Serves 6 to 8
Ingredients:
25 - 30 lady finger cookies approx
5 eggs
5 tbsp sugar
1 - 500 gr. Container mascarpone cheese
1 cup Espresso coffee
3 tbsp. Sambuca (optional)
1/2 cup cocoa
Directions:
Beat the eggs with the sugar until thick and lemony in color.
Add the mascarpone and beat it into the egg mixture on low speed, scraping down the bowl. Do not over beat the mixture or it will curdle.
Choose a large straight-sided dish, approx. 8" x 10", like casserole dish to assemble the Tiramisu in. Making it in a glass dish will show it off better when serving it.
Combine the coffee and Sambuca in a shallow dish. Place the cocoa in a sieve over a bowl. Sprinkle the bottom of the dish lightly with cocoa. Quickly dip a few of the fingers into the coffee mixture and line the bottom of the dish. Do not get
them too wet or your tiramisu will be runny. Spread on 1/4 of the mascarpone mixture and dust the top with cocoa. Repeat the process 2-3 times so you have 3-4 layers. End with a sprinkling of cocoa. Cover and refrigerate overnight.
The perfect pairing for Tiramisu is cappuccino of course.
