Double Layer Pumpkin Pie

Yes this is a Kraft recipe BUT I alter it slightly & every year I have to make it for both Thanksgiving & Christmas! Actually I have to make this Tuesday night so my mom can take a couple to a pot luck lol 4 oz. cream cheese, softened 1 Tbsp. milk 1 Tbsp. Sugar 1 - 8oz. tob of Cool Whip 2 graham pie crusts 1 cup milk 1 - 15oz. can pimpkin already seasoned 2 - 4serving size each pkgs. vanilla flavor instant pudding Mix cream cheese, 1 Tbsp. milk and sugar in large bowl with hand mixer or wire whisk until well blended. Stir in half of the whipped cream. Spread into crust. Pour 1 cup milk, into large bowl. Add pumpkin, pudding mixes & rest of cool whip. Beat mixer/whisk 2 minutes or until well blended. Spread over first layer & refrigerate 4 hours or until set. I usually make them the night before I need them, I just flip the plastic part that comes with the crust over to cover them. That way I can stack them & not have to worry about them getting smashed under whatever else might end up on top of them.

The Perfect Apple Pie

I wanted to start with an awesome stuffing recipe but I can't find it at the moment & since everyone loves apple pie here's a great recipe for one. 2-1/4 cups flour 1 tsp. salt 1 cup shortening 5 to 7 Tbsp. ice cold water 6 cups thinly sliced peeled tart apples 3/4 cup sugar 1 Tbsp cornstarch 1/2 Tsp. ground cinnamon 1/4 tsp. ground nutmeg 1 Tbsp. lemon juice PREHEAT oven to 400 degrees. Mix flour and salt in large bowl. Cut in shortening using blender or 2 knives until mixture resembles coarse crumbs. ADD water, 1 Tbsp. at a time, mixing lightly with fork until flour mixture is evenly and clings together when pressed into a ball. Divid dough in half; shape each half inch-thick round; refrigerate 10 to 15 minutes. TOSS apples with sugar, cornstarch, cinnamon, nutmeg and lemon in large bowl; set aside. Roll dough with rolling pin to flatten until dought dough round is about 2 inches lager than diameter of pie plate & place in bottom of pie plate. Trim any dough hanging over edge. FILL with apple mixture;set aside. Roll out remaining dough until about 1/2 inch beyound edge of pie plate. Fold edge of top crust under bottom crust; pinch edges together to form a ridge. BAKE 45 to 50 mintures

Since this is my first entry I guess I'll make it something about me..... For those of you who haven't gotten the chance to really get to know me here's a little info for ya. I'm 24, half Micronesian half white. I live in Portland Oregon, the wonderful state that rains 9+ months out of the year lol I can't stand the rain & yet I love it here! I'm currently in school taking classes to become an inurance billing & coding specialist, I should be working in the field by April. I enjoy many things, shopping & music being at the top of the list. I also enjoy reading, clubbing, drinking, chatting online, movies, etc. My son is my life, everything I do is for him! Everytime I see his face I can't help but smile, he's amazing! I love him to death! I guess this one is gonne be pretty short because I want to post a recipe before bed & it's getting late. - Maria
