6-7 potatoes
1 onion, diced
1 egg
1/4 c. flour
Salt and pepper
Peel and grated potatoes fine. Strain through cloth, squeeze fairly dry. Allow strained liquid to settle. Pour off liquid carefully, until only white potato starch remains. Add starch to grated potato, add onion, egg, flour, salt and pepper. Shape into balls. Drop into boiling salted water. Boil 1/2 hour. Remove from water, drain. Pour melted butter and minced onion on dumplings.
