EASY BUT FANCY POTATOES 6 medium sized potatoes 1 onion sliced dried parsley salt and pepper 1 cup shredded cheddar cheese or more if desired 1/2 stick of butter or margarine Grease a 2-quart casserole. Slice potatoes very thin. Place half the potatoes in a layer in the dish. Add a layer of onion slices. Sprinkle with dried parsley. Salt and pepper the layer. Add 1/2 cup grated cheese and top with half the butter, which is cut into pats. Repeat the layering of all ingredients. Cover. Bake at 375 degrees for 45 minutes. In MICROWAVE OVEN , cook for 15 minutes or until potatoes are tender.
