Ok, I had the most delicious tomatoes the other day and kept thinking about why they aren't served as is for most people. Sometimes, simple is better. So I kept pondering this. Finally, I started thinking about a way to add something different w/o changing them.
I found a perfect tomatoe, not too juicy, but still ripe and full of flavor. Then I cut some rosemary, washed the stem carefully, and set it aside. I sliced the top of tomatoe off, just enough to make a cap. then I inserted the rosemary stem, with the green sprigs still on, down into the juicy portions of the tomatoe and placed the cap back on. Let it sit for 3 hours, then removed the stems. Sliced the tomatoe and served. Wow...it was great! Next I'm going to try it with different herbs. Basil, tyme, etc. Perhaps each section with it's own flavor.
