With only nine days left until Thanksgiving you will look at all those leftovers and not sure what to do with them...Well Kidd-O's here is a suggestion for you.

Homemade Turkey Soup

Ingredients

6 lb. turkey breast. It should have some meat (at least 2 cups) remaining on it to make a good, rich soup. 2 medium onions 3 stalks of celery 1 teaspoon dried thyme 1/2 teaspoon dried rosemary 1/2 teaspoon dried sage 1 teaspoon dried basil 1/2 teaspoon dried marjoram 1/2 teaspoon dried tarragon 1/2 tablespoon salt black pepper to taste 1/2 lb. Italian pastina or pasta

Directions

1. Place turkey breast in a large 6-quart pot. Cover with water, at least 3/4 full. 2. Peel onions, cut in large pieces, and add to pot. Wash celery stalks, slice, and add to pot also. 3. Simmer covered for about 2-1/2 hours. 4. Remove carcass from pot. Divide soup into smaller, shallower containers for quick cooling in the refrigerator. 5. After cooling, skim off fat. 6. While soup is cooling, remove remaining meat from turkey carcass. Cut into pieces. 7. Add turkey meat to skimmed soup along with herbs and spices. 8. Bring to a boil and add pastina. Continue cooking on low boil for about 20 minutes until pastina is done. Serve at once or refrigerate for later reheating. Yield: About 4 quarts of soup (16 servings)--Serving Size: 1 cup

What is better than to have Stuffing Muffins to go along with your Soup, A salad would add a nice touch.

Stuffin' Muffins

INGREDIENTS:

1/2 cup butter 1/2 cup finely chopped onion 1/2 cup finely chopped celery 1 can (4 ounces) mushroom stems & pieces, drained 1 teaspoon dried leaf sage, crumbled, or use poultry seasoning 1 cup chicken broth 8 ounces herb-seasoned bread stuffing

PREPARATION:

In a medium-sized, heat-resistant, non-metallic bowl melt the 1/2 cup butter in Microwave Oven 1 minute. Add onion, celery and mushrooms and heat, uncovered, in Microwave Oven 5 minutes or until vegetables are tender. Sprinkle sage over vegetable mixture. Add chicken broth and stir to combine. Heat, uncovered, in Microwave Oven 3 minutes. Add bread stuffing and toss lightly. Lightly grease 8 small, heat-resistant, non-metallic custard or coffee cups with butter. Divide stuffing among cups. Just before serving, heat, uncovered, in Microwave Oven 8 minutes or until heated through.
