Ingredients
2 C. long grain rice, washed
2 garlic cloves, minced
1 Tbs. canola oil
Crisp cooked vegetables, such as carrots, green peas, broccoli
4-6 Chinese sausage links, cut into 1/4-inch pieces
Salt
1 1/2 Tbs. soy sauce
1 1/2 Tbs. fish sauce
1 Tbs. chopped fresh cilantro
Black pepper
2 large eggs, beaten
Directions
Wash rice and cook, using slightly less water than package recommends. Set aside cooked rice. In large skillet, heat 1 Tbs. oil and add minced garlic and cooked vegetables. Sauté until garlic is softened. Place in a bowl and set aside. Cook sausage pieces in skillet and drain on paper towels. Wipe excess grease from skillet with paper towel. Add cooked rice, vegetables, sausage, and mix well over medium heat. Add beaten eggs and stir until eggs are cooked. (Eggs may be cooked separately, cut up and added) Add salt to taste, soy sauce, fish sauce, cilantro and pepper.
Yield: 4-6 servings
