Veal Chops With Basil Butter
INGREDIENTS: 25G softened butter 1 tbsp dijon mustard 1 tbsp freshly chopped basil olive oil 2 veal loin chops about 225g each salt, freshly ground pepper 1> to make the basil butter, cream the softened butter with dijon mustard and chopped basil in a mixing bowl then season with salt and pepper. 2> brush both sides of each chop with olive oil and season with alittle salt. 3> cook chops on a hot bbq or hot plate for 3-4 mins each side. 4> plate and add basil butter on top of the chops. serving suggestion:- some nice cooked seasonal vegies would go great with a glass of white dry wine

Driving Lessons (uncertainty)
I am trying to get a hold of people to see if they will teach me how to drive. this seems to be a growing problem for me. Either i have the money and need it for something else or (and this may be a first) I have the money but no one is around to teach me which is another skrewey situation. I just want to learn how to drive take the test and pass it and finally get my driver's license so i can move on to other things.

My Best Friend Just Came Out To Me.
He's been my best friend for 15 years and I never knew. I called him to meet up for dinner since he left for college in D.C. I asked during dinner if there was a special someone back at school for him and if so to tell me about her. He said: "well there is, but it's not a her...it's a he." Took me by total suprise. He told me he had been in denial through his entire high school years and that he finally decided to just take the brunt of pain that people inflicted emotionally on gay people while not hiding any longer. Now dont get me wrong I love my friend. But this is a shock. He was always the ladies man. He had many chick friends and several girlfriends while he was in highschool that were beautiful. The Knight Without Armour- Saga Continues

Traveling Back In Time For A Bit

Letting Go
So, at the end of last summer, I met a girl. Kristi. She was so hot, so attractive, and so amazing. I fell hard for this girl, gave her my heart completely as I always do when I fall in love. Environmentally Friendly?
So I decided to put vegetable oil in the diesel tank of my big Toyota family carrier, ostensibly to save the environment, but really because, here in the UK it’s a lot cheaper than diesel fuel (about half-price). First time I tried it I was a bit worried that I would fry my engine and so I only put in about a litre of rapeseed oil for 20 litres of diesel and it ran great. Since then I’ve been putting about 10 litres of veggie oil for every 20 of diesel and it works really well. If anything, it runs even smoother – beaut! I have noticed however, that if I’m standing behind the vehicle whilst it’s running in idle, it smells a lot less like a truck and a lot more like a doughnut fryer! The reason that it’s better for the environment is that vegetable oil is carbon-neutral, in that, whilst it contributes carbon to the atmosphere, the act of growing more rapeseed to replace the oil used will scrub out any carbon produced in burning it. My First Hit
The first time I smoked pot I didn't get high. I got my first job when I was 14 years old at McDonalds for $4.25 an hour. I got the job because I used to spend hours waiting there for my friend Katie to get off work so we could hang out at her apartment across the street by the park. Shooting Over Chillie Sauce (i Bullshit You Not)
Police in Miami report the manager of a Wendy's was shot in the arm in a dispute over packets of chili sauce. According to officers, a drive-through customer argued with an employee about the limit of three chili sauce packets. The customer demanded ten and got them. Police say the man then asked for even more and the manager came out to talk to him. Miami-Dade police spokeswoman Mary Walter say that's when the manager was shot several times in the arm, but didn't suffer serious injury. Police are still searching for the chili sauce shooter, who drove off with a woman in his car.

Won't Be On Ct Much Due To Blown Cable Modem
OK, I had to replace my cable modem at home and although that fixed the problem, Comcast will not let me through to the internet until they reset my account which will take up to 24 hours. This is the second modem I have gone through. Not sure what is killing them but this is getting to be a pain. Here is the bottom line though. Dangerous Job
People say that construction is dangerous work. I never felt that way. I know there are hazards involved, but I've always felt if you take the necessary precautions, unless there is some freak occurance, you'll be safe. I don't know the details of what happened yet, but I'm getting ready to go into work and my roommate tells me he just heard on the news that someone fell off one of the bridges on my project. This is the second accident like this since I started on this job in February. The first was fatal, someone fell from the slope paving beneath a bridge and landed on his head. At 1:04 this morning an eight week old baby girl died. I never knew her, or anything about her. All I knew is that she was profoundly blue. When a person is that blue it represents a long period of hypoxia, which is invariably fatal. I think sometimes that we are truly cruel to each other. I scarcely had time to wonder what could make a person that way when I got another call that answered my ponderances. A 45 year old woman who lost her husband to a violent crime, and just couldn't forgive. She became homeless after that and walked the streets in the area where he was beaten, robbed, and murdered, baiting those people into attacking her, and retaliating against people who fit the description of those who murdered her husband. Chickentenders Portabello Mushrooms
1 1/2 lb fresh chicken tenders 1 small onion, chopped 8 - 10 oz pkg portobello mushrooms, sliced 2 medium potatoes cubed** 1 clove of garlic diced 2 tbsp pkg chicken gravy 1/4 c hot water 1/4 c olive oil salt and pepper **after cubing potatoes place in microwave for 2 - 3 minutes on high or use potato setting until slightly tender. Heat large skillet to medium to medium high. Add 2 tablespoons of olive oil and chicken tenders; cook until no longer pink (approximately 5 minutes). Meantime, chop the onion, dice the garlic and prepare potatoes. When chicken tenders no longer pink, remove from skillet. In same skillet, add remaining olive oil, onion, garlic, potatoes and portobello. Cook until tender; approximately 10 minutes. Add 2 tablespoons of chicken gravy mixed with 1/4 cup hot water and bring it to a boil. Stir in chicken tenders and simmer for 20 minutes until the liquid thickens. The whole process is less then 30 minutes for preparation. Enjoy

1 lb hamburger 3 large stalks celery, chopped 2 onions, chopped 1 1/4 cups boiling water 1/2 cup cup rice, uncooked 1/2 teaspoon salt 1 can chicken and rice soup 4 oz mushrooms 1 tablespoon brown sugar 2 teaspoons soy sauce 1 teaspoon butter 1 1/2 cup chow mein noodles Cook and stir hamburger, celery and onion until hamburger is light brown, then drain. Pour water on rice and add salt in greased 2 qt casserole. Stir in hamburger, soup, mushrooms, sugar, soy sauce and butter. Cover and cook in 350F oven for 30 min; stir. Seafood Pasta
4 green onions, chopped 1/2 lb. sliced mushrooms 2 cloves minced garlic 1 stick butter 2 lbs. raw seafood (shrimp, scallops, etc.) 1 c. grated Parmesan cheese 1 c. grated Monterey Jack cheese 1 1/2 c. heavy cream 1/4 c. sour cream 1 tsp. salt 12 oz. cooked pasta Saute the first 3 ingredients in half the butter (reserve the rest). Then add the seafood and set aside. Saute: combine the remaining ingredients with reserved butter. Cook over medium heat until bubbly. Add seafood mixture. Serve over 12 oz. cooked pasta. Serves 6 to 8.

Honey Grilled Pork Chops
8-10 extra thin sliced pork chops 2 cups honey (use more if needed) soy sauce These chops may be grilled or baked in the oven. Grilling on the BBQ is the best. Pour honey in a bowl. Add soy sauce until sauce is a syrupy consistancy. Place chops in a bowl or cake pan and cover with sauce. (Place balance of sauce in a sauce pan.) Let the chops marinate for as long as you wish. They can marinate all day for a stronger flavor or they can be dipped and grilled. Either way works. Turn the sauce in the pan on low heat. Place chops on grill, brushing left over marinade onto chops as needed. Cook until cooked all the way thru. Chops may be baked in oven. When chops are finished, pour sauce from the pan into a pouring dish (sauce will be thin) and as chops are served the sauce can be added as each person desires.

Chicken With Cashews
1 pound chicken breast, boned & sliced thin 2 tablespoons soy sauce 1 tablespoon cornstarch 4 tablespoons oil 1/2 teaspoon salt 1 small chopped onion 1/2 pound mushroom, trimmed and sliced 1 small cabbage head, shredded 1 teaspoon sugar 2 cups cashews 1 teaspoon cornstarch 1/4 cup soy sauce 3 ounces Chinese noodles Place chicken, 2 tablespoons soy sauce and 1 tablespoon cornstarch in a bowl; let stand for 15 minutes. Heat 2 tablespoons oil with salt in wok or heavy skillet over high heat. Add chicken and stir-fry until white and firm. Add onion and mushrooms and stir-fry until vegetables are soft.

Beef Roast On The Grill
1 beef roast (3-5 lbs.) 1 pkg. dry onion soup mix 1 can mushrooms 2-3 cloves fresh garlic, mashed or 1/4 tsp garlic powder (optional) Place beef roast on a double thickness of aluminum foil. (Be sure the foil is big enough to wrap around the roast and seal.) Sprinkle the onion soup over meat and add (optional) garlic. Spread the mushrooms over soup. Place on grill about 2 to 3 hours (the larger the roast and the higher the temperature the quicker it will be done - but for the tenderest roast, try to keep the temperature closer to 260°F and aim for the longest cooking time). Turn occasionally. Keep the temperature in the grill between 250°F to 300°F. Roast will be done when the internal temperature reaches 150°F on a meat thermometer.

Frozen Strawberry Daiquiri Punch
2 (12 oz.) cans frozen orange juice 4 (12 oz.) cans water 1/2 (24 oz.) can powdered lemonade mix 1/2 (30 oz.) can powdered strawberry mix 1 c. sugar 3 pkgs. powdered daiquiri mix 9 qt. water 3 tbsp. lime juice 3 c. rum 3 c. fresh or frozen strawberries Mix orange juice and water. Add lemonade mix, strawberry mix, sugar, daiquiri mix and lime juice. Stir until dissolved. Divide into 3 parts and put in 3 ice cream containers. Then add to each container 1 cup strawberries, blended in blender, 3 quarts water, 1 tablespoon lime juice and 1 cup rum (to your taste). Mix. Freeze. Partially thaw before serving.

Mexican Stuffed Shells
12 large pasta shells (cooked and drained) 1 lb ground beef 1 small jar picante sauce 1/2 cup of water 1 cup spaghetti sauce 4 oz. shredded Monterey Jack cheese 1 can (2.8 oz) French fried onions 1 4 oz can diced green chiles Brown ground beef, drain and set aside. Combine picante sauce, water and spaghetti sauce. Stir 1/2 cup into ground beef along with chiles, 1/2 cup cheese and 1/2 can of French fried onions. Mix well. Pour half of remaining sauce mixture on bottom of 8x12 baking dish. Stuff cooked shells with ground beef mixture. Arrange shells in baking dish. Pour remaining sauce over shells. Bake covered at 350 for 30 minutes. Top with remaining cheese and onions. Bake 5 minutes longer.

Low Fat Chicken Alfredo
1 1/2 lbs. boneless skinless chicken breast 1 white onion (medium size) 8 oz uncooked (1/2 box) vermicelli spaghetti 2 oz shredded low fat Parmesan cheese 1/4 teaspoon allspice 1/2 teaspoon basil 2 teaspoons garlic powder (at least) 1/2 jar Heinz fat-free chicken gravy (6 oz) 1 tablespoon flour 6 oz low-fat sour cream Cut chicken breast into 3/4 inch squares. Sauté in small amount of vegetable oil over medium to medium-low heat. Dice onions and add to chicken. Cook chicken thoroughly, testing by cutting largest piece - juices should no longer run pink and chicken will be tender. Sprinkle liberally with garlic powder, basil and allspice; stir in. Stir in chicken gravy, reducing heat to a simmer. Sprinkle with flour and stir in water to achieve desired thickening. Do not rely on sour cream for thickness. Simmer for 5 minutes over low heat, stirring in 2 oz of Parmesan cheese. Fold in sour cream and remove from heat. Cook spaghetti according to package instructi

3 tbsp. flour 1/2 stick butter 2 c. milk 1 green pepper; optional 1 can cream of mushroom soup 3/4 c. grated sharp cheese 1 sm. jar pimientos, chopped 1/2 tsp. garlic powder 1 tsp. salt 3 c. chopped chicken Cook spaghetti in broth for half of the time required (listed on package). Melt butter and blend in flour until smooth. Stir in milk. Cook over medium heat, stirring until thick. Add green pepper and cook 5 more minutes over low heat. Add cheese, soup, and garlic powder. Blend well. Add chicken and spaghetti. Put in casserole and sprinkle with cheese. Bake at 350°F degrees for approximately 30 minutes. Serves 8. May be frozen. (For Turkey Tetrazini, use turkey in place of chicken.)

1 lb. ground beef (or ground turkey) 1/2-1 onion, diced 1/2 c. diced celery Diced pepper, if desired (I omit this!) 3/4 c. catsup 1/4 c. smoked barbecue sauce 1 tsp. dry mustard 1 tbsp. vinegar 1/4 c. brown sugar Brown meat, onion, celery (and pepper) lightly in frying pan or in microwave oven. Drain. In saucepan or crock pot, add other ingredients and simmer (the longer the better). Serves 4-6.

Pasta With Shrimp And Scallops
6 tbsp. olive oil 2 lbs. ripe tomatoes, peeled, seeded and chopped 3 tbsp. capers, drained 2 tbsp. anchovies, chopped 1 tbsp. garlic, chopped 3/4 lb. raw shrimp, peeled 1/2 lb. sea scallops, halved 2 tbsp. olives (Kalamata) chopped, optional Heat oil on high heat. Add tomatoes, capers, anchovies and garlic. Cook until tomatoes releases their juices and mixture thickens, stir occasionally about 10 minutes. Add shrimp and scallops cook about 2 minutes. Cook pasta (fettuccine or linguine). Pour sauce over pasta and serve.

Chicken & Broccoli Lasagne In Parmesan Custard
PARMESAN CUSTARD: 4 tbsp. butter 4 tbsp. flour 2 c. milk 1 c. chicken broth 3 whole eggs 1/2 c. grated Parmesan cheese 1/2 tsp. salt Pinch of ground red pepper & ground nutmeg LASAGNE: 15 lasagne noodles 2 tbsp. butter 1 c. chopped onion 3 garlic cloves, minced 2 whole skinless, boneless chicken breasts, cut into bite-size pieces Chopped broccoli Sliced mushrooms 1/4 c. chopped parsley Basil, salt, pepper to taste 1 lb. Mozzarella cheese, sliced thin 1/4 c. grated Parmesan cheese CUSTARD: Melt butter, stir in flour over low heat until smooth and golden. Stir in milk, whisk over medium heat until smooth. Stir in chicken broth. Cook, whisking, until mixture boils and is thick and smooth. Beat eggs in separate bowl, whisk sauce into eggs, return to saucepan. Let stand off heat. Summer Flu
Well this is a first for me to get a flu in 80 degree weather. 2 nights ago I started getting hot...then chills. Then came pains in my back. I have never gotten a flu before at this time of the year. Update On My Hero, My Mother..
As you all are aware of, my mother is back in the hospital. After the concert, I dropped in and visted with her. She still is fighting. When I originally checked her back in, she looked as she was pregnant. The tumor in her liver has grown that much. We weighed her at 189lbs! Since then, we drained the fluid and she weighed in at 168lbs...it's killing me to see the most couragous, loving woman in the world suffering like this. Shes in pain all the time now. She was pleading with me, begging, to be comfortable, to make the pain stop....and I can't do a damn thing except to kiss her, hold her hand and tell her how much I love her. Scallops Provencale Plump, slightly sweet scallops take almost no time to cook and make for an easy and delicious weeknight dinner.
