[My crispy bits]

Bitches don't know shit about my carbonara...
yo.

Well... I had the oppurtunity to try someone else's carbonara, to kinda gauge how I did, and I was in the mood for some bacony goodness.

It was fettucini alfredo with bacon.
*scratches his head* no go.

So here's my take (don't forget- God is in the radio)
You will require

1/2 cup of shredded cheddar
3 cloves of grated garlic (you could get away with less garlic)
linguine or fusilli (the corkscrew pasta)
[I think this particular sauce and small bit meatses adheres better to fusilli]
2-4 egg yolks (depending on how big assed your eggs are)
Salt
Pepper
BACON!!! Cut into lardons. (about 2/3 cup)
And...
lamb/ham/cured sausage ~ 1/3 cup (accent meat)

Boil your pasta boy!
While that's going render fat from your bacon in a skillet, and get it crispy, toss in the additional flavorant meat and salt KEEP THE ACCENT MEAT TINY! It's carbonara so you want bits of well done toasty crunch.
JUST BEFORE the pasta is done, toss in the garlic and distribute
combine the cheese, pepper, and egg yolks
now, drain the pasta, and toss it in the pan with the meat drippings and love
turn off the heat, add the yolk/cheese mixture to the noodles
wait until it stops sizzling but back if off the heat if you start seeing the eggs setting up
you don't want that
make sure the noodles are evenly coated and the bits are distributed, serve when you're comfortable with the doneness of your egg mixture.

Eat.
Audibles?

A chef's pinch of diced tomato or diced green olive on top, grated parmesan if you'd like, and of course- more pepper.

Where did I deviate from tradtion here?
The accent meat, and using cheddar instead of parm for the cheese/egg sauce.
I think I added garlic too >>

This isn't as intense or as greesy as my aglio e olio >> but damn its bacony love. And its not just fettucini alfredo with bacon in it.

And honestly, I haven't been here in a while, so I don't even remember if I made this update before or not.
*shrugs* Whatever I'm braising in my skin, and getting ready to write.
