Ingredients:
1 Tbsp peanut oil
1 cup thinly sliced red pepper
½ cup thinly sliced yellow pepper
½ cup diced onion
2 cups sliced fresh asparagus
2 garlic cloves, minced
1 Tbsp minced ginger
1 lb sea scallops
½ lb sea bass, cut into 2-inch cubes
¼ cup lite soy sauce
2 Tbsp rice vinegar
2 tsp sugar
3 cups cooked rice
Instructions:
1. In a wok heat the oil on high
2. Add peppers and onions to the heated oil and stir-fry for 3 minutes
3. Add asparagus and stir-fry for another 3 minutes
4. Then, add the garlic and ginger and stir-fry for 3 more minutes
5. Finally, add the seafood, but be sure to cover the wok and then steam for 2 minutes
6. Lastly, mix together the soy sauce, rice vinegar, and sugar. Put in the wok.
7. The mix should cook for 3-4 minutes and when ready to serve pour it over rice.
