, begged. And yes, I CAN say NO to him..lol. He did end up eating some fruit. Driving back out tonight and Wednesday night for soccer.. last games of the spring season. Off to a meeting now. Hope everyone has a great day.

NGREDIENTS: 2 tablespoons butter, softened 3/4 cup sugar 1 egg 1 egg white 1/2 cup plus 2 tablespoons buttermilk 1/3 cup water 1 tablespoon white vinegar 1 teaspoon vanilla extract 1-1/2 cups all-purpose flour 1/4 cup baking cocoa 1 teaspoon baking soda 1/2 teaspoon salt 1/3 cup miniature semisweet chocolate chips DIRECTIONS: In a mixing bowl, cream butter and sugar. Add egg and egg white, one at a time, beating well after each addition. Beat on high speed until light and fluffy. Stir in buttermilk, water, vinegar and vanilla. Combine the flour, cocoa, baking soda and salt; add to batter just until moistened. Stir in chocolate chips. Fill muffin cups coated with nonstick cooking spray three-fourths full. Bake at 375° for 15-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Yield: 14 cupcakes.

From Bad, To Worse, To Whatever
So it's common knowledge now, to anyone that reads this, that I lost my job. I keep applying for new jobs, and hoping something would happen and my luck would turn around, but that simply isn't the case right now. Interview after interview, application after application, looking for a new job is awful enough, but now my options will be even more limited. Since I had my license officially suspended, I won't be able to drive around to get to a new job. I won't be able to drive anywhere to do anything, I'll be basically stuck at home for 60 days now. When I got the notice, I saw that I could appeal, and I tried to, but by the time I finally had all the paperwork straightened out, I had missed the time limit to file my appeal. So far, I am left with no job, and no license. People seem to forget how to call another person on the telephone as well, seeing as no one has called me really in about a week. Life does indeed go on, but I thought my friends might have been a little different

I Lost It!!!!
Well today is a very down day for me. I got a call this morning from my employee placement agent, she told me that my current assignment at a really great company I have been with for about the past 4 months, has been terminated/cancelled. I Am A Bitch
This Monday I hung out with this guy that I like and this dude that likes me and has liked me for about two years. We tried dating but I fucked that up. The whole night I was making out with the guy that likes me. And when my sister showed up with her two guy friends, we started hard core drinking games, I got drunk off of my ass, and was on the verge of almost sleeping with the guy that likes me. Today Things Seem Okay But Then Again....
So far everything has been pretty much quiet over here (meaning no phone calls) and for that I am grateful. I have been so frustrated in the past few days, that trying to take my mind off of things doesn't seem to help, and every time the phone does ring I am very cautious at this point. When I saw my ex I was thinking, ok, he isn't going to bother me as much but then as the time went on, I saw a different side of him. I know, my friend Bill is worried, but what can he do? He's about an hour away from here (Note, Bill is my best friend for over so many years that I love him to pieces) and he can't reassure me that yeah, I will be ok. I knew I should have trusted my gut instinct on this. Oh well. I might add more to this in a bit. Going to get some food right now for dinner.

Yesterday I met with my tech crew of welders/machinists and I am happy to say my new spectacular extreme stage escape, aptly titled, "The RAMMSTEIN" is now officially under construction. If preliminary designs are anything to go by this death dealing extreme fire device will look like something right out of a post apocolyptic industrial nightmare! Ok, so it’s about time for an update on my physio/recovery…. I am back to work as of next week. I know I will get no sympathy for anyone, because I have been off for a whole year, but it is going to be hard. I’m looking forward to it though. As for my rehab, that has unfortunately taken a turn for the worse. Not good at all…. As I have said before, last summer I was up walking and almost free of me wheelchair. It felt so great! What has happened in the last few months to put a damper on this is my right ankle as flared up and started causing problems. I’m not able to weight bare on it for very long, which makes walking almost impossible. No fun… I do have good days from time to time; on those days I still try and get up and to some walking to maintain what I have gained in strength around my knees. My goal is still the same, I will walk. I have seen my doctor, and what the plan of action is now is to get in and see a surgeon about my ankle, see if there is anything that can be do

Chicken Sandwitch
I was just looking at these thinking- Wow, my arm looks kinda long. lol. I just spent about an hr and a half making a chicken sandwitch. I was going to put the chicken in a crockpot,, make a penutbutter and jelly sandwitch, and go to sleep. But I put the chicken in the crockpot and it started to leak. there is some inner container one is supposed to put in the crockpot. I haven't ever used a crockpot like that before. So I had to wash it out. It said not to emerse in water. I didn't emerse it, but I still don't know if it will work now. I ended up cutting up the chicken, and then frying it in frying pan. After it was done, I realized I didn't have any tortillas to go with it. So I put it on some bread and ate it. It was good, but I didn't expect to spend that much time on it. cutting and skinning and cooking and shtuff.

Yes, I still think of her at least twice everyday. I'm not pleased with my appearance but am very proud I am making an effort to improve it. Things Are Different Now
I guess you could say i am single. Things just are not working out between the mother of my child and me. But being single isn't that bad i guess.... Feeling Terrible
My allergy to grass pollen has hit an all time high. The grass pollen of western Oregon is extremely HIGH right now and my head is completely congested, I have a terrible sinus headache, my nose is running, and my eyes are watering. Does anyone have a favorite allergy remedy, pill, nosespray, etc that might help me get rid of this over loaded and stuffed head feeling? I sure would appreciate any relief. I have had this going for about 5 days now and it just seems worse with each day. And from the pollen report on last nights news broadcast the grass pollen count is supposed to peak out this weekend... so it will be getting worse over the next few days. Any help?

the other day at work I came to a realization.. So.. Chicken Tacos
Ingredients * Nonstick cooking spray * 1/2 cup chopped onion (1 medium) * 1 clove garlic, minced * 2 cups chopped cooked chicken * 1 8-ounce can tomato sauce * 1 4-ounce can diced green chile peppers, drained * 12 taco shells * 2 cups shredded lettuce * 1 medium tomato, seeded and chopped * 1/2 cup finely shredded reduced-fat cheddar cheese and/or Monterey Jack cheese (2 ounces) Directions 1. Fish Fillet En Papillote
Sliced mushrooms 3/4 lb. fish fillets, any type Chopped fresh tomatoes Chopped green onion Seasonings, your choice Herbs, your choice Sliver of butter Splash of dry white wine Paper wrap or foil Place on the wrapping a bed of sliced mushrooms and the fish fillets. Cover with chopped tomatoes, onions, seasonings, herbs, butter, and wine. Secure wrapping and place on ungreased baking sheet. Bake at 400 degrees for 15-20 minutes or until fish flakes when tested. Red Beans & Rice
1 Tbsp Unsalted Butter 2 Tbsp Creole Seasoning 1 Cup Onion, chopped 1/2 Cup Bell Pepper, chopped 1/4 Cup Celery, Chopped 1 Cup Andouille, Cubed 1/2 lb. Small Red Kidney Beans (soaked overnight or for at least a few hours) 1 Tbsp Fresh Garlic, Minced 3 1/2 Cups Chicken Stock (You could certainly use water) A few Pork Neck Bones (be careful of any small bones that could fall off and get lost in the pot) 3 Fresh Bay Leaves 1 tsp Red Wine Vinegar (When I don't use Pickle Meat, I add a little vinegar because I like the flavor it gives) 1/2 Cup Tomato Sauce (I learned this from Louis Armstrong's Recipe) 1 Tbsp Italian Parsley, Finely Chopped 1/4 Cup Green Onions, thinly sliced on the bias 1/2 Recipe Creole Boiled Rice Mix together the Holy Trinity (Onions, Celery, Bell Pepper). Drain the beans. Melt the butter over medium heat. Add 1/2 of the Holy Trinity, 1 Tbsp of the Creole Seasoning, and the Andouille, turn the heat to medium high. Cook this for about 7-10 minutes, st

Pralines
1 cup light brown sugar, packed 1 cup granulated sugar ½ cup light cream 1 ½ cups pecans, halved 2 tablespoons butter Combine sugars and cream in a heavy 2-quart saucepan and bring to boil over medium heat, stirring occasionally with a wooden spoon, until mixture forms a thick syrup. Add pecans and butter and continue to cook over medium heat, stirring frequently. Remove sauce pan to a heatproof surface (such as a wire rack) and let cool for 10 minutes. Use a tablespoon to drop rounded balls of the mixture onto sheet wax paper or foil, leaving about 3 inches between each ball for pralines to spread. Allow to cool. Makes about 12 candies.

Bourbon Pecan Pie
2 large eggs (slightly beaten) 1/4 cup dark Karo syrup 3/4 cup sugar 4 teaspoons corn starch 8 tablespoons butter 1/4 cup Jack Daniels bourbon 6 oz semi-sweet chocolate 1 bag pecan halves Preheat the oven to 350 degrees. Mix eggs and Karo. Combine sugar and corn starch, add to egg mixture. Melt chocolate and butter, cool. Add bourbon and combine with egg mixture. Beat together in mixer on slow speed. Pour into a 9 inch unbaked pie shell. Sprinkle evenly with pecan halves. Bake on cookie sheet for one hour. Pie should be firm and will "set-up" while cooling.

Crawfish Pie
4 tablespoons (1/2 stick) butter 1 cup chopped onions 1/2 cup chopped bell peppers 1/2 cup chopped celery 1 1/2 teaspoons salt 1/2 teaspoon cayenne 1/4 teaspoon freshly ground black pepper 1/2 cup chopped, seeded, and peeled tomatoes, or 1/2 cup chopped canned tomatoes 1 pound crawfish tails 2 tablespoons chopped parsley 2 tablespoons flour 1 cup water 1/2 recipe Basic Savory Pie Crust Preheat the oven to 400 degrees F. Melt the butter in a large skillet over medium-high heat. Add the onions, bell peppers, celery, salt, cayenne, and black pepper. Saute for about 8 minutes, or until golden and wilted. Add the tomatoes and cook for about 6 minutes, stirring occasionally. Add the crawfish tails and parsley. Cook, stirring occasionally, for about 4 minutes. Dissolve the flour in the water and add to the pan. Stir for about 2 minutes, or until the mixture thickens. Remove from the heat. Let cool for at least 30 minutes. Place the crust in the bottom of a 9-inch pie pan and cr

Blackened Redfish
1 1/2 tsp. cayenne pepper 1 1/2 tsp. paprika powder 3 tsp. salt 1 tsp. onion powder 1 tsp. garlic powder 1/2 tsp. white pepper 1/2 tsp. black pepper 1/2 tsp. oregano 1/2 tsp. thyme olive oil 1/4 lb butter (1 stick) Mix all the dry ingredients thoroughly to form the blackening mix. Rub 3 or 4 single/serving redfish fillets with the olive oil and dust with the blackening mix. Heat a cast iron skillet to nearly red hot. Drop one-half of the stick of butter into the pan. Immediately place the redfish fillets in the pan which should be cooked for no more than 2 minutes per side. Add additional butter after turning if needed. It is recommended to cook blackened fish outside because of the amount of smoke that is generated. Alternate method for inside cooking. It will still generate quite a bit of smoke. Use any type of skillet, preferably with a non-stick finish. Place the pan on the burner set on high and add one-fourth of the stick of butter. Wait until the butter turns

Fried Turkey
1 (10-pound) turkey 2 tablespoons seasoning of choice 2 tablespoons of your favorite dry rub 3 to 5 gallons peanut oil Cooks Note: To measure the amount of oil needed to fry the turkey, place turkey in fryer, add water to top of turkey, remove the turkey and the water line will indicate how much oil will be needed to fry your turkey. Having too much oil can cause a fire. The pot should not be more than 3/4 full or the oil could overflow when the turkey is added. Wash bird inside and out, and allow to drain. Rub turkey all over with seasoning. Coat turkey with dry rub. Allow the bird to sit until it reaches room temperature. Heat peanut oil in a turkey fryer or a very, very large stockpot to 350 degrees F. Lower turkey into hot oil, very carefully, making sure it is fully submerged. Fry turkey for 3 minutes per pound plus 5 minutes per bird. Remove turkey from oil and drain on paper towels.

Dwelling In Darkness…
I’ve been into the sweet chocolates my whole life. Milk… White… Cookies n crème… Dark chocolate was always too bitter for my pallet and I didn’t like the aftertaste. Then I was grabbing some Hershey’s Miniatures one day (just a small handful, less than five) and when I got back to my desk I realized that I’d accidentally grabbed a Hershey’s Special Dark. New Diet For Me
