Shrimp Scampi

Prep & Cooking Time: 10 min. Yield: 4 servings Serving Size: 4.000 ounce(s) 1 tsp butter, unsalted 1/2 tsp paprika 1/2 tsp black pepper to taste 1 Tbsp canola oil 1/4 cup lemon juice 4 cloves garlic, minced 4 Tbsp fresh parsley 1-1/4 pounds medium shrimp, shelled and deveined Directions: Preheat oven broiler. In a small bowl combine lemon juice, melted butter, oil, garlic, and seasonings (except parsley) and mix well. Brush shrimp with sauce to coat shrimp. Arrange shrimp in a broiler pan lined with foil and pour remaining sauce over the shrimp. Broil 3 to 4 inches (8 to 10 cm) away from heat source until the shrimp are golden brown, up to 2 minutes. Serve with parsley garnish.
