Ingredients:
¾ cup peanut butter
½ cup vegetable oil
½ cup brown sugar, packed firmly
1 teaspoon vanilla extract
1 egg
1 ½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
Instructions:
Preheat the oven to 350 degrees Fahrenheit. In a medium-sized bowl, mix together peanut butter, oil, sugar, vanilla, and egg until creamy. Add remaining ingredients and beat well.
Shape the dough into 60 balls, 1 inch in diameter, and place on a lightly greased baking sheet. Flatten with a fork. Bake for 12 – 15 minutes, or until golden brown. Place on a cooling rack.
