Lima Bean Soup
Ingredients:
1 lb. bag of dried lima beans
1 Large can of diced tomatoes
1 pound of margarine or butter
Bay Leaves
1 large onion sliced
Salt and Pepper to taste
Directions:
Rinse Lima Beans and place into a large sauce pan. Cover with water and add onion and bay leaves; simmer until beans begin to soften. Add Margarine and tomatoes. Simmer till beans are tender. Add water as needed to keep from thickening to much.
