Ioannis Zabetakis and Mark A. Holden of the Procter Department of Food Science at the University of Leeds conducted an exhaustive study the strawberry, resulting in a detailed 14-pages report. Amongst its many findings were the observations that the aroma of the strawberry is due to the great variation of the enzymes involved during the ripening of the fruit, and that the flavour “could be the products of the non-enzymic reactions (e.g., the reaction of an alcohol with an acid), whose precursors formation is enzymically controlled”.
