Lemon Cheese Desserts With Strawberry
2 c. flour 1/2 c. brown sugar 1 cube butter 1/2 c. chopped nuts filling: 1 3/4 c. whipping cream, whipped 1 (8 oz.) pkg. cream cheese 1 tsp. vanilla 1 c. powdered sugar Sauce: 1 pkg. frozen strawberries pinch of salt 1 pkg. Danish dessert 2 tbsp. lemon juice Mix above as for pie dough. Spread on cookie sheet. Bake at 375°F until brown, let cool and crumble up. Put 1/2 crumbs on bottom of pan, reserving the balance for the top of dessert. Mash cream cheese until soft, add other ingredients to the cream cheese and spread on crumbs. Cook according to directions on Danish dessert package. Let cool and spread over cream cheese mixture. Sprinkle rest of crumbs on top.

Quick And Easy Chocolate Dessert
1 box chocolate cake mix 2 4oz boxes chocolate instant pudding 1 can cherry pie filling 2 sm. tubs coolwhip Prepare cake mix according to directions on box in a 13x9 pan. Let cake completely cool. (Best if made night before.) Prepare pudding and chill until set. Cut cake into 2x2 squares. In large dessert bowl, starting with cake squares, layer cake...pudding...cherry pie filling...whipped cream and repeat.

Bean And Cheese Burritos
1 (16 oz.) can refried beans 1 med. tomato, chopped 1 tsp. chili powder 1 c. shredded sharp Cheddar cheese 8 (7 in.) flour tortillas 1 (12 oz.) jar mild salsa Sour cream Preheat oven to 400 degrees. Over medium heat, cook beans, tomato and chili powder until heated through; remove from heat. Reserve 1/4 cup cheese for topping; stir remaining cheese into bean mixture. Spread scant 1/2 cup bean mixture in center of 1 tortilla; roll up and place burrito in 9 x 13 pan. Repeat with remaining bean mixture and tortillas. Spoon salsa over burritos; sprinkle with remaining cheese. Cover with foil, bake for 10 minutes. Uncover, bake for 5 minutes or until cheese melts. Serve with sour cream. Serves 4.

1 pt. pistachio or vanilla ice cream 1 pkg. (6) individual sponge dessert shells 4 egg whites 1/4 tsp. cream of tartar 2/3 c. sugar 1 (1 lb.) can chocolate sauce, heated Divide ice cream into 6 equal parts. Shape into mounds to fit centers of dessert shells. Be sure cake extends about 1/2 inch all around ice cream. Wrap each servings in aluminum foil or transparent plastic wrap. Freeze. (May be kept frozen up to two weeks). Several hours before dinner prepare meringue. Beat egg whites and cream of tartar until foamy. Add sugar gradually. Continue beating until meringue forms stiff glassy peaks. Cover ice cream and cake quickly with a thick layer of meringue.

4 oz. drained canned tuna 1 oz. red sweet onion 3 oz. peas, cooked 1/2 c. cooked celery 2/3 c. cooked enriched macaroni (other pasta may be used) 1 tbsp. diet mayonnaise Combine all ingredients and chill 1 hour. Makes 1 serving.

Rum Balls
Makes 25 rum balls 2 tbsp cocoa 1 cup powdered sugar 1/4 cup rum 2 tbsp light corn syrup 2 1/2 cups vanilla wafers, crushed 1 cup chopped pecans powdered sugar 1. Sift together cocoa and powdered sugar. Combine and stir rum with light corn syrup. Add and mix vanilla wafers and chopped pecans. 2. Roll ingredients together into balls. 3. Dip each ball into powdered sugar, or put them in a plastic bag and shake them in the sugar.

Confetti Olive-veggie Salad
2 cups Black Olives -- sliced in wedges 16 ounces Broccoli -- slaw mix 1 cup Carrots -- julienne 1 cup Red Bell Peppers -- julienned 3/4 cup Creamy Buttermilk Salad Dressing Dill flavored Salt & Pepper to taste Combine olive wedges with next four ingredients in large bowl. Mix well. Add creamy dill dressing. Mix well. Cover. refrigerate at least 1 hour. Adjust seasoning with salt and pepper. (Looks awesome served in red-leaf lettuce cups)

Ten Days
Well only ten days left til Rob gets home...I dont know what to think about it. I mean yeah I'm glad he's fianlly gonna be home but at the same time I'm nervous. 1 1/2 cups pretzel crumbs 1/2 cup butter or margarine, melted 1 cup fresh strawberries, hulled 24 ounces cream cheese, softened 1 cup granulated sugar 4 large eggs 1/4 cup fresh lime juice 1/4 cup tequila 1/4 cup Triple Sec Garnishes: lime slices, fresh strawberries Combine pretzel crumbs and butter; firmly press on bottom and 1 1/2 inches up sides of a 9-inch spring-form pan. Bake at 325 degrees F for 8 to 10 minutes; set crust aside. Place strawberries in container of an electric blender; process until smooth, stopping once to scrape down sides. Reserve 1/2 cup purée. Beat cream cheese at medium speed with an electric mixer until fluffy. Gradually add sugar, beating well. Add eggs, one at a time, beating after each addition. My aunt Karen and her husband John are in town right now so we went and saw them at my grandparents. I haven't seen either of them in a while. Appearantly she was in town with my uncle Mark but I must have been off at school then cause I don't remember. We used to see Karen and her family most of my moms family besides our grandparents who live an hour away from us now since we moved. My mom has 2 brothers that live in Cali and Karen lives in New Mexico. They're the first ones of the extended family to meet my son Matthew that's 2 months old. He gets his shots on Monday so that'll be a fun day for him. We went to the Tanger mall today and found some really cute winter clothes for him at good prices. He doesn't have a whole lot of pants or warm clothes yet. I do have some jackets though that I got from a friend to see if any of them will fit or work for Matthew. Simple Southern Fried Chicken
1 frying chicken, skin removed if you want lower fat. I leave the skin on. 3 teaspoons Lawry's Seasoned Salt 2 garlic cloves, finely chopped 1 cup all purpose flour 1 cup vegetable oil 1. Season chicken with all seasonings. 2. Roll chicken in flour until covered. Shake off excess flour. Sprinkle additional seasoning. 3. Simply fry chicken in frying pan until golden brown. I like it crispy so I cook it a little longer than most. You can start out with the oil very hot and then reduce it later. This seals in the moisture and flavor, then cooks it.

Getting My Life Straight Again....

A Tribute
Something every American should see. What is it? Read below the photo......... This statue currently stands outside the Iraqi palace, now home to the 4th Infantry division. It will eventually be shipped home and put in the memorial museum in Fort Hood, Texas. The statue was created by an Iraqi artist named Kalat, who for years was forced by Saddam Hussein to make the many hundreds of bronze busts of Saddam that dotted Baghdad. A Peek Into My Life
morning. fucking morning...i hate mornings. i crawl out of bed, stumble around for a bit, and find myself in the computer room. plopping down at my desk i type my usual good morning greeting to my special one. the girls are awake and hungry so i pull myself away and drag myself downstairs. i don't feel like cooking. cereal for everyone. i make several trips up and down the stairs...breakfast is ate, conversations come and go, and i can't seem to find my white tank top. conversations about being topless, extra hands, and saws ensue as i search the house. upon finding the tank i finish getting ready and dress the girls(in costume as my 3 year old demanded) so we can go out. first stop..kmart...yay. need baby socks and a curtain rod to replace the broken blind (i swear i didn't do it) finally found one, got a lacey curtain to go with it and we're out of there. next stop winco....more yay. regular grocery shopping, tons of fun, get everything and head out

Chicken Cacciatore
2 lb chicken, cut into pieces 1 c onions, sliced 1/2 c green pepper, chopped 1/4 c oil 1 md garlic clove 1 lb plum tomatoes 1 tb parsley, chopped 1/2 ts oregano 1/4 ts thyme 3/4 ts salt pepper, to taste 1/4 lb mushrooms, sliced Heat oil in large skillet. Add chicken pieces, brown and set aside. Add onion, green pepper and garlic. Cook until onion is tender. Force plum tomatoes through a strainer. Add tomato liquid, parsley, oregano, thyme, salt and pepper to skillet. Cook over low heat for 15 minutes stirring occasionally. Add chicken; cover and cook over low heat 45 minutes. Stir occasionally. Add mushrooms and cook uncovered 15 minutes or until sauce is desired consistency.

Stir-fried Spicy Lobster
8 ounces soy sauce 20 ounces unsalted butter 20 ounces angel hair pasta -- cooked 4 ounces sesame oil 4 ounces hot chili oil 8 1-pound lobsters -- blanched & chopped 2 bunches scallions -- thinly sliced 2 red peppers, seeds, membranes removed -- diced small 2 yellow peppers, seeds, membranes removed -- diced small 8 ounces oyster mushrooms -- cleaned and sliced 8 ounces shiitake mushrooms -- cleaned and sliced You will need 8 one-pound lobsters, blanched, with all the meat removed from the shells. Chop the meat, and reserve all the head shells, legs, and tail pieces. Soy Butter Sauce and Pasta-- Bring soy sauce to a boil, add butter in chunks, stirring until all is incorporated. Set aside. Cook angel hair pasta in boiling salted water until "al dente." Combine sesame oil with hot pepper oil (approximately 1 ounce total per portion based on the desired hotness). Stir-fry lobsters in oils after coming up to smoke stage. Add scallions, peppers, and mushrooms. Cook

Prep: 15 min, Marinate: 1:00, Cook: 10 min. * 1/4 cup olive oil * 1 Tbs. prepared mustard * 1/2 cup lemon juice * 2 cloves garlic, minced * 1 tsp. dried oregano * 1 lb. boneless pork loin, cut crosswise into thin slices, then into 5x1/2 inch strips * 1 cup plain lowfat yogurt * 1 cucumber, peeled and chopped * 1/2 tsp. garlic, crushed * 1/2 tsp. dill * 2 pita loaves, halved * 1 small red onion, peeled and thinly sliced Combine first 5 ingredients in a bowl. Home Alone Again
Well this is the deal, I'm married and with kids, I don't know if she is cheating on me or not but that's not what this is about. I'm just tired of giving up my time so she can go out with her friends to a club or a bar while I have to stay home with the kids. I don't have friends that I can hang out with. Prayers And Thoughts For My Mom
As some of you know, my mom has been very ill recently. She had an abcess surgically removed from her thigh and then learned that she had a staph infection. She was put on some antibiotics and sent home for me to take care of. She had been home for about a week and today had to go in for her post-surgical check up where it seems as though her staph infection has made its way into her pic line (the semi-permanent IV line used to deliver medications to her heart). They have re-admitted my mom for treatment again. I am simply asking for prayers for my mom, not for me. To those that don't pray, then I ask that you keep her in your thoughts. Hey all. Its been near forever!! I guess I need to catch you up on some stuff. I'm tired so it's going to be kept short and sweet!! Casa De La Michelle was officially open on Nov 1st. Tuesday
Didn't take long for Tuesday's pet peeve to come about. So you work for a company who spends a lot of money to make sure they have the best high tech machines possible. Struggle
A man found a cocoon of an emperor moth. He took it home so that he could watch the moth come out of the cocoon. On that day a small opening appeared, he sat and watched the moth for several hours as the moth struggled to force the body through that little hole. Then it seemed to stop making any progress. It appeared as if it had gotten as far as it could and it could go no farther. It just seemed to be stuck. Then the man, in his kindness, decided to help the moth, so he took a pair of scissors and snipped off the remaining bit of the cocoon. The moth then emerged easily. But it had a swollen body and small, shriveled wings. The man continued to watch the moth because he expected that, at any moment, the wings would enlarge and expand to be able to support the body, which would contract in time. Neither happened! In fact, the little moth spent the rest of its life crawling around with a swollen body and shriveled body and shriveled wings. It never was able to fly.

In scouring libraries to reasearch this work, I came across an epic Saxon poem allefed to have been written by the Gangrel Maraulf of the Three Tales.
