1/2 c. slivered blanched almonds
1/4 c. butter or margarine
1/2 c. orange marmalade
3 c. cooked white rice
2 c. diced cooked chicken
If you wish, pecans may be substituted for the almonds and turkey for the chicken.
Preheat oven to 350 degrees. Brown almonds in butter or margarine. Stir in marmalade. Stir almond marmalade mixture in with chicken. Add rice and stir again lightly. Cover and bake for approximately 30 minutes, uncovering the last 10 minutes.
