Halloween is near

The air is cool, the season fall, Soon Halloween will come to all. Ghosts and goblins, spooks galore... Tricky witches at your door. The spooks are after things to do, In fact a spook brought this "Boo" to you! The excitement comes when friends like you, Copy this note and make it two. We'll all have smiles upon our faces, No one will know who "BOO"ed who's places! Just two short days to work your spell, Keep it secret, hide it well. Please join the fun, the seasons here . INGREDIENTS 3 medium potatoes peeled and quartered 2 2 cups fresh baby carrots 2 celery ribs cut into2 1/2 inch pieces 1 medium onion peeled and quartered 3 garlic cloves peeled and quartered 1/2 cup chicken broth 3 turkey drumsticks (about 1/2 pound each) 2 tsp seasoned salt 1 tsp dried thyme 1/4 tsp pepper 1 tsp dried parsley flakes DIRECTIONS In a greased oval 5 or 6 qt slow cooker, combine the first six ingredients. Place drumsticks over vegetables and sprinkle with seasoned salt, thyme, parsley and pepper. Cover: cook on low for 5 to 5 1/2 hours or until meat thermometer reads 180 degrees. Yields 3 serving

Jambalaya Stir-Fry on Cajun Rice Ingredients: 1 cup uncooked converted rice 1 can (16 ounces) diced tomatoes, undrained 1/2 cup finely chopped celery 2 teaspoons chicken bouillon granules 1 bay leaf 1/2 pound andouille sausage, cut into 1/4-inch rounds* 1-1/2 cups chopped onions 1 cup chopped green bell pepper 1/2 pound raw large shrimp, peeled and deveined 1/2 pound boneless chicken breasts, cut into 1-inch pieces 3/4 teaspoon dried thyme leaves 1/4 cup chopped fresh parsley 1 teaspoon salt 1/2 teaspoon ground red pepper 1/2 teaspoon paprika Hot pepper sauce Preparation: 1. Bring 1-3/4 cups water to a boil in medium saucepan. Add rice, tomatoes and their liquid, celery, bouillon granules and bay leaf. Return to a boil; reduce heat, cover tightly and simmer 20 minutes or until all liquid is absorbed. Remove and discard bay leaf. 2. Meanwhile, heat large skillet over medium-high heat 1 minute. Add sausage, onions and bell pepper; cook and stir 10 minutes. 3. Increase heat to high; add shrimp, chicken and thyme. Cook and stir 5 minutes. Add parsley, salt, ground red pepper and paprika. Stir to blend thoroughly. 4. Place rice on platter. Spoon shrimp mixture over rice and serve with pepper sauce.

Super Nachos Recipe Servings: 4 Serving Description: large microwave safe dish Prep Time: 15 minutes Cook Time: 15 minutes Ingredients: 1 bag nacho chips 1 cup sharp Cheddar cheese, shredded 1 cup Monterey Jack cheese, shredded 16 ounces can-refried beans 1 pound lean ground beef 1 large onion, chopped 4 green onions, sliced 3 ripe tomatoes, diced 4 ounces black olives, sliced 1 bunch Romain lettuce, torn into bite size pieces Directions: In a heavy skillet, brown ground beef and onions. Arrange nacho chips on platter. Cover with Monterey Jack and sharp Cheddar cheese; then place in microwave until cheese is slightly melted. Spread refried beans onto slightly melted cheese. Cover refried beans with browned ground beef. Place in the microwave and heat thoroughly (approximately 1 minute). Garnish with lettuce, tomatoes, olives, and green onion. Optional: Top with Sour Cream, Serve with Salsa and Guacamole.

Eggplant Sandwiches INGREDIENTS: 1 small eggplant, halved and sliced 1 tablespoon olive oil, or as needed 1/4 cup mayonnaise 2 cloves garlic, minced 2 (6 inch) French sandwich rolls 1 small tomato, sliced 1/2 cup crumbled feta cheese 1/4 cup chopped fresh basil leaves DIRECTIONS: 1. Preheat your oven's broiler. Brush eggplant slices with olive oil, and place them on a baking sheet or broiling pan. Place the pan about 6 inches from the heat source. Cook under the broiler for 10 minutes, or until tender and toasted. 2. Split the French rolls lengthwise, and toast. In a cup or small bowl, stir together the mayonnaise and garlic. Spread this mixture on the toasted bread. Fill the rolls with eggplant slices, tomato, feta cheese and basil leaves. Serves two
