Sesame Chicken with Peanut Sauce
This amazing dish is superflavorful, thanks to both a tangy marinade and a creamy peanut sauce. And you'll love the way the sesame seeds crisp up and add a bit of crunch to the chicken.

Ingredients:
Chicken
* 1 tablespoon honey
* 2 tablespoons orange juice
* 1/4 cup hoisin sauce
* 1 tablespoon fresh ginger, peeled and finely chopped
* 1 tablespoon soy sauce
* 1 clove garlic, crushed
* 4 (4-to-6-ounce) chicken breasts, skinless and boneless, pounded flat
* 2 eggs, beaten
* Sesame seeds, as needed
* 1 tablespoon vegetable oil
Peanut sauce
* 1/4 cup low-fat peanut butter
* 3 tablespoons lemon juice
* 2 tablespoons soy sauce
* 2 tablespoons chicken broth
* 1 teaspoon curry powder
Directions:
Combine the marinade ingredients. Place the marinade and chicken breasts in a plastic bag. Marinate for up to 8 hours, turning occasionally.
Remove the chicken and discard the marinade. Dip the chicken in beaten egg; roll in sesame seeds.
Heat the oil over medium-high heat in a large skillet. Add the chicken and cook for 5 minutes on each side, or until the chicken is cooked through.
Drizzle with the peanut sauce (directions below) and serve immediately.
For the peanut sauce: Whisk together all of the ingredients just before serving.
