Step 1:  Connect your external media Step 2:  open your computer, browse to your macrium image, and double click it. Step 3:  PLace a checkmark in the box next to the drive you want to mount and work with, accept the default drive letter, check enable access to restricted folders, and you can choose to make it writeable.  click ok, Step 4:  you will see the macrium image apper as a drive in My Computer.  at this point you can work with the data inside the image. Sweet And Sour Pork Chops
3 lbs pork chops 4 onions, diced 1 can pineapple chunks 1/2 cup vinegar 1/2 cup brown sugar 4 tablespoons soy sauce 1/2 teaspoon freshly grated ginger 1/4 cup cornstarch 1 1/2 cups water 1 can water chestnuts 1 green bell pepper salt and pepper, to taste In a dutch oven or large skillet, brown the pork chops. Add onions, juice from the pineapple, vinegar, soy sauce, sugar, ginger, salt and pepper. Cover pan and simmer for 1 hour or until pork chops are tender. Set pork chops aside. Combine cornstarch and water, then stir into pan; add water chestnuts, bell pepper, and chunks of pineapple. Bring to a boil and cook until sauce has thickened to desired consistency. Add pork chops and cook until heated through. Serve over white rice, pasta, or noodles.

1 sm. can refried beans 1 can Fritos bean dip 1 container Dean's guacamole dip 1 c. sour cream 1/2 c. mayonnaise 1 pkg. taco seasoning shredded Jack and cheddar cheese 1 can sliced black olives 3 sm. chopped tomatoes 2 bunches chopped green onion Mix refried beans and Fritos bean dip; spread in bottom of small rectangular baking dish. Next, spread guacamole dip. Mix sour cream, mayonnaise, and taco seasoning; spread. Sprinkle cheese or cheeses to cover the third layer. Sprinkle olives, tomatoes, and green onion in that order. DONE! This recipe I made for the first time on Christmas Eve 2005. It was a smash!!

So with the great life changing event of Katrina and the recent coming of Rosh Hashanah ( god I hope I spelled it right, I'd be such a bad jew if I didn't) I think it's appropriate to start documenting what's going on with me. Another Roadblock In My Life

Surprise Package Cookies
1 C. butter (no substitutes), softened 1 C. sugar 1/2 C. packed brown sugar 2 eggs 1 t. vanilla extract 3 C. all-purpose flour 1 t. baking powder 1/2 t. salt 65 mint Andes candies In a mixing bowl, cream butter and sugars. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and salt; gradually add to creamed mixture. Cover and refrigerate for 2 hours or until easy to handle. With floured hands, shape a tablespoonful of dough around 42 candies, forming rectangular cookies. Place 2 in. apart on greased baking sheets. Bake at 375° for 10-12 minutes or until edges are golden brown. Remove to wire racks to cool. In a micro-wave or saucepan, melt the remaining candies; drizzle over cookies. Yield: 3-1/2 dozen.

Quesadillas On The Bbq
1/2 cup salsa, divided 4 10 inch flour tortillas 1/4 cup chopped sweet onion 1/4 cup chopped green bell pepper 1/4 cup chopped red bell pepper 1/4 cup chopped tomato 2 tablespoons chopped fresh cilantro 2 tablespoons chopped fresh chives 1/4 cup sliced black olives 1 cup cooked and peeled shrimp 1/2 cup shredded Cheddar cheese 1/4 cup sour cream Preheat an outdoor grill for low heat. Spread 1 tablespoon of salsa on half of each tortilla. Distribute the onion, green bell pepper, red bell pepper, tomato, cilantro, chives, olives and shrimp evenly among the tortillas. Sprinkle each with cheese and fold tortillas in half to cover the filling. Lightly oil the grill grate. Place the filled tortillas directly on the grill. Cook about 2 minutes per side, until cheese is melted and the tortilla has grill marks. Serve with remaining salsa and sour cream. Serves 4.

1 1/2 pounds Large or Medium Shrimp, cleaned and peeled 1 teaspoon salt 1 can (14.5 ounce) crushed tomatoes 1 can (8 ounce) tomato sauce 3 each chipotle peppers in adobo sauce 1 teaspoon sugar 4 tablespoon canola oil 6 cloves garlic, crushed 1 1/4 teaspoons ground cumin 2 1/2 tablespoons fresh lime juice 1/4 cup chopped cilantro plus sprigs for garnish non-stick cooking spray 12 each white corn tortillas 2 cups shredded queso asadero or Monterey cheese Boil 6 cups water in a 4-quart pot. Add salt, then shrimp; cook 3 minutes until shrimp just turn pink. Drain, reserving 2 cups of the “shrimp” water. Cut shrimp into bite-sized pieces. Heat oven to 425° F. Peppered Capellini With Prosciutto
reparation Time: 15 minutes Cooking Time: 20 minutes Serves: 8 Ingredients 2 lbs. capellini or other thin pasta 2 large lemons 2 oranges 2 Tbsps. olive oil 4 cloves garlic, crushed 8 scallions, trimmed and finely chopped 11 oz. thinly sliced prosciutto, cut into 1/2 inch strips 1 cup sun-dried tomatoes, drained, sliced 1/2 cup plus 3 Tbsps. grated Parmesan cheese 2 tsps. black peppercorns, cracked 2-3/4 Tbsps. fresh lemon thyme, chopped Instructions Cook cappellini in a large pan of boiling water 4-5 minutes, or until al dente. Drain. Rinse under cold water and drain thoroughly. Using a vegetable peeler, thinly peel rind from lemon and orange, avoiding white pith. Cut rind into thin strips. Add strips to a pan of boiling water. Boil 1 minute and drain. Heat oil in a heavy nonstick skillet over medium heat. Sauté garlic and half the scallions 3-4 minutes stirring frequently, until scallions are softened. Stir in prosciutto and rind. Cook 3-4 minutes, stirring occ

Preparation Time: 10 minutes Marinade Time: 30 minutes Cooking Time: 10 minutes Serves: 6 Ingredients 3/4 lb. mostaccioli or small tube pasta 3/4 lb. packaged cooked chicken strips 2 tomatoesraw, peeled and chopped 1 zucchiniraw, trimmed and thinly sliced 3 oz. black olives, pitted and sliced 1/3 cup scallions, chopped 1/4 cup plus 2 Tbsps. tarragon vinegar 1/4 cup olive oil 2 tsps. basil, or 3 Tbs. fresh, minced 1-1/2 tsps. salt (optional) 1/2 tsp. dry mustard 1/4 tsp. pepper 1 clove garlic, minced Instructions Cook pasta in boiling salted water about 8-10 minutes, or until al dente. Drain and transfer to a salad bowl. Add next 5 ingredients to pasta. Combine remaining ingredients in a jar with a tight-fitting lid. Shake vigorously. Pour dressing over salad and toss. Let sit 30 minutes for flavors to meld.

This is a traditional Christmas bread recipe from Milano which can now not only be found across Italy, but worldwide. There are many variations to recipes using a prepared panettone and this is one of my favorites. Winding Down...
Well the endless list of boats to winterize is finally getting down to a few boats. We started with about 137 boats on the list and we are down to about 30 now after this last weekend. It is a big relief knowing that most of them are done. It will be nice when we can close down the buildings for good but that will be aways away. Skipping And Faking All The Way To The Bank

Title: Yield: 6 Ingredients: 24 Uncooked large shrimp, Peeled and deveined 24 Canned whole water chestnuts Drained 12 Bacon slices, cut crosswise In half 6 tablespoons (3/4 stick) unsalted butter 1 8-oz. package cream cheese, Room temperature 1/2 cups Mayonaise 1/2 cups Sour cream 3 tablespoons Prepared horseradish 1 tablespoon Fresh lemon juice Hot pepper sauce (Tobasco) White pepper Wrap 1 shrimp around 1 water chestnut. Wrap in 1 bacon piece and secure with toothpick. Repeat with remaining shrimp, water chestnuts and bacon. Melt 3 tablespoons butter in heavy large skillet over high heat. Add half of shrimp and cook until bacon browns, anbout 2-1/2 minutes per side. Transfer to large gratin dish. Repeat with remaining butter and shrimp. Preheat broiler. Beat cream cheese in medium bowl until smooth. Add remaining ingredients and beau until blended. Season with salt. Spoon sauce over shrimp.
