Mexican Tossed Layer Casserole
4 servings
1 cup uncooked rice
12 ounces 95% lean ground beef
3/4 cup mild picante sauce
1 teaspoon ground cumin
2 cups(8oz)shredded sharp cheese,divided
1/2 cup sour cream
1/3 cup finely chopped green onion
2 tablespoons chopped fresh cilantro
1/2 teaspoon salt
1/8 teaspoon ground red pepper
1. Preheat oven to 350F. Lightly coat 11 x 7 inch baking pan with non stick.
2. Cook rice according to package directions. Meanwhile,heat skillet over medium-high heat until hot. Add beef; cook until browned,stirring frequently to break up meat. Add picante sauce and cumin,stir well. Set aside.
3.Remove cooked rice from heat. Add 1 cup Cheddar cheese,sour cream,green onions, cilantro, salt and red pepper. Toss gently and thoroughly to blend.
4. Spoon rice mixture into prepared baking dish. Spoon beef mixture over all. Cover with foil. Bake 20 minuted or until heated through. Sprinkle with remaining Cheddar cheese. Bake uncovered, 3 minutes more or until cheese melts.
Chunky Chili
4 servings
1 pound 90% lean ground meat
1 medium onion, chopped
2 cans(14 1/2 oz each)diced tomatoes, undrained
1 can(15 oz) pinto beans,rinsed and drained
1/2 cup salsa
1 tablespoon chili powder
1 1/2 teaspoons ground cumin
Salt and black pepper
1/2 cup (2 oz) shredded Cheddar cheese
3 tablespoons sour cream
Sliced black olives
1. Cook and stir beef and onion in large skillet at medium-high heat until
beef is browned and onion is tender. Drain Fat.
2. Place beef mixture,tomatoes with juice,beans,salsa,chili powder and cumin in slow cooker:stir. Cover;cook on LOW 5 to 6 hours or until flovors are blended. Season to taste with salt and pepper. Serve with cheese,sour cream and olives.
