Veggie Tortilla Wrap
Makes 1 serving
Ingredients
1 flour tortilla
2 thin slices cheese (your favorite)
1/2 avocado, sliced thinly
1/3 cup leftover grilled vegetables (mushrooms, onions,
peppers, etc)
1 large lettuce leaf
2 tbsp balsamic vinaigrette dressing
Directions
1. Place lettuce leaf across the middle of the tortilla. Top with
cheese, avocado and grilled vegetables. Sprinkle with dressing.
2. Fold egg-roll style, tucking in sides as you roll.
Tip: If you're putting this in a lunch box, don't use vegetables
like tomatoes, which will make the bread soggy if it's not eaten
right away.
