INGREDIENTS:
* 1 to 2 tablespoons extra virgin olive oil
* 2 teaspoons Asian chile paste, Sambal Oelek
* 1 pound boneless chicken breasts or tenders, cut in 1-inch cubes
* 12 ounces bow tie pasta
* 8 tablespoons basil pesto
* 1/2 cup chopped fresh cilantro
* 1/2 cup grated Parmesan cheese
PREPARATION:
Heat olive oil and chili paste in large skillet. Add chicken breast cubes and cook until golden brown. Cook pasta in boiling water tender. Drain well.
Place chicken mixture in bowl. Add the pesto, cilantro, and Parmesan cheese. Add hot cooked pasta and toss lightly but thoroughly. Serve with additional Parmesan is desired.
