Cherries Darlette
This is a great custard and berry dessert. Experiment with your favorite fresh (or frozen unsweetened) berries!

INGREDIENTS:
3 cups cherries, pitted
3 large eggs
1 1/4 cup milk
1 tsp. pure almond extract
2/3 cup sugar
3/4 cup Unbleached All-Purpose flour
DIRECTIONS:
1. Preheat the oven to 350ºF. Thoroughly grease a 9 inch pan. With a mixer, beat the eggs until foamy.
2. Beat in the milk and the extract.
3. Add the sugar and beat until it's well incorporated.
4. Add the flour slowly, beating well after each addition to break up any lumps.
5. Place the fruit in the prepared dish and pour the custard batter over it.
6. Bake for 45 minutes.
7. A cake tester inserted into the center should come out clean.
8. Serve warm or at room temperature.
