Chicken and Cheese Quesadillas
Non-stick cooking spray
2 boneless skinless chicken breast, diced
1 (10-oz.) can Ro-Tel Mexican Festival
1 tablespoon garlic, minced
4 10-inch flour tortillas
1 cup shredded Monterrey jack cheese
Spray a skillet with cooking spray. Saute chicken, Ro-Tel and garlic until liquid has cooked off, about 10 minutes. Spray a second skillet with cooking spray. For each quesadilla, place a tortilla in a skillet and fill one side with 1/4 chicken mixture and 1/4 cup cheese. Fold other halfover the filling to close. Cook over medium heat until slightly crisp, about 3 minutes. Turn; cook other side. Repeat using all ingredients.
