Chicken & Sweet Onions

Prep & Cooking Time: 40 min. Yield: 4 servings Serving Size: 3.000 ounces 1 Tbsp black pepper 1 tsp table salt 1 tsp fresh thyme 16 oz raw chicken breast, no skin 1 cup lettuce, green leaf (raw) 1 medium, raw onion, cut into slices 1 cup sliced, raw, yellow tomato 1 tsp honey 1 tsp brown sugar 1 Tbsp trans-fat free blend margarine 4 tsp red wine vinegar (1 tsp for each plate) Directions: 1. Pre-heat oven to 350 degrees F (177 degrees Celcius), season chicken breasts with salt, pepper and thyme 2. Place in baking pan coated with cooking spray and cook for 20-30 minutes until done 3. In a small pan, over low heat, melt margarine, add onions, while stirring constantly, slowly add brown sugar and honey so onions carmelize 4.
