Grilled Cheese Sandwich
Serves: 1 Hands-OnTime: 10 Minutes Cooking Time: 5 Minutes Total Time: 15 Minutes What you need: 1 egg salt and pepper to taste 2 tablespoons butter, divided 2 slices Italian bread 2 teaspoons mayonnaise 2 teaspoons Dijon mustard 4 thin slices ham 2 slices Swiss cheese What you do: 1 In a shallow dish that will be large enough to dip your sandwich in, whisk the egg with some salt and pepper. Set aside. 2 Melt 1 tablespoon of butter in a skillet over medium-high heat. Spread the mayonnaise and mustard onto one slice of bread. On the other slice, layer the ham and cheese. Place the slices together to enclose the ingredients. 3 Carefully and quickly, dip each side in the beaten egg, and place in the hot buttered skillet. Cook until golden brown on the bottom, then melt the remaining butter in the skillet. Flip the sandwich, and cook until browned on the other side.

Ratatouille
Definitely a must see!!! This movie starts out a little slow but works its way from there. It has some really great comical moments that can only be done in in animation. The dialog is smart and witty. It has a great message for kids AND adults. Everything about this movie is just great! Pixar can not seem to make a bad movie. I thought it was better than Cars. One of the best things about Cars was the tractor tipping. Although I must warn you watching this movie WILL make you hungry. *wink*

BAKE at 350°F. 25 min. or until meatballs are done. PLACE meatballs in saucepot. Add picante sauce and heat through. Serve with wooden picks. Makes 50 meatballs.

I just finished reading "Starship Troopers", which is alot better than the movie of the same name. Its got many interesting ideas about government and society in general that have many valid points. The fact that there is no democracy and the voters earn the right to cast a ballot is an interesting idea to say the least. Citizens and cilivians are 2 different classes of people, the citizens are those that served the state for a certain amount of time and earned the right to vote and do other things. Civilians had it good too, but since they didn't serve the government for any time they had no say in politics. A worthy idea for discussion. Chicken And Pasta
2 qts. water 1/2 tsp. salt 4-ozs. vermicelli, uncooked 3/4 cup frozen English peas 1/3 cup Italian salad dressing 1 cup chopped cooked chicken 1/4 tsp. sweet red pepper flakes 2 tbsp. grated Parmesan cheese Combine water and salt in a large saucepan; bring to a boil. Add vermicelli and peas. Return to a boil; reduce heat, and cook 10 minutes. Drain and set aside. Heat salad dressing in saucepan. Add chopped chicken and red pepper flakes, and cook, stirring constantly, 2 minutes. Add reserved pasta mixture, and cook until thoroughly heated. Sprinkle with Parmesan cheese, tossing mixture well. Yield: 2 servings

Chicken Ambassador
1 (6-oz.) chicken breast Flour, for dredging Beaten eggs, for dipping White bread slices, finely diced cubes Sauce: 1/4 of one shallot, diced fine OR green onions, diced fine 2-ozs. white wine 3-4-ozs. heavy cream Lightly flour the chicken and dip into the beaten egg "wash." Next, coat chicken in the tiny white bread cubes on both sides. Heat a small amount of oil in a frying pan and sauté chicken until lightly brown on both sides. Finish cooking in oven for 10-15 minutes at 400ºF. For the sauce: In a frying pan, sauté the diced shallot until golden, then stir in the white wine. Boil for little bit. Add heavy cream and stir in a tablespoon or so of roux (salad oil and flour mixed together into a paste) to thicken the sauce to your liking. Add salt and white pepper to taste. Serve sauce over the chicken. Yield: Serves 1

Apple Lemon Puff
1-1/2 tsp. butter or margarine 1 small apple, peeled, cored and cut into rings 6 tsp. sugar, divided 1 egg, separated 1/2 tsp. grated lemon peel 1/4 tsp. vanilla extract 1/2 tsp. all-purpose flour In a skillet over medium heat, melt butter. Add apple rings; sprinkle with 2 tsp. of sugar. Cook until tender, turning once. In a mixing bowl, beat the egg yolk, lemon peel and vanilla for 1 minute. In another mixing bowl, beat egg white until stiff peaks form; fold in flour and remaining sugar. Fold into egg yolk mixture. Place apple rings in a greased 2-cup baking dish. Spread egg mixture on top. Bake at 350ºF. for 15-18 minutes or until golden brown and set. Invert onto a serving plate. Yield: 1 serving

Sometimes it is more difficult to be a soldier than one might think. The military has a way of changing you more than you think that you have changed. Combat arms people feel this more than the other services because we bond more through shared emotional and hardship experiences. New Music
My band started working on a new song for our forthcoming album, if we continue banging out tunes at this rate we will probably be releasing our album in october/november of this year. Im really happy with the new songs we are working on now, this stuff is so much more representative of who we are musically than our previous releases, i just hope we get this stuff released before we become sick of it, i really want to have all new material when we play the Airwaves festival in october.

A Cancer Story
Even though it has been over four years since I was diagnosed with non-hodgkin's lymphoma, I was compelled to do this not only to tell my story, but to show others what can be done to raise awareness about cancer. In April of 2003 I was diagnosed with Primary Mediastinal B-Cell Non-Hodgkin's Lymphoma, stage 2. My tumor was over 10 inches long and 8 inches deep and located in the mediastinum which is a space between your lungs and your heart. All the scars on my chest are from biopsies and ports for the chemo, unfortunately not "hickeys" like people often ask me. My tumor collapsed my lung and moved my heart to the opposite side of my chest. I spent the next 10 days in the hospital starting 6 months of chemo, but unfortunately that didn't work. I had a stem cell transplant in November of 2003 where they harvested about 5 million stem cells from my body, gave me super chemo until I was within an inch of my life and then magically brought me back to life a month later with all new b

I had a bad weekend. This all started a few years ago. When my husband and I started having problems. Yeasty Crock Pot Corned Beef In Beer
Ingredients: * 6 medium potatoes, quartered * 3 medium onions, peeled and quartered * 1 cup sliced carrots * 1 4 pound corned beef brisket * 3 Tbsp butter * 1 cup amber beer * 1 bay leaf 2 tsp pickling spices Method In crock pot place potatoes, onions and carrots. Trim excess fat from corned beef brisket and place meat atop vegetables. Place butter pats on beef. Pour beer over brisket, add bay leaf and sprinkle with pickling spices. Hello from Clearwater! Just got back from Siesta Key beach, and oh that was nice. Played some beach volleyball and kicked some ass. Life Is Moving Too Fast
Well, seems like I have barely gotten back from WLC. I thought I had a month to get ready for my deployment, and it seems like it is supposed to be next week. Tasha's First Day Of Pre K!!!!
Well Tash started pre k today, that was major fun!!! and well, other than that... nothin new... she went to pre k... i dropper her off, took some pics, cried... although, i SOOO wasn't the only mommy crying, and then left.... they only go from 9 to 1030 the first two days... so it isn't as rough on them or the mommies... thankfully... but tash really seems to love pre k... she's excited about going... so thats a good sign.... hopefully she'll always be excited about going to school... she talked about her teacher and the snack they had, and they played outside and sang some songs.... so they had fun... i'm sure it'll get more "intense" as time goes by... but we'll see... it's only PRE K.... but she's loving it already... Cuban Roast Suckling Pig Recipe
10 lb whole suckling pig 3 cups fresh squeezed orange juice 1 cup fresh squeezed lime juice (6-8 medium limes) 12 garlic cloves 1 onion 1 tbsp salt 1 tbsp oregano 2 tbsp olive oil 4 bay leaves Bring a large pot of water to a rolling boil. Wearing rubber gloves to protect your hands, hold pig by head and submerge as much of body as possible in water for 1 minute. Remove, reverse pig and, holding tail end, submerge head and as much of body as possible, 1 minute. Place in a snug-fitting, non-reactive pan and pour orange and lime juice over and inside pig. In a food processor combine garlic, onion and salt. Add oregano and olive oil and process to a paste. Smear inside and out of pig with garlic paste and scatter with bay leaves. Tightly cover pig with plastic wrap and marinate, refrigerated, 48 hours, turning occasionally. Preheat oven to 200 degree. Transfer pig to a large roasting pan. Mandarin Orange And Cashew Chicken
1 (11 oz.) can mandarin oranges 1/4 c. Kikkoman Stir Fry Sauce 3 tbsp. oil 2 whole chicken breasts, skinned, boned and cut into strips 1/3 c. cashews 1 clove garlic, minced 1 med. onion, sliced 1/2 lb. fresh snow peas (or 1 box frozen snow peas) Reserve 2 tablespoons syrup from oranges. Mix with stir fry sauce. Heat 2 tablespoons oil in large skillet over high heat. Add chicken, cashews and garlic. Stir fry 3 minutes. Remove. Heat remaining oil in same pan. Add onion and snow peas. Stir fry 3 minutes. Add chicken, cashews, garlic and stir fry sauce. Stir to coat all ingredients with sauce. Remove from heat. Add oranges. Makes 4 servings. Serve over rice or noodles.

1 whole 4-lb. chicken 1 1/4 c. ketchup 2 c. water 1 onion, finely chopped 1 tsp. salt 1 tsp. celery seed 1 tsp. chili powder or paste 1/4 c. packed light brown sugar 1/4 tsp. Tabasco sauce 1/4 c. Worcestershire sauce 1/4 c. red wine vinegar 6 Kaiser rolls Place whole chicken in large kettle, cover with water, heat to boiling and simmer until chicken is cooked, about 1 hour. Remove chicken from pan, cool and shred meat from bones. In large saucepan, combine ketchup, water, onion, salt, celery seed, chili powder, brown sugar, Tabasco, Worcestershire and vinegar. Court, Weather, & Revelations
Well had court yesterday...sort of. I hit bad weather and dense drivers from my place all the way to Eau Claire. As far as that went ...well first a little background. This was not a pretty divorce, nor amicable at times. At first she sought joint legal custody with her having sole physical. I said I don't really care (depression bout talking there!). Then I started to pull myself out of it and she refused to work with me on things. I was prepared to fight this to the bitter end. At mediation we worked out an agreement, but we were still stuck on the issue of taxes. Who would claim the boys, etc. What I had ASKED for was for us to split the boys. She refused saying the boys were hers, it was her right...etc. etc. (A real entitlement mentality...like this was OWED to her). Well long story short my court appearance was taken over the phone and the judge looked at the paperwork and said given what he had seen there he would award me BOTH boys to claim on taxes. With the holiday, Lee has the entire weekend off...as well as Monday, and I was able to arrange Monday off, so it will be nice to have the 3 day weekend. Last night, the one thing that I've longed for so desperately was finally granted to me. Gary called about 1am this morning and we had a very lengthy discussion about our lives since we last seen each other. There were a couple of issues that needed attention and they were fully aired out. After a very long while, the conversation faded out into a huge silence...both of us still thinking about all that had been said...and where to go from there. So How Tough Am I?
I get this all the time, "What is adventure racing?" My usual response, "Well it's sorta like a triathlon on crack." OK, not much of an explanation. I'll just tell you about a race I did that was held at New River Gorge, West Virginia called "The Endorphin Fix", racers know at the E-Fix. To train for this race I was trail running 40 miles per week, mountain biking 80 miles per week, weights and rope work twice a week, and kayaking once a week. All with a 25 pound pack on. Bare bone skills required to do any real race includes orienteering, mountain biking, rope skills (rappelling, ascending, and traversing), some kind of paddling on water, and being able to REALLY think while calorie, oxygen, and sleep deprived. Oh lets not forget, you have to constantly think 'outside the box'. The average racer is burning between 750 and 850 calories per hour which must be replaced, you must drink 8 ounces of water every 15 minutes just to maintain hydration. So why do it? Simple answer,

Easy Oven-barbecued Pork Chops
These pork chops are baked with a homemade barbecue sauce. Scroll down to see more pork chop recipes. Pork chops are stuffed with a mixture of rice and corn, cooked in the slow cooker. Scroll down to see more pork chop recipes.
