Old Fashioned Sponge Toffee 3/4 cup Corn Syrup 3/4 cup white sugar 4 tsp. baking soda Combine the corn syrup and sugar in a saucepan and bring to a boil, stirring often. When the mixture thickens substantially, drop a ball into a glass of cool water. It should turn into a thread of candy and become very brittle. At this point, add the pre-measured baking soda and stir the still-boiling mixture rapidly. The mixture will rise so you have to have this in a deep saucepan and keep stirring it. When the color turns a really nice golden brown and is hard to stir, pour it into a buttered pie plate or bar pan. Let settle and cool until hard. Microwave, uncovered, at 50-percent power for 1-1/2 to 2 minutes or until chocolate is melted, stirring once. Stir in marshmallows and graham crackers. Spoon into paper-lined muffin cups (about 1/3-cup each). Refrigerate for one hour or until firm. Without further stirring, boil until mixture reaches 290 degrees Fahrenheit on a candy thermometer. Pour mixture into a greased or buttered 9-by-12-inch pan and let cool until almost firm to the touch Score surface into 2-inch squares with a sharp knife, but do not cut completely When cool, break into pieces (This should be easier if toffee is properly scored). Well I found the recipe and it is very easy and is funny to make with the kids.. make it and savor the taste and remember better days a while ago... SPONGE TOFFEE All Done In The Microwave This Time.... 1 cup of sugar 1 cup dark corn syrup 1 tbsp vinegar 1 tbsp baking soda Combine sugar, corn syrup and vinegar in a large mixing bowl or casserole (2 quart size). Cook, uncovered on full power 3 minutes. stir well. Continue cooking on full power 6-10 minutes, stirring occasionally, until thickened and is 300f. Test with thermometer or by dropping small amount in cold water. (should be brittle threads) quickly stir in soda, mix well.. Mixture will foam up... Let stand until firm, remove from dish and break into pieces... ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ MOM'S COLE SLAW DRESSING 1/2 c. mayonnaise 1 tbsp. milk 1 tbsp. vinegar Salt & pepper to taste 1 to 2 tbsp. sugar Mix all ingredients and use for your cole slaw. Best if mixed the night before for full flavor. Enough dressing for 1 pound of cole slaw. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ SIMPLE SALMON 1-2 tbsp. olive oil 2-4 green onions, whole 1 salmon steak or fillet Salt & pepper to taste Fresh or dried dill (opt.) 1 lemon wedge Pour oil in medium size heavy frying pan over medium heat. Wash and trim onions and add to pan. Season salmon with salt and pepper and add to pan. Fry until crusty and cooked through (about 10 minutes depending on thickness) but not overdone. Check for doneness by inserting small knife in center; flesh will have changed from dark pink to pale pink. (Onions will have browned and will taste marvelous.) Sprinkle with dill, if used. Transfer to plate, serve with lemon wedge. Makes 1 serving ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Ok now i saved this one for last 'best for last' an old friend of mine passed away almost two years ago from complications from surgery and basically had an infection from her surgery and died a couple of days after...she was in her mid 70's and was a sweetheart... she used to take care of my daughter when she was little..her granddaughter and my daughter were friends and so were her daughter and i...so anyways this family were philipino and accepted me as one of there own anytime i ever went over to there house...Dina the grandmother was the most generous lady besides my mom ive known..she was like a mom to me...so anyways she used to make me these wicked bunssssss to die for...and one day i asked her daughter(my friend Luisa) 'Hey do u have the recipe of those buns that your mom used to make for me??' And searched her moms recipe book and found the recipe:( sad moment really cause i loved her mommy so much... so this is a very special recipe handwritten by her in her lil book...enjoy it they're the best buns ive ever eaten...i have yet to actually make them myself.... Dina's sweet buns 1c water 5 c flour 1 c sugar mix together then mix the next three ingredients together 2 tbsp yeast 2 tbsp sugar 1 c lukewarm water Raise yeast 10 minutes, then mix altogether,knead for about 15-20 minutes then let rise for an hour, then make a roll like a ball and let rise again for an hour then bake for about 10-20 minutes Let cool Oven 350 degrees thanx Dina xo
