Club Review - Stars Cabaret, Beaverton Or - Oct. 18, 2008
Last night my husband and I visited our second Stars Cabaret Club... this time we visited their Beaverton, OR location whereas our last visit on Aug. 23 was to their Salem location. We arrived at 10:00 pm and the first thing we noticed as the white stretched limo that was in front of the club. There is a large parking lot and we found a parking space out in back of the place. We walked in and we presented our hotel key like we did in Salem to get the free cover and we were denied. The hostess told us that we need to present out of state drivers licenses to qualify for the free cover. Right away we were upset since the Salem location gave us a free cover because we presented our hotel key. So ... the cover is $6.00 per person. Tipping?
I needed a hair cut desperately and called a well-rated salon in the town where I work. I got a hair cut and it was great, I loved it. Then I find out it was $50. In my hick town an expensive haircut is $20. The receptionist asked if I wanted to leave a tip. Not after a $50 haircut. I tip waiters and waitresses. They only make $3/hr. Embracing Your Sexuality
We are all sexual beings. However, somewhere along the way when we're growing up women are taught that if they embrace their sexuality they a slut, whore, etc. Men are taught that they're "the man" for embracing their sexuality. It's silly since our sexuality is a normal natural part of who we are. The world is pretty messed up in this respect. I for one have grown to embrace my sexuality. It's an integral part of who I am. I have to thank the friends I've made here who have helped me with this. It is so wonderful to be completely uninhibited and not have to worry if you're being judged for that. It also makes sexual experiences so much better since I'm able to concentrate fully on the moment and the pleasure my partner and I are giving one another without the worry of "what someone is thinking of me". I wish this for everyone, the ability to be completely uninhibited and fully enjoy your sexuality. It's wonderful to be able to share this with my friends here along the way.

2008 Bathurst 1000
I posted this up on myspace originally but decided to post it here too.Leaving for Bathurst on the Friday is a struggle i so want to be there before Thursday missing 4 practice sessions kills me to no end. This years Bathurst 1000 was one of the best i have seen (maybe because Murph was up on the podium and i was there to see it) even thought i was burnt to a crisp after spending Saturday at the top of the mountain. It's Been A Looooong Year...
...and so much has happened. Let's see if I can give the 'short version' - for those of you who might give two sh*ts about it. My whole summer was shot. My mother, who doesn't like me one bit, had a stroke; I spent the summer going back and forth to Oregon to help her out. Much screamin' and yellin' and throwin' things later, she's set up and able to live her life with a minimum of worry and at least some semblance of quality of life. The rest is up to her. So... I origionally came here because of a friend that apparently no longer comes here. I'm not sure about this place because it more or less looks like a meat market. Was walking out(back to the truck) and luckily spotten one through the corner of the grove before it saw me... WASHINGTON — The amount of lead that can be emitted into the air in the U.S. will be dramatically reduced under a new rule the Environmental Protection Agency announced on Thursday to protect the health of millions of Americans — especially children. I wanted to write a cool blog, something that people can understand and say yeah, I can feel that or I've been their before. Sadly enough nothing is coming to mind. This happens a lot to me. Today I got hit hard by a dose of reality - the meaning of "One Day". Helping out a friend with her husband spending time with their son made me realize that time is our friend, yet also our foe. Chicken Scallops With Lemon
CHICKEN SCALLOPS WITH LEMON 1 1/2 lb. boneless, skinless chicken filets Salt Freshly ground pepper Flour 2 tbsp. butter 3 tbsp. olive oil 3/4 c. beef broth 6 paper-thin lemon slices 1 tbsp. lemon juice 2 tbsp. soft butter Cut chicken into 3/8 inch thick scallops . Pound 1/4 inch thick, season with salt and pepper, dip in flour and shake off excess. Melt 2 tablespoons butter with 3 tablespoons oil in large, heavy skillet. When foam subsides, add chicken and saute 2 minutes on each side or until golden brown. Transfer scallops to platter with tongs. Pour off all fat from skillet except a thin film on bottom. Add 1/2 cup beef broth and boil briskly for 1 to 2 minutes, stirring constantly. Return chicken to skillet and arrange lemon slices on top. Cover and simmer over low heat 10 to 15 minutes or until chicken is tender. Transfer chicken to platter and surround with lemon slices. 1 (2-2 1/2 lb) chicken, cut up or split 1 cup rice, long-grain 1 small can garbanzo beans 1 heaping teaspoon onion flakes salt,pepper and cinnamon to taste 1 tablespoon butter 2 cups water Mix all ingredients, except chicken and place in large glass baking dish. Place chicken pieces on top. Cover tightly with foil. Bake at 350 degrees for 1 hour and 20 minutes. Makes 4-6 servings

1 (10 3/4 oz) cam cream of chicken soup 1 (10 3/4 oz) can cream of celery soup 1 (10 3/4 oz ) can cream of mushroom soup 1 cup water 1 ( 2-2 1/2 lb) whole cut up fryer 1 cup converted rice Pour cream of celery soup, cream of chicken soup, cream of mushroom soup and water over rice. Place a washed , salted fryer on top of rice and soup mixture. Cover with foil and bake for 1 hour at 350 degrees. Uncover and brown chicken for 30 minutes. Makes 4-6 servings

1 stick margarine, melted 1 medium onion, chopped 1 (10 oz) package frozen broccoli 3 cups cooked, deboned chicken, cut into small pieces 1 (10 3/4 oz) can cream of chicken soup 1/2 cup milk 1/2 cup cheese whiz 1 1/2 cups minute rice (cooked) Saute onion in margarine. Add soup, milk, cheese whiz, broccoli, and rice. Heat and add chicken. Pour into casserole and bake at 350 degrees for 35 to 45 minutes. This casserole may be frozen prior to baking.

CHICKEN BROCCOLI CASSEROLE 3 packages frozen, chopped broccoli 5 complete chicken breasts 2 cans cream of chicken soup 1 cup mayonnaise 1 tablespoon lemon juice 1/2 teaspoon curry powder (optional) 1 cup grated cheese 1 package seasoned croutons, crushed Cook frozen broccoli 10 minutes i salted water. Drain until dry. Place 1/2 in bottom of 9 x 13-inch greased casserole. Bake chicken breasts in covered pan with a little water until done, about 45 minutes at 350 degrees. Debone. Mix sauce consisting of soup, mayonnaise, lemon juice and curry powder. Layer broccoli, chicke and sauce twice, ending with sauce on top. Cover with mixture of cheese and crushed croutons, sauteed in butter. Crumble this over the top of casserole. Bake for 30 minutes at 350 degrees, 45 minutes if cold. Freezes well; thaw first. CHICKEN BIRDS ROSEMARY 6 chicken breasts 6 very thin slices boiled ham 1 3/4 cup packaged herb-seasoned stuffing mix 1 tablespoon fresh rosemary or 1 teaspoon dried dash pepper 3 tablespoons flour 1 1/2 cups canned chicken broth 2 teaspoons fresh rosemary or 1/2 teaspoon dried 1/4 teaspoon salt Have butcher bone and skin chicken, then pound to an even thickness, about 3/8-inch. Sprinkle chicken with salt and place a slice of ham on each piece. Prepare stuffing according to package directions for dry stuffing; add first rosemary and dash of pepper. Top meat with stuffing(about 1/2 cup for each bird). Roll each fastening with toothpicks, then tie with stringif necessary. CHICKEN WITH RICE Butter a large, flat pan (9 x 13). Scatter 1 1/2 cups of regular rice in pan. Put 8 pieces of chicken breast (4 whole breasts cut in half or you can use other pieces of chicken if desired) on the rice. Melt 1/4 cup margarine and 1 can cream of celery soup, 1 can cream of mushroom soup and 1 large (13 3/4 oz) can chicken broth. Reserve 1 cup of this liquid to use later. Pour liquid mixture over rice and chicken. Bake, uncovered for 2 hours at 300 degrees. Pour reserved liquid over chicken. Put foil over dish and continue baking for 30 minutes. Makes 6-8 serving. (1/2 package onion soup mix can be added to liquid mixture if onion flavor is desired.

BAKED LEMON CHICKEN 1/4 c. melted butter Juice of 2 lemons 24 Melba toast rounds (crushed) 1/2 tsp. onion powder 1/2 tsp. paprika 3 lbs. skinned chicken thighs Combine lemon juice and butter. In separate dish combine crumbs, onion powder and paprika. Dip chicken in butter mixture then in crumb mixture. Arrange chicken on rack in shallow baking pan. Top with remaining butter and crumbs. Vegetable-stuffed Roast
1 2 to 3 pound beef eye of round roast 4 slices bacon 1 cup chopped onion 1 cup shredded carrot 2 cloves garlic, minced 1 teaspoon dried basil, crushed To butterfly the roast, make a single lengthwise cut down the center of the meat, cutting to within 1/2 inch of the other side. Spread the meat open. At the center of the roast make on perpendicular slit to the right of the V and one perpendicular slit to the left. Cover the roast with clear plastic wrap. Pound with a meat mallet to 1/2 to 3/4 inch thickness. Set aside. Cook bacon till crisp. Drain, reserving 2 tablespoons drippings. Crumble bacon; set aside. Cook onion, carrot, garlic and basil in reserved drippings over medium heat until tender. Remove from heat. Stir in bacon. Remove plastic wrap from roast. Spread bacon mixture over roast. Roll up from one of the short sides. Tie with string to secure. Place meat on a rack in a shallow roasting pan. Insert meat thermometer. Roast in a 325 degree oven for 1 1/4 to

CLASSIC ORIGINAL "TEXAS" CHICKEN FRIED STEAK There are a couple of VERY important points that should be stressed prior to beginning: Follow recipe instructions EXACTLY as written. Tenderize your steak (always round steak). Don't overdo it. Try going over in opposite directions so it is properly and uniformly pierced. Not only is the beef not as tough as it used to be, but you don't want shredded beef, either. Don't use too much grease. If you do you will wind up with a deep fried steak instead of a chicken fried steak. The grease should be just deep enough to cover the steaks and it should be THOROUGHLY HEATED before they are added. The hotter the grease, the quicker it will set the flour and keep it from absorbing grease. 2 c. of all purpose flour Salt and pepper to taste 2 c. milk Pure vegetable shortening for frying Place the round steak on a cutting board, trim and discard bone and excess fat. Swiss Steak 1 pound beef round steak, cut into 3/4 inch thick 2 tablespoons all-purpose flour 1 tablespoon cooking oil 1 16- ounce can tomatoes, cut up 1 small onions, sliced and separated into rings 1/2 cup sliced celery 1/2 cup sliced carrots 1/2 teaspoon dried thyme, crushed 2 cups hot cooked rice or noodles Cut meat into 4 serving size pieces. Trim fat. Combine the flour, 1/4 teaspoon salt, and 1/4 teaspoon pepper. With a meat mallet, pound flour mixture into meat. In a large skillet brown meat on both sides in hot oil. Drain fat. Add undrained tomatoes, onion, celery, carrot, and thyme. Cover and cook over low heat about 1 1/4 hours or until meat is tender. Skim fat> serve with hot rice or over noodles. serves 4

SWEDISH MEATBALLS 1 lb ground beef 1 medium potato, grated 2 tablespoons bread crumbs 2 tablespoons grated onion 1 beaten egg salt and pepper Form in small balls and brown in hot fat. Add one can beef bouillion, cover and cook 30 to 40 minutes slowly. Sprinkle with paprika last 10 minutes. Liquid can be thickened for gravy and served over rice.

Spaghetti Sauce
SPAGHETTI SAUCE 4 lbs ground beef 1 lb pork sausage 3 large onions, diced 3 large diced sweet green peppers 1 (12-oz) can tomato paste 4 (4-oz) cans mushrooms 3 (14 1/2-oz) cans Italian tomatoes 1 (4-oz) can ripe, chopped olives 4 teaspoons salt 6 teaspoons sugar 1 tablespoon chili powder 2 tablespoons black pepper 3 cloves garlic or 1 teaspoon garlic powder 2 tablespoons paprika 3 tablespoons oregano 1 1/2 cups red wine 2 tablespoons olive oil Saute onions in olive oil until clear, add meat and brown. Add peppers to onions and meat. Add all other ingredients and bring to a slow boil; simmer 4 hours. this is enough sauce for 3 (12-oz) packages of spaghetti.

Smothered Steak
Smothered Steak 1-1 1/2 lbs round steak 1 small green pepper, cut into small pieces 1/2 cup onion, chopped garlic salt, salt and pepper to taste 1-2 tablespoons Worcestershire sauce 1-2 (10 3/4 oz) cans cream of mushroom or cream of celery soup 1 (8 oz) container sliced mushrooms 1/2 cup sour cream Cut steak into individual serving-size pieces. Combine in skillet with bell pepper and onion. Cook over low heat until steak is browned. Add soup, Worcestershire sauce, seasonings, mushrooms, and sour cream. Cook over medium heat, stirring occasionally until heated through. Serve over rice or toast.

SAUSAGE PINWHEELS 4 cups Bisquick or biscuit mix 1cup milk 1 cube oleo, melted 2 lbs. sausage Mix Bisquick or biscuit mix, milk and oleo, chill 30 minutes. Divide into 2 rectangular rolls. Sprinkle with uncooked sausage. Roll into a pinwheel. Put in refrigerator over night or freeze until ready to cook. Slice and place on a cookie sheet. Bake 350 degrees for 30 minutes.

Quick Hamburger Stroganoff
QUICK HAMBURGER STROGANOFF 1 lb lean hamburger 1 small onion, chopped 1 package beef stroganoff sauce mix 1 (10 3/4 oz) can golden mushroom soup 2 2/3 cups milk 1/4 teaspoon pepper 1 tablespoon Worcestershire sauce Cook and stir meat and onion, drain fat. Add sauce mix, milk (measure milk in soup can), pepper and Worcestershire sauce. Stir. Simmer together for 20 minutes. Serve over buttered egg noodles or rice. Makes 4-6 servings.

PEPPER STEAK 2 lbs lean round steak, 1 inch thick 2 green peppers 1 cup beef bouillon 1/2 cup soy sauce 1/2 teaspoon ground ginger 1/2 teaspoon garlic powder Cut steak into serving portions.Cut green peppers into 1/2 inch strips. Place half the steak in a crock pot. Arrange green peppers on steak. Place remaining steak on top. Mix bouillon, soy sauce, ginger and garlic powder. Pour over meat. Cover and cook on low setting for 8 to 10 hours or on high for 4 to 5 hours.

MEXICAN GREEN ENCHILADAS 1 can cream of chicken soup 1 sm. can evaporated milk 1/2 lb. American cheese 1 sm. can green chili peppers 1 pkg. green onion dip mix 1 lb. ground meat 1 doz. tortillas 1/2 c. cooking oil 1 c. chopped onion 1 tsp. salt 1/4 tsp. minced garlic 1/4 lb. longhorn cheese, grated Heat soup, milk and cheese until cheese melts; add chopped chili peppers and green onion dip mix. Brown meat, garlic and salt, drain. Add longhorn cheese and onion to meat. Warm tortillas in oil and fill with meat mixture. Roll and place in baking dish. Pour cheese sauce over top of tortillas. Cover with foil and bake at 350 degrees for 30 minutes

MEXICAN ENCHILADA CASSEROLE 1 lb. ground turkey 1 pkg. taco seasoning 8 oz. tomato sauce 1 lb. Velveeta cheese 1 can chopped Ro-Tel tomatoes 10 flour tortillas Brown ground turkey. Add taco seasoning and tomato sauce; simmer 5 minutes. Melt Velveeta cheese and Ro-Tel tomatoes over low heat, stirring often. Immediately add water, garlic and seasonings. Cover, simmer 30 minutes. In 12 x 8-inch glass dish, layer the noodles, meat sauce and cheeses. Repeat. Bake at 350 degrees for 30-45 minutes.

Italian Casserole
ITALIAN CASSEROLE 3 large chicken breast,cut into chunks 1 teaspoon seasoned salt 3 medium zucchini, sliced 1 medium onion, sliced 1 (4 oz) can mushrooms or 1/4 lb. fresh mushrooms 1 (16 oz) can tomato wedges, drained and juice reserved for garlic 1 clove garlic, minced and added to tomato juice 2 tablespoons minced parsley 1/2 teaspoon oregano, crushed 1/2 teaspoon celery seed Place chicken in 3-quart casserole, add other ingredients and pour tomato juice with garlic over all. Bake 1 hour at 350 degrees

Herbed Rump Roast
Herbed Rump Roast 1 3 to 4 pound boneless rump roast 2 tablespoons cooking oil 1 cup chopped onion 1 teaspoon beef bouillon granules 1 teaspoon dried marjoram, crushed 1 teaspoon dried thyme, crushed 1 bay leaf 1 clove garlic, halved 1/4 cup all-purpose flour 1 tablespoon snipped parsley Trim fat from roast. In a Dutch oven brown roast in hot oil. Drain fat. Combine onion, bouillon granules, marjoram,thyme, bay leaf, garlic and 1/2 cup water, and 1/4 teaspoon pepper. Add to Dutch oven. Bring to boiling; reduce heat. Cover; simmer 1 3/4 to 2 1/4 hours or until meat is tender. remove meat from pan. Discard bay leaf. For gravy, measure pan juices; skim fat. If necessary, add water to equal 1 3/4 cups. Combine flour, parsley, and 1/2 cup water. Stir into juices. Return to pan. Cook and stir till bubbly ad thickened. Cook and stir 1 minute more. Season to taste. If desired, sprinkle with additional snipped parsley. Makes 10 to 12 servings.

Don't Try This At Home
I learned an important lesson this week. When your dog is barking and spazzed and needs a time out, do *not* try to get a hold of the dog at the top of the stairs. It turns out 65 lbs of hyper dog can exceed your ability to stay balanced. Yes, I did fall down the stairs. Stuntman style. Somersault and a half on the way down. Luckily I'm very good at falling, since I do it so often, but it's usually intentional. So I'm generally okay, but trying to run is interesting. For you masochists and other connoisseurs of pain, I highly recommend taking a tumble down the stairs before going to bed at night, then getting up and immediately going on a 4 mile run. I think I'll make it part of my training routine. ****NOT****

Hamburger Hot Pot
HAMBURGER HOT POT 1 1/2 lbs. ground chuck or lean ground beef 1/4 teaspoon garlic powder 1 teaspoon salt 1/ 4 teaspoon pepper 6 medium potatoes, peeled and sliced 3 medium onions, sliced 1 (10 3/4 oz ) can condensed golden mushroom soup 1/2 cup water In skillet, brown ground beef; drain well. Add garlic powder and pepper; set aside. Place half the potatoes and half the onions in greased crockpot. Add browned beef. Top with remaining potatoes and onions. Combine mushroom soup and water; spread over top, being sure to moisten and cover evenly. Cover and cook on low 8 to 10 hours or on high 3 to 4 hours. Serves 4-6

Great Lasagna
GREAT LASAGNA 1 1/2 lbs ground beef 1 (8 oz) package lasagna noodles 3/4 cup chopped onion 1 (12 oz) can tomato paste 1 (6 oz) can tomato paste 1 cup plus 2 tablespoons burgandy wine 1 teaspoon oregano 3/4 teaspoon rosemary 1/2 teaspoon coarsely ground black pepper 3 eggs, slightly beaten 1 quart drained or dry cottage cheese 2 (6 oz) packages mozzarella cheese 1/3-1/2 cup parmesan cheese 1 tablespoon salt 3/4 cup chopped green pepper (optional) 2 1/4 cup hot water 1 1/2 tablespoons minced parsley 1 tablespoon minced garlic 3/4 teaspoon basil 3 bay leaves, crumbled Cook noodles in 3-quarts boiling, salted water until fork tender; drain. Brown meat, onion, and green pepper over low heat until soft; drain. Blend tomato paste, water, wine and seasonings together in saucepan. Bring to a boil, ad meat mixture and simmer 15 minutes. Set aside. Blend eggs with cottage cheese in bowl. Alternately meat sauce, noodles and mozzarella cheese (ending with sauce) in a 9 x 1

Easy Meatloaf
2 1/2- 3 lbs lean ground beef 1 (15- oz) (no. 2) can stewed tomatoes 2 slices fresh bread 2 teaspoons Natures seasoning Mix beef and tomatoes. Pull bread into small pieces. Add to beef. Mix in Natures Seasonings. Put in 13 x 9- inch pan, formed into loaf. Bake at 350 degrees until brown, usually about 60 minutes.
