Egg Lemon Soup (Ovalemono Soup)
Ingredients:
4 qts. Chicken broth
2 C. Rice
8 Eggs
1 C. Lemon juice
Directions:
Cook Rice in broth.
Beat eggs until frothy.
Slowly add lemon juice into eggs.
Slowly add 2 cups of broth to egg mixture.
Slowly add egg mixture to the remaining broth.
You want to heat this very slowly and stir often.
