Ginger Turkey Stir-Fry
The sauce for this simple veggie-packed stir-fry gets a bit of tang from lemon juice and a hint of sweetness from honey. Add the soy sauce, and you've got a wonderful blend of complementary flavors.

Ingredients:
* 1/3 cup water
* 2 tablespoons lemon juice
* 2 tablespoons honey
* 1 teaspoon fresh ginger, grated
* 1 tablespoon reduced-sodium soy sauce
* 1 large clove garlic, minced
* 2 tablespoons cornstarch
* 1 tablespoon vegetable oil
* 2 cups sliced carrot
* 2 cups broccoli florets
* 2 cups sliced mushrooms
* 1 (8-ounce) can water chestnuts, drained and sliced
* 1 pound turkey breast, cutlets or slices, cut into strips
Directions:
Combine water, lemon juice, honey, ginger, soy sauce and garlic. Dissolve cornstarch in mixture; set aside.
Heat oil over high heat in a wok or large skillet. Add carrots and stir-fry for 3 minutes, or until tender-crisp. Add broccoli, mushrooms and water chestnuts and stir-fry for about 2 additional minutes; remove from pan. Stir-fry turkey until lightly browned. Add sauce and cook, stirring constantly until thickened and translucent. Add vegetables and heat through. Serve over rice or bulgur wheat.
