Beef Enchilada Ingredients This recipe calls for: Chili (click here for chili recipe) 3 Tablespoons Chili Powder 1 1/2 teaspoon Cumin Powder 3/4 teaspoon Garlic Powder 1 1/2 teaspoon salt 4 Tablespoons Corn Oil 6 Tablespoons Flour 4 1/2 Cups Water 20 Corn Tortillas Cheddar Cheese Velveeta Onion Beef Enchilada Equipment Beef Enchilada Equipment Beef Enchilada Equipment For this recipe you will need: Sauce Pan Spoon Measuring Cups Measuring Spoons Cheese Grater Frying Pan Tongs, or forks to fry tortillas Grating Cheese Cheese Filling Cheese Filling First Sep: Grating Cheese Grate 1 cup Velveeta cheese and 1 cup Cheddar cheese and then mix them together. Set aside in refrigerator. Corn TortillaFlpping Corn Tortilla Blotting Corn Tortilla Frying Corn Tortillas Second Step: Frying Tortillas Next you will want to soft fry the tortillas. If you skip this step, your Enchiladas will be absolutely horrible, microwave or not. To soft fry the tortillas, put 1/4 of an inch of corn oil into a frying pan. Then place it on a burner set on medium high. It will take a few minuets for it to heat up. Once it is heated up drop a tortilla in the oil for 5 seconds. Then flip it over, let the other side cook for 5 seconds, and then remove it from the frying pan. Now blot the grease off using a paper towel. You will need to soft fry around 20 of these. (If you have never fried any thing before there are some safety rules to hot oil. One: Never leave it unattended. If you do, it could start your house on fire. Two: If you have children make sure it is out of their reach and the handle of the skillet is not hanging off where they could reach it. Three: Use the proper utensils to fry, this never includes your hands. I know My hand is in the picture, but I can tell you from experience hot oil hurts!) I am not trying to scare you, just trying to make this an enjoyable experience. Adding Salt To Enchilada SauceAdding Chilli To Enchilada Sauce Enchilada Sauce Ingredients Mixing Enchilada Sauce Third Step: Mixing Enchilada Sauce Next we will need to make the enchilada sauce. Start by dipping a soft fried tortilla into the enchilada sauce. Adding BeefAdding Cheese And Onion Rolling Enchilada Assembling Enchilada Sixth Step: Assembling Beef Enchiladas Now place that tortilla on a plate. Use a different plate than the one you will serve it on otherwise your presentation will be a huge mess. Then place 1/4th cup beef, 1/4th cup cheese and 1 Tablespoon chopped onion on the tortilla. Then roll the beef enchilada up tightly. Sliding Enchilada Sliding Enchilada Seventh Step: Sliding Take the rolled enchilada and slide it onto the serving plate. BeefCheese And Onion Enchilada Sauce Adding Toppings Eighth Sep: Topping Enchiladas After you are done making the enchiladas top them off with more beef, cheese, onion, and about 3 to 4 large spoonfuls of enchilada sauce as seen to the left. Beef Enchiladas Freezer Beef Enchiladas Finished Beef Enchiladas Beef Enchiladas Now enjoy your Meal! If you would like to freeze some of your recipe go right ahead. Just put them all into a container and then place them in the freezer. We suggest arranging them so they look like the picture at the bottom left, if you are going to freeze them. Just don't forget to add plenty of your enchilada sauce on top. When you are ready to enjoy them, just microwave your beef enchiladas until they are hot. They can also be reheated in a 350 degree oven until hot
