Makes About 2 To 2 1/2 Dozen Depending On Size:Although the preparation may sound involved since they are quickly boiled in water before baking, if you have everything prepared it isn't at all difficult or overly time consuming.
4 Cups All-purpose Flour (Plus Additional For Kneading)
2 Teaspoons Baking Powder
1/2 Teaspoon Coarsely Cracked Black Pepper
1 Teaspoon Salt
5 Large Eggs
2 Tablespoons Olive Oil
1/2 Cup Grated Pecorino Cheese
Preheat oven to 350 degrees F. Mix together the flour, baking powder, salt and pepper in one bowl. In another bowl, lightly beat the eggs with the olive oil and cheese until mixed. Slowly add the flour mixture into the bowl with the eggs, mixing as you add each addition until you have formed a dough that sticks together. Dump the mixture onto a counter or hard surface, and knead until smooth, adding a little additional flour if necessary to prevent sticking. Cut dough into small balls, then roll out each piece into a rope, about the thickness of your finger. Form into a doughnut like shape, pinching the ends together. Boil water in a wide pot, then drop 3 or 4 doughnuts into the water at a time. When they rise to the top, remove them immediately, and place on towels to dry, about 5 minutes. Place on baking sheets, and bake 30 minutes, or till golden. Remove, and cool. Store in an airtight container.
