1.5lb ground beef
1 packet taco seasoning
2 cans corn
6 potatoes, cooked and mashed (or use instant)
Cheddar Cheese or shredded Mexican Cheese Mix
Brown the ground beef. Add the taco seasoning.
Place beef in the bottom of 2 ovenproof 8-liter dishes (I use oval Corningware).
Place a thin layer of cheese, then top with 2 cans of corn.
Place mashed potatoes on top and sprinkle with cheese, as desired.
Bake, covered, for about 30 minutes then uncover and bake 5 to 10 minutes longer.
Let set for 5 minutes before serving.
This was a dish my Grandma made and has been my favorite since I was a child. She got this from her mother who is French Canadian, so I don't believe I spelled it right! It's pronounced: Por-Tu-Shen-Wa.
Very quick and easy to make and the family loves it!
