Looking To Party This Weekend
this the last weekend i will be able to hangout be for im off for Operation Iraqi Freedom Deployment training. I Am A Work In Progress.
Not to say that I am more complex then others, but I am not sure how many people will actually understand what I am about to say. I Am Writing This To Inform You All Of Something That Is Of Imporatance To Me
I am awaiting to see my surgeon on May 31, 2007. I will be having a total hip replacement done on the left side. I will not be on the computer very much post my surgery... it takes 6~8 weeks for healing. I will be laid up and in therapy. I must have this surgery at 43 years old because of the advanced arthritis and degeneration of my hip over the years. If I still want to consider being a nurse for the next 20 years or so. Even if I get out of nursing I still have to have an income. So, i will keep you all posted as time goes on. Til then, "Peace Out" and enjoy your life to the best of you ability... you never know when it could take a change like mine did.

So right now it is 5:05 am on Sunday morning and I am awake! I have been awake since 2:30 am and haven't been able to get back to sleep. Pretty weird for me considering how much I love to sleep! Memorial Day
was pretty boring, but eventful LOL. Mom knocked on my door at 7:30 asking if i wanted to go to walmart, which really meants "you need to come to walmart with my to help me carry things" so i got up, went to walmart. we didnt buy anything there cause their flowers were really crappy so we went to lowes, got flowers, waited for like 10 minutes in the checkout cause they were having problems. Then we went back in to buy a grill. We had to wait ten more minutes for some high school punk to get it for us, wait int he checkout for a price check for some lady who was buying flowers, then had to wait for him to find the propane, i was agitated. In The Beginning...
(Yes I know my titles aren't all that original lately...) I was bored on break one day and wandered into a local hobby store. I stumbled across a "Micro-T" by "Team Losi." This is a 4.5" long radio control car that has some serious features (slipper clutch, differential, fully proportional forward/reverse/steering), and is amazingly durable, all ready to rock for significanly under $100. Charges up in 20 minutes, runs for about 10, and can go about 10mps. This quickly lead in the complete opposite direction, and now I've got an "E-Maxx" by "Traxxas" which is a 10 pound twin-motor, two-speed transmission 4wd performance monster truck that does 20mph... Both are addictively fun to run, and do NOT require upgrades to have fun with, but can be tweaked to perfection if you so desire (just try to remember with the micro-t that it is a sub 100 car to begin with... bling adds up quick!). Look Beyond The Surface
I'll start this with a quote from a book I have. "Evil often comes with a fair face Tuck," replied Talarin. "But beneath it all is a hideous monster." That comes from "The Darkest Day", a book by Dennis McKiernan, one of my favorite authors. He writes fantasy, much like The Lord of the Rings. So as I was reading the book I thought of how that applies to the "real world". Think of how often we don't look beyond a person's outward beauty to see the ugliness inside. And how often we fail to see the real beauty of someone, because they are not "perfect" on the outside. So often we make the wrong choices in life because we make them based on what we see with our eyes, not what we see with our hearts. Looking beyond what is on the outside often shows us whether we have found fool's gold or whether its truely a priceless treasure.

More On My Short Stories...
Given the response on my last blog, the short story entitled "The Storm", I'm thinking of giving you, my faithful blog readers, a treat, and allowing you to see the creative process in action. My last blog was nothing more than just a random outpouring of a new story, which evolved as I wrote it. The more I re-read it, the more I want to clean it up, add additional character development, smooth out a few parts, and generally make it more engaging. I'm thinking that I'll take the raw material from my last blog, and use that as a glimpse into the writing process, posting each new revision in a new blog, so that you, my readers, may follow the evolution of the story, and see the real writing process in action. Additionally, I think I may start adapting some of my short film screenplays into short story form, and posting some of them here as well. Summer
And it's only just begun!! I've found my best friend in the world in which I will be seeing her this month or next. I will be finishing my second album in August. My birthday in July will be bringing together some long needed togetherness with some very special people. It just feels like my life is on top of the world! My energy is great [a good feeling after it NOT being that way a while back] and there have been others that I have met here that are showing me how to direct and control my energies in order to keep them this way. Wow, it’s been a long time since I’ve written a blog… and while many of you could care less, the time has come once again to set my thoughts down in a blog. Wrestling is going well. I’m still working regularly for WVPW. The SWF is starting to run shows again after a long hiatus… and I’m glad to be working for them again. I will be working for NWA – All Star in the coming months in Virginia, so things are looking up in that regard. Ray Has Gone Back In
Ok for everyone who has been keeping up with us and how Rays doin...well he went in the hospital May 29th and they started him back on Iv antibiotics and let him come home on Jun 1st. He was on those antibiotics for 14 days...The nurse came out on Wednesday the 13th and removed the line, for 2 reasons. He was done with the meds minus 2 doses which was ok, and 2 he has been coughing up blood. Alot of my friends already know about that cause we talk quite frequently. But for those who dont this is the purpose of this blog. Im scared and worried because hes not getting any better and hes coughed up blood for 3 days . Granted now its not as severely bloody but hes still haveing trouble breathing and not able to rest. He has been up almost all night and woke me early this am to tell me that hes going back in and that they have him a room. Sooo once I find out something I will be able to let you all know. Yesterday about 500 new grey hairs popped into my head. Jessica was traveling and had some difficulties. It was all I could do to hold it together when she called me to tell me her car had broken down. Naturally, I put fuel in mine and went to go rescue her. Scallops Le Havre
16 scallops on half shell 8 spring onions (scallions) finely sliced 3 fat cloves fresh garlic, finely chopped 2 oz. real butter 1/4 cup chopped sweet basil 1 lb. fish bones and heads 8 black peppercorns 2 stalks celery, roughly chopped 1 sm. carrot roughly chopped 1 sm. red onion, peeled and cut into quarters 3 good sprigs dill 1 1/2 pints water salt and pepper to taste First remove scallops from shell, rinse under cold water and set aside. Thoroughly clean shells, scrubbing if necessary and set aside. In a medium heavy based saucepan, place fish bones and heads, peppercorns, celery, carrot, onion, dill and the cold water. Season with a couple of good pinches of salt. Bring to boil, reduce to a gentle simmer and cook for 30 minutes, no longer. Strain through a muslin cloth or similar, return to pan and reduce by half. Just before removing from heat, add 1/2 the sweet basil. Meanwhile, melt butter over medium heat in a heavy based frypan, and when foaming, add sp

Flounder Roll Ups Stuffed With Crab Meat
1 1/2 lb. skinless flounder or fish fillet of choice 1 lb. crab meat 1/2 c. dry bread crumbs 2 (10 1/2 oz.) cans condensed cream of mushroom soup Dash each of salt, pepper, paprika and lemon 1/2 stick butter Cheddar or Colby cheese Wash and dry fish thoroughly. Cut in to 3 inch strips. Remove cartilage from crab meat. In small bowl, mix crab meat, bread crumbs and 1/2 cup Newburg sauce (or soup). Spread stuffing evenly over fish fillets. Roll up firmly and place cut side down on foil lined baking pan. Sprinkle with salt, pepper, paprika and lemon juice. Put butter on top of each fish. Bake at 350 degrees until fish flakes easily about 20 to 30 minutes. Top with Cheddar or Colby cheese then top with Newburg sauce or soup. Heat. Makes 6 servings.

Poached Salmon - Microwave

Things That Make You Wonder If You Know What Your Really Doing.
This has some good points but also some bad points about the past few days. I know, I didn't blog on the days I was off. :( This will make up for it. Friday, we were getting ready to get my parents over here the next day to work on the new porch. I had my doubts about the way it was going to look, but then again I had to trust not only my husband, but the "masters" of carpentry. It's a good size porch which I can actually move around. So Saturday rolls around and we get started on the porch. Who would have guessed my mom and I would be making a trip (make that two) to two different hardware stores that morning. I was getting bored since it seemed like my mom and I were just watching them work, so I kept making bee lines toward the house to see if my phone had any text messages. So, later after the crew (my parents and their neighbor) had left for the day I sent pictures of the old/new porch to a friend of mine. Devil Swiss Steak
Cube steak flour Onion 2 c. water 4 beef bouillon 2/3 c. Worcestershire sauce 6 tbsp. mustard 4 tbsp. brown sugar Flour cube steak and fry in pan. Add onion, fry meat until done, add water, beef bouillon, Worcestershire sauce, mustard and brown sugar. Simmer and cook 2 1/2 hours.

"How the hell did this happen?" That's the universal question I have been asking myself these past few involved months. Potato Croquettes
leftover mashed potatoes diced onions chives and parsley, finely chopped heavy cream salt and pepper, to taste Tabasco Worcestershire Sauté onions until translucent, but not browned. Combine all ingredients (to taste). Spread on sheet pan. Refrigerate until firm. Use a biscuit cutter to make rounds, then dredge in flour, then egg, then breadcrumbs. KING RANCH CASSEROLE Printed from COOKS.COM 1 lg. pkg. tortillas 1 c. cheese, grated 1 can cream of chicken soup 1 c. chicken broth 1 sm. onion, chopped 1 can cream of mushroom soup 1 chicken, deboned Cut tortillas in strips. Make layers of tortillas and chicken. Make sauce of the soups. Pour sauce over layers. Bake at 350 degrees for 45 minutes to 1 hour. Better if it sets for a while.

1/2 c. Puritan oil 1/4 c. lemon juice 2 tbsp. white wine vinegar 1 tsp. grated lemon peel 1 tbsp. dried basil 2 cloves garlic, minced 1/2 tsp. salt 1/4 tsp. freshly ground pepper 4 boneless, skinless chicken breast halves (about 1 lb.) Combine Puritan oil and next 7 ingredients in shallow baking dish. Add chicken, turning once to coat both sides. Refrigerate for 30 to 45 minutes, turning once. Prepare charcoal for grilling, or heat broiler. Grill or broil chicken 4 inches from heat, turning once, 3 to 5 minutes per side or until completely cooked through. 4 servings. An easy make-over: Always remove skin from poultry before or after cooking. It's where most of the fat is.

I Did Not Think I Would Blog Again This Week...
But I was wrong. Yesterday, June 25, 2007, WWE legend Chris Benoit was found dead along with his wife and son. I'm not here to speculate on how or why. That wouldn't be right, and it's not my job. Tonight, I just want to remember Chris Benoit for the worker he was. I saw him wrestle live in person one night in Cincinnati. It was May 2, 2006, WWE Smackdown from the US Bank Arena. A spot in the next round of the King of the Ring was on the line that night in a match against Finlay. This match showed me what kind of a technical genius Chris Benoit really was. Benoit did not win the match that night - but he earned my respect as one of the best damn technical wrestlers alive. He was a fighting champion - I remember his matches with Booker T and Orlando Jordan over the US Title. Hell, I even remember Best of Seven series I in the 90s for the TV title - when he showed what kind of sportsman he was by refusing to take a victory by disqualification. That right there spoke volumes.

Chicken And Andouille Sausage Gumbo
1 (2-3 lb.) chicken, cut up 1/2 lb. andouille smoked sausage or Polish kielbasa, cut in sm. cubes 1 c. finely chopped onions 1 c. finely chopped green pepper 3/4 c. finely chopped celery 1 1/4 c. flour 7 c. (approx.) chicken stock, preferably homemade 1 tsp. minced garlic 1/2 tsp. cayenne pepper 1/2 tsp. garlic powder 1/2 tsp. salt Additional garlic powder & salt to taste Vegetable oil for browning chicken Remove excess fat from chicken pieces and rub salt, garlic powder and red pepper on both sides of each piece. Let stand. Combine onions, celery and green pepper in a bowl and set aside. Combine flour, 1/2 teaspoon salt, 1/2 teaspoon garlic powder and 1/2 teaspoon cayenne pepper in a paper bag. Honey Dijon Chicken
2 c. orange juice 1/2 c. honey 1/4 c. Dijon mustard 2 tbsp. curry powder 4-6 chicken breasts butter handful of golden raisins handful of almonds Cook down until syrupy the: orange juice, honey, Dijon mustard, curry. So I got into a slight argument in the mumms, with two people who just jumped my ass for making a comment on some bad spelling. The poster of said mumm mentioned it once but he saw that I dropped it; however, what bothered me the most is they were putting words in my mouth, that I had not said. Porkchops With Mushroom Bourbon Cream Sauce
2 Tbsp olive oil 1 lb button mushrooms, sliced 1/4 cup chopped onions 2 large garlic cloves, chopped 1/2 cup dry white wine 1 cup chicken stock 1/2 cup heavy cream 1/4 cup bourbon whisky Salt and pepper 1 large egg 2 Tbsp water 4 6-7 oz center-cut pork chops All purpose flour 2 cups fresh bread crumbs 3 Tbsp olive oil or grapeseed oil 2 Tbsp minced fresh basil 1 Prepare the sauce. Sauté onions, garlic, and mushrooms in 2 Tbsp of olive oil in a large skillet on medium high heat until the mushrooms are browned - about 15 minutes. Add the wine and boil down until the liquid is reduced to almost a glaze, about 4 minutes. Add the chicken stock, cream, and bourbon. 2/3 c. uncooked rice 1 (8 oz.) can tomato sauce 1/4 c. green onion 3/4 tsp. garlic powder 1 tsp. oregano 1 (16 oz.) can refried beans 1 (10 oz.) can drained green chilies, diced 3/4 c. cheddar cheese Cook rice. First I have to say, I don't get what the big deal is about Ikea store. Harborcure & I went there Saturday morning, yes it was neat but didn't really understand the big hype people make about it. I did find a really neat curtain rod for the bedroom that will look great once we paint it to match. Other than that, I wasn't overly impressed. By the time I got done fiddling around & got down to painting it was 7pm. Thanks to my wonderful friend, Harborcure, I was able to get 1/2 of the room painted before crashing. Was up & back to work Sunday around 8am. Didn't stop until the room was done which was around 8pm. Got the desk moved back & computer hooked up too. I still have the door trim to paint & some wall touch ups. Not to mention painting the curtain rod before I pull out the new bedding & make it 100%. Ms Testing
I went to the doctor today to find out if I have MS (Multiple Sclerosis). The neurologists does'nt think that it is..thank God...however in 2002 I was in the hospital with meningitis and the reports from that stay show a B-12 deficiency ( 148 count....normal over 500 count.) So I am being tested for the deficiency again. Hopefully this is where my problems lie. I want to thank all my friends and family and fans for their support and thoughts and prayers.....This is definitly good news..I would much rather have to stick myself with a needle the rest of my life than to have to deal with MS....Thank you all and I will keep you posted on the final outcome.

I heard this song today and it hit my feelings right on the nose . I'm sure I'm not the only one who feel's this way when the one's we love are gone for whatever reason.....just remember they will be home soon . I always needed time on my own I never thought I'd need you there when I cry And the days feel like years when I'm alone And the bed where you lie is made up on your side When you walk away I count the steps that you take Do you see how much I need you right now?
