Well my dad who was supposed to be gone all week came home early today.. fuckin grand!!! Hes obviously drunk and probly stoned and i cant deal with his attitude. He aggrivates every little situation. We have this plugin thing for the internet and i moved them around so i could plug in my heating pad seeing as how i didnt wanna sleep alone because i was really sick. Ricotta Chicken
1 beaten egg 1 c. low fat Ricotta cheese 1/3 c. finely chopped pepperoni Dash of pepper 6 med. skinned boneless chicken breast halves (about 1 1/4 lbs.) 1 c. Prego chunky garden spaghetti sauce 1/2 c. shredded Mozzarella cheese Combine egg, Ricotta, pepperoni and pepper in small bowl. Rinse chicken and pat dry with paper towel. Pound chicken breast to 1/4 inch rectangles. Place about 1/4 cup of Ricotta stuffing on short end of chicken and roll up. Place chicken rolls seam down in 8 x 8 x 2 inch microwave dish. Cover with vented plastic wrap. Microwave 10-12 minutes. Re-arrange chicken after 4 minutes. Microwave spaghetti sauce on High 3-4 minutes. Pour over chicken rolls. Sprinkle with Mozzarella. Let stand a few minutes.

Chicken Capri Parmigiana
4 whole chicken breasts, bones and skin removed 1 c. Ricotta 8 slices Mozzarella 1 c. crushed tomatoes 2 tbsp. cooking oil 1/4 tsp. salt 1/4 tsp. pepper 1/2 tsp. pepper 1/2 tsp. oregano 1/2 tsp. garlic powder Blend the Ricotta with salt, pepper and oregano. Rub chicken with garlic powder and brown in skillet with 2 tablespoons oil for approximately 12 minutes on each side. Remove and cool. Place chicken in baking dish side by side. Spoon 1/4 cup seasoned Ricotta and 1/4 cup crushed tomatoes in center of each breast. Top each breast with 2 slices of Mozzarella and bake in preheated 350 degree oven for 20 minutes. Serves 4.

Mexican Chicken Lasagna
1 (16 oz.) pkg. curly edge lasagna 1 lb. boned chicken breast, cut into pieces 2 tbsp. oil 1 med. green pepper, chopped 1/4 c. chopped onion 2 tsp. chili powder 1 (15 oz.) can Contadina Ricotta cheese 1 c. shredded Jack cheese 1 egg 1 jar salsa 1 c. shredded Cheddar cheese Chopped tomatoes Sour cream Slices olives Prepare noodles as directed, drain. Lightly brown chicken in hot oil. Add peppers and onion. Cook until tender. Remove from heat, stir in chili powder, cheeses and egg. Spoon 1/3 cup mixture on one end of noodle and roll up (like a cinnamon roll). Place on greased 9 x 13 inch dish and pour salsa over roll ups and cover with foil. Bake at 350 degrees for 25 minutes. Uncover and sprinkle with Cheddar cheese and bake 5 minutes longer (until cheese melts).

Ready To Come Home!!
Okay well this is the second to last blog for the Japan trip! The last one will be right before I leave to go back to the good ol' USA! 1/2 lb. pork sausage all-purpose flour for coating 1 tablespoon chopped fresh chives 1 egg, beaten salt & pepper 1-1/2 cup fresh white breadcrumbs 8 hard boiled eggs Mix sausage with chives, salt and pepper. Divide into 4 equal portions . On floured surface, flatten each piece into a 2-inch (or 4-inch) circle. Shell eggs and dust with flour. Put beaten egg into one dish and bread crumbs into another. Place egg on a circle of sausage and mould it around the egg, sealing seams well. Roll each in beaten egg first then breadcrumbs. Heat vegetable oil to 360 degree. Deep fry eggs 3-4 min. (or 5-6 min. for chicken eggs) until golden brown. Drain well on paper towels until cool.

Cover with lid, bring to a boil and place in 350 degree oven for 3 hours. Serve garnished with diced, fried liver. Strain the cooking liquid into a pan and reboil. Served with sprouts or carrots. 2 lb. stewing lamb (or 8 cutlets) 1 oz. seasoned flour 1 oz. fat 1/2 lb. sliced onions 3/4 pt. beef stock salt and pepper Cut meat into 1-inch cubes. (If you use cutlets, leave them whole.) Coat meat in seasoned flour and fry in fat with onions. Put meat and onions in a casserole dish; pour stock over. Cover and simmer on top of stove, or bake in 350 degree oven, or about 2 hours or until meat is tender.

4 ounces Plain white flour 2 Small eggs 1/2 teaspoon Salt 10 fluid ounces Milk 4 (100% pork) sausages Essentially, this dish is Yorkshire pudding with sausages in it. Preheat the oven to 450F. Saute the sausages briefly in a pan to draw off excess fat. Reserve this. Cut the sausages into chunks. Put the fat in a small roasting pan (a metal 9X9 cake pan is perfect): add a little oil, if necessary, to bring the amount of fat up to about 4 tablespoons. Heat the fat, either in a hot oven or on the stove, until smoking hot. Meanwhile, prepare the batter mixture. When the pan and fat are *very* hot, pour in the batter mixture, scatter the sausage chunks onto it, and put the whole business into the hot oven. Bake for about 5-10 minutes at 450F, then reduce to 400F and bake until the Yorkshire pudding around the sausages has puffed up nicely and is a deep golden brown. Cheese Stuffed Pork Roast
3 lb pork roast Stuffing Mixture: 4 oz cream cheese, softened 1/2 c. shredded sharp cheddar 3 green onions, chopped 4 slices sun dried tomatoes, chopped 1/2 green bell pepper, chopped 1 tsp minced fresh garlic 1 tsp sweet dried basil 2 tsp parsley pinch of cayenne pepper chipotle hot sauce to taste Other: 1/3 c. chicken broth or stock 1/3 c. dry white wine 3 tablespoons dried chives 2 tsp sweet basil salt and pepper to taste 1. Combine stuffing ingredients in food processor and pulse just until blended. Refrigerate for about 1 hour. 2. Slice open the roast so it lays out flat. 3. Generously spread the stuffing mixture on the inside of the pork roast. Roll up the roast and tie ends securely. 4. Preheat oven to 350F. In a casserole dish add the chicken broth and white wine. Last night was a easy night at work. I had four pallets to work and got them all done. The down side was I was in some pain from mother nature. I mean to the point of crying for a good bit of the afternoon before bed. I was really hoping it would stop before I went to work but I am not that lucky. I was in a good bit of pain through work and still am now. This truely made it hard to get those pallets done in time. Halloween
Talk about kick ass night. This has been by far the best Halloween/Anniversary I have ever had. The evening started out pretty fucking hectic trying to get all the kids dressed in their costumes. I was introduced to a "concept", or lifestyle if you will over a decade ago. Not officially mind you, but the power of suggestion from those that are closest to you is quite unique in and of itself. Life
Life sure has a way of coming along and kicking you in the nuts when you least expect it. Seems like lately things have finally been going my way for once. Money saved in the bank, a nice vehicle, bills getting caught up, plus all the good things that make life worthwhile like family and friends. And then, just as I settle back and begin to enjoy my life, KER-POW!!! Life takes a shot at my nuts and hits dead center. For that nice vehicle I was speaking of needs new steering parts now to the tune of $700 parts and labor, money I don't have even with what I've been saving. So now I have to hope my truck doesn't tear itself apart in the time it takes for me to save up that money, which would mean needing even more money. Anyone want to make a donation? lol, jk

Therapy Sucks The problem with therapy is that it doesn't actually work. This is because psychology and psychiatry barely qualify as sciences at all. They are sciences in their infancy, much like where medical science was 200 years ago. Consider medicine in 1800 or so, before the discovery of DNA, viruses, and bacteria. Surgery was being done, diseases were being treated, there were plenty of theories as to the cause of disease and the ways to stay healthy. Most of these theories were wrong, and most of the treatments for diseases did nothing of value, or were even harmful. Some worked quite well. This is comparable to where psychology and psychiatry are today. Their practitioners have no true understanding of the human psyche and human personality. What they have is a large amount of data, based on lots of research. They've looked at this data, and figured out that psychological symptoms tend to cluster together in common patterns, which they refer to as disorders

Science Is Wonderful!
It has been scientifically proven that if we drink one litre of water each day, at the end of the year we would have absorbed more than one kilo of Escherichia Coli Bacteria found in water that contains feces. In other words, we are consuming one kilo of shit. However, we do not run that risk when drinking rum, gin, whiskey, beer, wine or other liquors because alcohol has to go through a distillation process of boiling, filtering and fermentation. It is my duty to communicate to all of you people who are drinking water, to stop doing so. It has been scientifically proven that it is unhealthy and bad for you.
