I am nervous, but so very anxious to finally have a chance to enjoy all the wonderful things we've talked about in our letters and over the phone. Every possible scenario runs through my mind and I am getting so aroused it's hard to keep my mind on what I am doing. I am just finishing my preparations when I hear you enter the sitting room. I've come to the conclusion my bed is not right for me... It's TOO BIG. It's queen sized. Yes I know they make them bigger, but come on, I'm no member of royalty here. So today was awesome!!! I had a blast at faire with Death... Other than the few problems. There were some good jokes and shit. And I just had a good time flirting and not having to worry bout anything... Heat 4 tablespoons butter in a heavy skillet over medium-high heat. Place flour in a bag or bowl, and add beef cubes. Toss to coat with flour. Place coated cubes in the skillet and fry until well-browned on all sides; remove from pan and set aside. Cook onion and garlic in same pan until tender. Return meat to pan with water, parsley, salt, pepper, and bay leaf. Reduce heat to low, cover, and simmer 1 hour, stirring occasionally and adding more water if needed. Stir in potatoes,

1-1 1/2 lb. lean ground beef 1 tbsp. olive oil or vegetable shortening 1 c. chopped onion 1 clove garlic, minced 1/2 c. chopped green pepper (optional) 1 can (16 oz.) whole kernel corn 1 can (1 lb.) tomatoes 1 can (8 oz.) tomato sauce 1 tbsp. salt 1-1 1/2 tsp. chili powder 1/4 tsp. pepper 1/2 c. corn meal 1 c. pitted ripe olives Brown beef in skillet. Add next 3 ingredients and cook 2-3 minutes, stir in tomatoes, corn seasonings and simmer 5 minutes. Mix cornmeal and 1 cup water. Stir into first mixture. Cover and cook slowly 10 minutes. Add olives and pour into shallow 3 quart baking dish. Pour topping around edge of dish and bake in moderate oven (375 degrees) about 20 minutes. Heat 1 1/2 cups milk, 1 teaspoon salt and 2 tablespoons butter in heavy saucepan. Gradually stir in 1/2 cup yellow cornmeal and cook, stirring until thickened. Remove from heat and stir in 1 cup grated sharp Cheddar cheese. Then stir in 2 slightly beaten eggs

Partially freeze steak to assist in slicing. 2. Remove all extraneous fat, slice thinly (1/4 inch). 3. Combine remaining ingredients, mix well, and marinate meat overnight. 4. Dry with dehydrator or in oven on lowest temperature.

Makes 6 Servings 4 pounds beef brisket 1 onion, sliced 1/2 cup tomato ketchup 1/2 cup chili sauce 2 tablespoons packed brown sugar 5 cloves garlic, minced 1 (12-ounce) can beer 1. Preheat oven to 300 degrees 2. Season meat with salt and pepper and place in a 9 x 13-inch pan; cover with onion. In a small bowl, combine ketchup, chili sauce, sugar, garlic and beer; pour mixture over meat. Cover with foil and bake for 4 hours. 3. Remove foil and bake uncovered for an additional 35 to 40 minutes. Remove meat from pan; let cool. Slice meat cross-grain. 4. Make gravy. Add ground beef and cook until brown. Add chopped onion and garlic, cook another 5 minutes. Stir in cumin and cook 1 minute. Add beans, broth and chilies and cook until beans are creamy and thickened, crushing beans with the back of a spoon, about 20 minutes Mix in green onions. Transfer beans and beef mixture to a serving dish. Serve with tortillas, cheese, sour cream and salsa or Pico de Gallo. extra bounus Pico de Gallo 2 C. diced tomato 1/2 C. onion chopped 2 T. cilantro chopped 1 1/2 T. jalapeno pepper minced 2 t. fresh lime juice 1/2 t. salt Combine all ingredients. 1 pound ground round 1 medium onion, chopped 1/2 cup chopped green bell pepper 1 tablespoon minced garlic 1 can (6 ounces) tomato paste 3/4 cup water 1 cup cooked white rice 3 cups shredded cheddar cheese (divided) 1 1/2 teaspoons dried oregano 1/2 teaspoon dried thyme 1/2 teaspoon fennel seed 1 teaspoon garlic salt 1 tablespoon chili powder 12 flour tortillas (about 10-inches) warmed 8 ounces picante sauce or salsa 1 can (about 10 ounces) enchilada sauce In large saute pan, cook ground round, onion, bell pepper and garlic until meat is thoroughly cooked. Remove from heat and drain excess liquid. Add tomato paste, water, rice, 2 cups cheese, picante sauce and seasonings. Cook over low heat until mixture is thickened, about 10 minutes. Spread 1/2 cup of beef mixture on each tortilla and roll it up. Pour 1/4 cup sauce on bottom of 9-inch baking pan. Place enchiladas, seam side down, in pan. Pour rest of sauce over burritos and sprinkl

Preparation Time: 15 minutes Cooking Time: 45 minutes Serves: 4 Ingredients 1-1/3 cups chicken stock 1-1/3 cups water 1-1/3 cups long grain rice 1-1/2 Tbsps. olive oil 1-1/4 lbs. boneless beef for stew, cut into 1 inch cubes 4 cloves garlic, minced 2 cups Italian style peeled tomatoes, chopped 1 Tbsp. tomato paste 1/2 cup dry white wine or chicken stock 1/2 tsp. rosemary, or 2 Tbs. fresh, chopped Instructions Combine stock and water in a saucepan and bring to a boil over high heat. Stir in rice and return to a boil. Immediately reduce heat to low. Cover pan and simmer 20-25 minutes or until rice is tender and liquid is absorbed. Heat oil in a saucepan over medium high heat. Sauté beef, stirring frequently, 3-5 minutes or until browned evenly. Reduce heat to low. Add garlic and sauté 1 minute. Stir in tomatoes, tomato paste, wine, rosemary, and salt and pepper to taste. Cover and simmer 40-45 minutes or until beef is tender. Serve beef stew over rice.

Beef and Spinach Pinwheels 8 slices bacon 1 1-1 1/2 pound beef flank steak or beef top round steak 1 10-oz package frozen chopped spinach, thawed and well drained 1/4 cup grated Parmesan cheese In a large skillet cook bacon till just done but not crisp.
