2 large egg whites, room temperature
1/8 tsp salt
1/2 tsp vanilla extract
1/4 tsp cream of tartar
2 Tbsp cocoa powder
1/2 cup sugar
Directions:
Preheat oven 225 degrees F (110 degrees C). Spray baking sheet with non-stick cooking spray. In a clean, dry bowl beat egg whites with an electric mixer set on high until egg whites turn foamy. Add cream of tartar and salt and continue beating. Gradually add half the sugar. Mix cocoa powder with remaining sugar and add cocoa-sugar mixture to egg whites and continue mixing until stiff peaks form. Add vanilla and beat just enough to mix it in. Spoon batter onto baking sheet and bake for one hour or until maringues are firm and turn brown. Cool on wire rack and enjoy.
