You may think of quesadillas as being cheese and other toppings melted between two flour tortillas. Traditional quesadillas are made with uncooked tortillas and filled with cheese and toppings and then fried until golden brown. When you bite into these traditional quesadillas you will find the melted cheese and the crunchy fried tortilla go perfectly together.
INGREDIENTS:
* 1 lb *fresh masa (see below for substitutions)
* 1/2 lb block of your favorite cheese (queso fresco, oaxacan or mozzarella work well)
* Your favorite toppings (such as cubed and cooked potatoes, cooked chorizo, green chiles)
* Oil or lard for frying
PREPARATION:
Divide the masa into 10 balls. Roll each ball between two pieces of cellophane or on a floured surface to about 4 inches across, or use a tortilla press. Cut cheese into 10 strips and place one in the center of the tortilla. Fold tortilla in half and press edges to seal. Fry in hot oil (or lard) until golden brown and crispy.
If no fresh masa is available, mix 2 cups masa harina and 1 1/2 cups of warm water and knead for about one minute. You can also use flour tortilla dough for this recipe.
