1tbsp olive oil
Juice of 1 lime
1/2tsp cayenne pepper
1/2tsp paprika
4 chicken breasts
1tbsp veg oil
1 onion finely chopped
1 green pepper finely chopped
250g rice
350ml water or chicken stock (use ½ stock cube)
Handful chopped parsley
Handful chopped coriander
Lime wedges to garnish
1. Mix together olive oil, lime juice, cayenne pepper and paprika and marinade the chicken.
2. Heat veg oil in a saucepan and sauté the onions and green pepper. Add rice and mix well, then add water or chicken stock. Simmer for 10 mins or until rice is cooked.
3. Meanwhile cook chicken in a non stick fry pan or griddle pan for about 20mins or until cooked through.
4. Add coriander and parsley to the rice and serve with the chicken and lime wedges to squeeze over.
