Interesting Concept
I was talking to a friend last night who tends to be the philosophical type. He asked me how I will look back on my life when I am old and gray and feel about the things I had done and things I had accomplished. It was an great question and I really did not have to think about the answer. I would look back on my life and know, that even though I had been through hard times, I always picked myself up off the ground, dusted the dirt off of me and kept on going. I am only 26, and the living that I have done is more than most people ever experience in 90 years of life. I have modeled for a few different things and have been accepted by a major company to model for them. I've been to more concerts than I could ever count and have hung out with more bands than some people have even heard of, although NEVER making a groupie of myself...only having some drinks with them and talking to them learning who they really are and what inspires their music. Puerto Rican Pot Roast (carne Mechada Al Estilo Puertorriqueno)
INGREDIENTS: 1/3 cup olive oil 3 tablespoons white-wine vineagar 1 tablespoon Adobo 1/2 tablespoon dried oregano 3 to 3-1/2 pounds eye of round STUFFING: 1/3 cup dried currants, soaked in 1/3 cup sherry 1/2 cup manzanilla olives, chopped 1/4 pound smoked ham, diced 1 chorizo (red Spanish sausage), chopped BRAISING MIXTURE: 2 cups tomato sauce 2 cups beef broth 1/3 cup sherry from the marinated currants 1/3 cup Basic Recaito remaining stuffing 6 red potatoes, cut into pices 1 Combine the oilive oil, vinegar, adobo, and oregano. Season the meat with this mixture. With a sharp knife, cut a large incision through the center of the meat. 2 Combine all of the stuffing ingredients. Stuff the meat, cover, and let stand for 1 hour. 3 Sear the meat on all sides in a large pot or Dutch oven over medium-high heat. Combine all of the braising ingredients. Good Morning. I heard a blurb on the way into work this am about a protest that was supposed to go on at a farm in the thumb of Michigan. The farm in question was to employ wind turbines as their source for power. Cheaper to run and savings to the farmer. Roasted Chicken With Honey-rum Glaze (pollo Asado Con Glaceado De Ron Y Miel De Abejas)
INGREDIENTS: 1 3 to 3-1/2 pound chicken Adobo to taste 2 tablespoons golden rum or spiced rum 1/4 cup honey1 Preheat the oven to 400 F. Season the chicken with the adobo and set aside. Combine the rum and honey and brush the chicken with a light coat of the glaze. Sprinkle more adobo over the chicken. Place the chicken in a roasting pan and cover with aluminum foil. 2 Bake for 20 minutes. Remove the foil and brush the chicken again with the glaze. Bake, uncovered, for 30 minutes more, brushing the chicken with glaze every 10 minutes. Let the chicken cool a little before carving.

Kids...and Things They Say....
A boy is burnt on the foot while he and his sister and mother are making fudge cake. She sets the oven for less time then needed so it wouldnt burn the cake. The kids go into the playroom and later mom checks the oven timer and she had time to use restroom so she did as kids were playing in playroom. When they heard door close they got curious and checked on the cake and it spills on the boys foot burning him.... He screams and runs to other shower to put cold water on burn while mom comes out and runs for him. She decides cold water in pot and soak foot as dr once told her was good for burns. After she brings him to hospital and dr there blesses him for knowing to soak in cold water during critical time. he asked the boy if he learned anything tonight. The boy says yes.. never mess with oven and help mommy. A week later at follow up appointment a nurse asked him leson learned and he told her,dr and mom.... Yes, I learned you should never forget eggs and you won't get burnt.

Welp Here's The Sknny On My Appt.....
I saw the neuro surg today for my doc appt. He says he can fix my back. I wont be 100% but I will be better then what I am now. He will have to do some fusing of the vertebra though. He said I had to quick smoking ( which I had already signed up to do that and was going to quit in Sept anyway ) and gave me a script for something that will help me out alot, said it was the best there was to stop smoking. I have to have another MRI and then possibley a Mylogram. I havent gotten my hopes up just yet. I have been threw so much when it comes to my back and actually getting something done to fix it. I dont think I could handle this going wrong. But like I said before I'll keep those who wanna know/care updated as I know things.

Traditional Chicken Fricassee (fricase De Pollo Tradicional)
INGREDIENTS: 1 4-pound chicken, cut into pieces 1 tablespoon salt 1 teaspoon black pepper 1/2 tablespoon dried oregano 3 tablespoons safflower oil 4 ounces smoked ham, diced 1/2 cup basic recaito 1 Italian frying pepper, seeded and diced 1/2 cup alcaparrado 1 tablespoon white-wine vinegar 2 cups tomato sauce 2 cups water 1/2 cup golden rum 3 bay leaves 1 Season the chicken with salt, pepper, and oregano. Set aside. Heat the oil in a large skillet and saute the ham, recaito, frying pepper, and alcaparrado over medium heat for 5 minutes. Add the chicken and cook for 5 minutes more. Stir in the remaining ingredients. Bring to a boil, then reduce the heat and simmer for 25 minutes.

Today was my oldest daughter's first day of Kindergarten. I am so proud of her, and I'm excited for her, but I still choked up walking out the door. My 10 mile bike ride is tomorrow. This year I was able to raise over $1,900 dollars for the Lance Armstrong Foundation. Going Thru Some Shit
Hello to all my friends and fans here at Fubar. I hardly ever write anything in my blogs, im usually sharing sites and graphics and videos. I currently live with my boyfriend, Weve been together over three years. For the past two weeks now he is constantly over his ex's house helping her.."who knows if thats true" His ex just moved into her own place and he is over night after night coming home later and later, First it was after midnight, then 2 or 3 in the morning. Wow, I just finished a call from a recruiter wanting me for a contract in DC. Two problems jumped up quickly, I couldn't understand him and he felt I owed something to him because he called me. I have stopped initiating contact with his company earlier this year for this same reason. I can't understand any of their recruiters, so why do they continue to put these people on their telephones? Really Bad Day.
so today pretty much sucked. i woke up at 4:00 in the morning to get to work only to find out i was supposed to work til three which i couldnt do cause i had a meeting around 12:30. so i try to tell martin but he completely ignores me. so i was pretty pissed and went outside and when i came back in martin and i got into a pretty heated argument...ill spare you the details but it ended in me quitting. then i swing by the house to see my dad but he apparently had a bad day too...and one too many alcoholic beverages...yet another heated argument which ended with cd cases, books, and other very hard painful objects rushing past or into my skull...so i left and headed back up to the apartment. i stopped and got myself a parfait though..i think putting up with all that shit today made me deserve some nice TCBY.

Arizona Avocado Salad
3 avocados, seeded and peeled 1 tablespoon onion, minced 1 teaspoon chili powder 2 drops Tabasco Sauce 1 teaspoon salt 4 medium tomatoes 8 lettuce leaves Peel tomato and cut off top. Scoop out pulp.Mash the avocados, and mix well with the onion, chili, Tabasco, and salt. Stuff tomato with avocado mixture, and serve over lettuce. This recipe is in the category of those that are excellent and very easy to assemble. Makes 6 servings 2 (10 ounce) cans chunk chicken, drained and flaked 1/4 cup chopped onion 1/4 cup mayonnaise 4 tablespoons fresh salsa salt and pepper to taste 6 (10 inch) flour tortillas 12 lettuce leaves In a small bowl combine the chicken, onion, mayonnaise, salsa, salt and pepper. Mix together. Line each tortilla with two lettuce leaves, then divide chicken salad mixture evenly among each tortilla and roll up, or 'wrap'.

French Cranberry Apple Cake
Unlike many French pastries, this cake uses oil instead of butter, so it's not quite as light and fluffy but it's better for you. Fried Rice
Ingredients 2 C. long grain rice, washed 2 garlic cloves, minced 1 Tbs. canola oil Crisp cooked vegetables, such as carrots, green peas, broccoli 4-6 Chinese sausage links, cut into 1/4-inch pieces Salt 1 1/2 Tbs. soy sauce 1 1/2 Tbs. fish sauce 1 Tbs. chopped fresh cilantro Black pepper 2 large eggs, beaten Directions Wash rice and cook, using slightly less water than package recommends. Set aside cooked rice. In large skillet, heat 1 Tbs. oil and add minced garlic and cooked vegetables. Sauté until garlic is softened. Place in a bowl and set aside. Cook sausage pieces in skillet and drain on paper towels. Wipe excess grease from skillet with paper towel. Add cooked rice, vegetables, sausage, and mix well over medium heat. Add beaten eggs and stir until eggs are cooked. (Eggs may be cooked separately, cut up and added) Add salt to taste, soy sauce, fish sauce, cilantro and pepper. Yield: 4-6 servings

David Lynch's Inland Empire. An Artsy flick that you have to adjust your TV's color and contrast to see properly. It's creepy, surreal, and in true David Lynch style, blurs reality and fantasy. This time with the help of a Polish Gypsy curse. There are some subtitles, if you do not speak Polish, but most of the movie is in English. At three and a half hours it's a bit long. But the imagery is great and evokes many emotions. I enjoyed it and definitely reccomend it.

Greek Roasted Chicken & Potatoes
A great dish to serve when company is over. Ingredients 6 lb. chicken (roaster) Salt and pepper 2 – 3 Tbs. dried oregano 4 - 6 baking potatoes, peeled and quartered 1/4 C. butter, melted 3 Tbs. lemon juice 3/4 C. chicken broth Directions Preheat oven to 350 degrees. Pour broth into bottom of a roasting pan. Put chicken on a rack in pan; arrange potatoes around and sprinkle with salt, pepper and oregano. Pour butter and lemon juice over top of chicken and potatoes. Bake 2 - 2 1/2 hours until chicken is tender and browned, basting with pan juices frequently. Yield: 8 Servings.

This simple recipe makes these toasted strips in less than 15 minutes. A great change from regular bread sticks. Ingredients 4 slices white country bread 1 C. melted butter 1 Tbs. onion salt 1 C. corn chips, crushed 1 C. Parmesan cheese, grated Directions Trim crusts; cut each slice into five strips. Combine butter and onion salt; roll bread in mixture. Dip one side of strips in mixture of corn chips and Parmesan. Bake on cookie sheet at 400 degrees for 8-10 minutes or until crisp and lightly brown. Yield: 20 strips

Growing up in Middle Tennessee one of the stories I have heard and probably the most popular legend is the one and only Bell Witch.
