My 3 step Caramel Pie

 2 cans sweetened condenced milk
1 gramcracker crust pie shell 
8 oz whip cream


in deep stock pot put unopened can of milk covered in water bring to a rageing boil for 4 hours remove from heat when can is barely warm to the touch open an spoon the caramel into pie shell let kool then spread the whip cream on top an ur ready to serve keep addind water to pot as it will boil down every 30 minutes you want the cans covered

Heavenly Pecan Pie

8 oz pkg cream cheese softened
8 oz cool whip thawed
1- 1/2 cup confectioner sugar
2 cup pecan pieces
1 cup coconut
1/2 cup melted butter 
2 grahm cracker crust
an caramel ice cream toping to top pie with


mix together cream cheese cool whip an sugar with mixer set aside

mix pecans coconut an butter toast lightly an cool 

pour cream cheese filling into both pie crusts 

when pecan mixture is cool place on top pie an drizzle caramel toping over pie chill an serve

My version of Chess Pie

1/2 cup butter
1-1/2 cup sugar
1 tsp white vinegar
3 eggs
1-1/2 tsp vanilla 
pinch salt
8 inch unbaked pie shell reg not deep
1 tsp vanilla

4 eggs

combine butter sugar an vinegar in sauce pan stir constantly over low heat until sugar is disolved

pour hot mixture over beaten eggs beating constintly an thoroughly

fold in vanilla an salt 
pour into shell bake at 350 for 30 minutes let cool serve with vanilla ice cream or cool whip or by itself

Cheese Ball

1pkg 8oz cream cheese softend
1pkg 2.5 smoked beef choped slim jims work
1/4 cup green onions diced
1tsp warcestershire sauce
choped pecans optional
an assorted crackers

in mixing bowl combine cheese onion an war sauce with fork roll into ball wrap in plastic wrap refridgerate 1 hour then roll ball in nuts serve on crackers

Sour Cream Cheesecake

~Crust~

(For 9 inch pan)

Crush or put into a blender:

1 1/2 cups of graham crackers or cookies of your choice

Stir into the crumbs:

1/2 cup sugar

6 tablespoons melted butter

1 teaspoon as a spice of your choice

Press and pat the crust into the pan. Bake until firm in a low oven

Fresh or frozen fruit can be mixed with more sour cream and poured over the top of each slice. Fruit can also be placed on top of the cake after baking.



~1st Layer of Filling~

2 well beaten eggs

3/4 lbs soft cream cheese

1/2 cup sugar

1 teaspoon lemon juice or vanilla

1/2 teaspoon salt

Cool to room temperature and mix well. Mixing can be done by hand or in a blender/food processor. Pour the mixture into the crust. Heat oven to 425 and bake for 20 mins. Watch so it does not burn

~2nd Layer of Filling~

1 1/2 cups sour cream

2 tablespoons sugar

1/2 teaspoon vanilla

1/8 teaspoon salt

Let cool to room temp. Mix well until smooth. Pour onto the first layer. Cook for 5 mins and then let cool. Refrigerate form 6-12 hrs before serving.

Scotch Oat Bread

Makes 2 loaves

Oven Temperature 425-375 F



2 cups boiling water

1 3/4 teaspoons salt

1 cup rolled oats
1 tablespoon butter

1 sachet of yeast

2 teaspoons of granulated sugar

1/4 cup lukeward water

1/2 cup brown sugar

1/2 cup lukewarm water
5 cups sifted bread flour

To the boiling water add salt and rolled oats. Mix well and then stir in the butter. Allow to stand until luke warm, crumble in the yeast and add white sugar and the 1/2 cup of lukewarm water. Blend thouroughly and allow to stand for about an hour, or until yeast sponge is almost doubled in its bulk. Combine the 1/2 cup lukewarm water and brown sugar and stir until dissolved and then add to the yeast and blend well. As you add the sugar water, add gradually the 2 1/2 cups of the bread flour alternating with the oat mixture, beating until smooth. Now add the remaining flour and miz well. Turn the dough out on a lightly floured surface and kneed until smooth with no stickiness. Place in a greased mixing bowl, cover and plae over hot water and let rise until doubled in bulk. Flatten down the dough, kneed, and then divide into two equal portions. Cover with a dry cloth and let stand for 20 minutes. Then, shape into loaves, place int the greased loaf pans, let rise until doubled in buld and back for 15 minutes. Reduce the temp of the oven to moderate and continue to back for 25 mins or until the bread is nicely browned on top. Remove from pans and let cool before slicing.
Instead of making a second loaf, a sheet of 'hobo bread' can be made. With the second portions of dough, flatten out onto a cookie tray and then let rise. This flatbread cooks much faster than the full loaf. If the flat bread or the loaf start to brown too much, place a sheet of Aluminum foil over the top without sealing the edges. If you find the bread to be sweet, decreas the amount of brown sugar. Do not decrease the amout of sugar added directly to the yeast or it won't rise.

I was reading a Racheal Ray mag and, found 10 ways to use beer. 
Other than drinking it .
I thought I would share them with you .
Here you are 10 uses for beer .
1.banish brown spots on your lawn:

afterwards is a total chore.make clean up easy by pouring 
a little beer in the still warm pan .

enhanceing the flavor of food cooked in it .

Buttermilk Fried Okra

Buttermilk Fried Okra
makes 8 cups 
hands on time 30 min 
total time 30 min
A sprinkling of sugar in the cornmeal coating 
caramelizes as the okra cooks, creating a crisp golden crust.
1 lb ( pound) fresh okra ,cut into 1/2 inch thick slices
3/4 cup buttermilk
1 & 1/2 cups self -rising white corn meal mix
1 tsp salt 
1tsp sugar
1/4 tsp ground red pepper 
vegetable oil

stir together okra and buttermilk in large bowl 
stir together cornmeal mix and next 3 ingredients in a separate bowl
remove okra from buttermilk in batches useing a slotted spoon
dredge in corn meal mixture and place in a wire mesh strainer.
shake off excess.
pour oil to depth of 1 inch into a large cast iron skillet or dutch oven
(large deep pot ) or fryer 
heat to 375 degrees fry okra in batches 
4 minutes or until golden brown ,turning once .
drain on paper towels

3 ways with buttermilk fried okra 
Fried Okra Tacos
fill warm tortillas with shredded lettuce ,
hot buttermilk okra and fresh tomato salsa
serve with shredded pepper jack cheese,guacamole,
and sour cream.

Okra Panzanella
toss together buttermilk okra coarsly chopped fresh tomatoes 
diced red onion,chopped fresh basil and red wine vinaigrette
serve immediatly


Fried Okra Croutons
sprinkle buttermilk okra over a crisp green salad ,
with ranch dressing or a greek salad with tomatoes,
black olives and feta cheese ,
or top off a favorite soup just before serveing 
fried okra adds a crunch to any soup .
