Sand Tarts Sand tarts mmm mmmm good!

They are delicate, and though they take a bit of time and patience, are delightfully tasty and elegant party treats.

Ingredients: 1 cup butter, softened 1/4 cup, plus 1 tablespoon powdered sugar

1 1/2 teaspoons vanilla extract

2 1/2 cups four 1 cup chopped pecans ( make the pieces pretty small)

Additional powdered sugar Directions:

Cream the butter and the sugar together until light and fluffy.

Stir in the vanilla, flour, and chopped nuts.

Mix until just combined.

Shape  and roll the dough into balls and place them 2 inches apart on the cookie sheet.  They will NOT flatten, they cook as they are shaped.

Bake at 350* for about 10 minutes, or, until the bottoms are beginning to get LIGHT brown.

Do NOT overcook!

Remove from the cookie sheet and IMMEDIATELY roll into the powdered sugar.

Take a large silver spoon and gently cover the cookies with the powered sugar, and then  spoon them onto a fancy platter to cool.

Christmas Holiday decorating:  make a wall of chocolate fudge rectangles all around the platter and then spoon in the cooled sand tarts in the center :) (Cut your fudge into squares first and then half them to make the wall.

Baby Showers: place pink and blue melt in your mouth mints around the outside and fill the center of your tray with the sand tarts.. Something different, but a really pretty and delicate table desert.

Valentien's Day:  Place fresh strawberries dipped in chocolate around the outside of your tray, fill the sand tarts in to the center.

Always remember to provide delicate tongs to lift the sand tarts from the tray to your guests' plates :)
