The Lake Trip
After a long week of work, we both decide that it would be a good idea to go up to the lake for the weekend to unwind and relax. We get online and reserve a room in a secluded log cabin. Shower Time
Erica and I had just gotten home from the club and were beat. Our Friday nights usually went on and on at the clubs. Most of the time spent dancing and drinking. Out of the goodness of my heart today, I volunteered to bring in carts until the regular cart-pusher arrived, even though I already had a long list of things to do. At the early hour, there was no traffic, so it was easy to get all the carts in. I also restocked the water coolers. Unknownst to me, the garbage bin I was using to truck them to the floor was broken (bent wheel). I rounded a corner, and the whole thing collapsed. The heavy water coolers tumbled out, and one got punctured. Water sprayed and dribbled everywhere, all over the floor, my boots and pants. I was not amused. Green Chili Stuffed Chicken Breasts
4 boneless skinned chicken breast halves, pounded thin 3 ounces cream cheese 3/4 cups shredded Cheddar or Monterey Jack cheese 4 ounces green chilies 1/2 teaspoon chili powder salt and pepper to taste 1 can cream of mushroom soup 1/2 cup hot enchilada sauce Combine cream cheese, shredded cheese, chilies, chili powder and salt and pepper. Place a generous dollop on each flattened chicken breast, then roll up. Place chicken rolls in the crockpot, seam side down. Top chicken breast rolls with remaining cheese mixture, soup and enchilada sauce. Cover and cook on low for 6 to 7 hours. Serves 4.

Why go out and buy expensive sushi when you can make it right at home? This simple dish is made from steamed rice, with avocado, cucumber and smoked salmon all wrapped up in dried seaweed.
