Cabbage Rolls

Cabbage Rolls With summer ending and all the fresh produce available... This is a recipe I've used for years... Prep Time: 30 Minutes Cook Time: 9 Hours Ready In: 9 Hours 30 Minutes Yields: 6 servings "Cabbage leaves stuffed with ground beef, onion and rice, covered in a sweet and tangy tomato sauce and cooked in a slow cooker." INGREDIENTS: 12 leaves cabbage 1 cup cooked white rice 1 egg, beaten 1/4 cup milk 1/4 cup minced onion 1 pound extra-lean ground beef 1 1/4 teaspoons salt 1 1/4 teaspoons ground black pepper 1 (8 ounce) can tomato sauce 1 tablespoon brown sugar 1 tablespoon lemon juice 1 teaspoon Worcestershire sauce DIRECTIONS: 1. Bring a large pot of water to a boil. Boil cabbage leaves 2 minutes; drain.{ I normally steam mine} 2. In large bowl, combine 1 cup cooked rice, egg, milk, onion, ground beef, salt, and pepper. Place about 1/4 cup of meat mixture in center of each cabbage leaf, and roll up, tucking in ends. Place rolls in slow cooker. 3. In a small bowl, mix together tomato sauce, brown sugar, lemon juice, and Worcestershire sauce. Pour over cabbage rolls. 4. Cover, and cook on Low 8 to 9 hours. I'll put some pics in it when it's done :)

Breakfast Bars

5 Cups Frosted Flakes, crushed to 3 cups 1/2 cup raisins 1/2 cup brown sugar 1/2 cup light corn syrup 1/2 cup peanut butter 1 tsp vanilla extract Combine crushed cereal with raisins in a large bowl; set aside. Bring brown sugar and corn syrup to a boil in a small saucepan over medium-high heat, stirring constantly. remove from heat. Stir peanut butter and vanilla into syrup mixture until well blended. Pour over cereal and raisins, stirring until evenly coated. Press into a 9-inch square pan. Cool Completely. Cut into 16 bars.

This is something I make each year for the winter Holidays... Hot Cocoa Mix... PREP TIME 15 Min READY IN 15 Min SERVINGS & SCALING Original recipe yield: 21 servings US METRIC About scaling and conversions INGREDIENTS * 6 2/3 cups nofat dry milk powder * 1 cup instant chocolate drink mix * 1 (5 ounce) package cook-and-serve chocolate pudding mix * 1/2 cup confectioners' sugar * 1/2 cup powdered nondairy creamer * 1/2 cup baking cocoa DIRECTIONS 1. In a bowl, combine the first six ingredients. Store in an airtight container in a cool dry place for up to 3 months. Yield: 21 batches (about 7 cups total). 2. To prepare hot cocoa: Dissolve 1/3 cup cocoa mix in boiling water. Marshmallow Spoons Dip plastic spoons into Marshmallow fluff... freeze for about 10 minutes. Dip into Chocolate Bark Coating and freeze till Chocolate is set... Photobucket I package them in sandwich bags tied with ribbons and put into a little gift bag... the kids love them :D Photobucket

Sugar coated pecans

Sugar Coated Pecans Yields: 12 servings "These slow-roasted whole pecans coated in an egg white and sugar glaze spiced with cinnamon make a wonderful snack for any occasion." INGREDIENTS: 1 egg white 1 tablespoon water 1 pound pecan halves 1 cup white sugar 3/4 teaspoon salt 1/2 teaspoon ground cinnamon DIRECTIONS: 1. Preheat oven to 250 degrees F (120 degrees C). Grease one baking sheet. 2. In a mixing bowl, whip together the egg white and water until frothy. In a separate bowl, mix together sugar, salt, and cinnamon. 3. Add pecans to egg whites, stir to coat the nuts evenly. Remove the nuts, and toss them in the sugar mixture until coated. Spread the nuts out on the prepared baking sheet. 4. Bake at 250 degrees F (120 degrees C) for 1 hour. Stir every 15 minutes.

Tilapia, which is a farm raised fish, can make even the non fish lover take notice. Great sweet taste and no fishy smell! Best of all it's on your table in 40 minutes. PREP TIME 15 Min COOK TIME 25 Min READY IN 40 Min recipe yield: 4 servings INGREDIENTS * 4 (4 ounce) fillets Tilapia (bream) * 1/4 cup olive oil * 1/4 cup raspberry vinegar * 1/4 cup honey * 1 teaspoon yellow mustard * 1/2 teaspoon dried dill weed DIRECTIONS 1. Preheat oven to 350 degrees F (175 degrees C). Grease a 11x7 inch baking dish. 2. In a mixing bowl, whisk together the olive oil, raspberry vinegar, honey, mustard and dill weed. 3. Arrange the Tilapia fillets in a single layer in the prepared baking dish. Pour mixture over the fish fillets, coating the fillets evenly. 4. Servings 8 prep time 10 min cook time 40 min INGREDIENTS * 3 large sweet potatoes, peeled and cut into 1-inch cubes * 2 tablespoons olive or canola oil * 2 tablespoons brown sugar * 1 teaspoon chili powder * 1/2 teaspoon salt * 1/4 teaspoon cayenne pepper DIRECTIONS 1. In a large resealable plastic bag, toss sweet potatoes and oil. Add remaining ingredients; toss to coat. Transfer to a greased 11-in. x 7-in. x 2-in. baking dish. Bake, uncovered, at 400 degrees F for 40-45 minutes or until potatoes are tender, stirring every 15 minutes. On cold mornings when I have enough time, I like to make this for my family :) take strawberry jam and whipped cream cheese, spread it on 2 slices of bread... make the eggs like u do for french toast...and dip the sandwiches in the egg fry like u do french toast :) I top with more strawberries and whipped cream
