Grilled Chicken And Jicama Salad With Cilantro-lime Vinaigrette
Ingredients: For vinaigrette: 1/4 cup freshly squeezed lime juice 1/3 cup chopped fresh cilantro leaves 1/2 tsp. ground cumin Cayenne pepper 1/2 cup olive or canola oil (or mixture of both) Salt For salad: 1 1/2 lb. boneless, skinless chicken breast halves 1 large head romaine lettuce, torn into bite-size pieces 1 small jicama (about 12 oz.), cut into thin sticks 1 small bunch radishes, sliced into half-moons 1/4 small red onion, very thinly sliced 1 large avocado, diced 1 large mango, diced 1/4 cup hulled, roasted, salted pepitas Preparation: Preheat ridged grill pan. For vinaigrette: In medium bowl, combine lime juice, cilantro, cumin and pinch of cayenne pepper. Slowly whisk in oil until emulsified. Add salt and adjust seasonings to taste. In shallow dish, place chicken and cover evenly with 1/3 of vinaigrette. In grill pan over medium-high heat, grill chicken until just done, about 6 minutes per side. Ingredients for chicken stock: 4- to 5-lb. whole chicken, rinsed 16 cups cold water 1 onion, cut in half 1 carrot 1 celery stalk 2 green bell peppers, roasted 2 large tomatoes, roasted 1 bay leaf For the soup: 1/4 cup olive oil 1/4 medium Spanish onion, chopped 20 cloves garlic, sliced 5 limes, 4 juiced and 1 thinly sliced 8 cups chicken stock Salt and pepper to taste 3 small radishes, thinly sliced 1 avocado, peeled, pitted, and diced Preparation: To make stock, place whole chicken in large, heavy stockpot and cover with cold water. Bring water to boil, then reduce to simmer and cook 30 minutes. Skim off residue. Add onion, carrot, celery, peppers, tomatoes, and bay leaf. Continue simmering approximately 3 hours, adding water if needed to keep chicken covered. Strain stock into clean bowl. To make soup, in heavy stockpot heat olive oil over medium heat until hot but not smoking, add onion, and cook until translucent, about 3 minutes. Add sliced garlic and saut

Asian-glazed Grilled Quail
For this dish, instead of quails, you may use Cornish hens, available in any supermarket, or your favorite chicken parts. Ingredients: 3/4 cup garlic oil 1/2 cup soy sauce 2 tsp. chipotle purée 1/2 cup honey 1/2 cup dry white wine 6 to 8 partially boned quail (about 5 1/2 oz. each), butterflied Preparation: Prepare outdoor grill, or heat grill pan over high heat. In large bowl whisk marinade ingredients together. Rinse and wipe quail dry inside and out with paper towel. Add quail to marinade and toss to coat evenly. Grill quail about 2 1/2 minutes on each side, until well browned on outside and opaque throughout. Place on serving platter or individual plates, and serve immediately. Makes 6 to 8 servings.

Bird Feeder!!!
I bought a bird feeder. I hung it on my back porch and filled it with seed. Within a week we had hundreds of birds taking advantage of the continuous flow of free and easily accessible food. But then the birds started building nests in the boards of the patio, above the table, and next to the barbecue. Then came the poop. It was everywhere: on the patio tile, the chairs, the table...everywhere. Then some of the birds turned mean: They would dive bomb me and try to peck me even though I had fed them out of my own pocket. And others birds were boisterous and loud: They sat on the feeder and squawked and screamed at all hours of the day and night and demanded that I fill it when it got low on food. After a while, I couldn't even sit on my own back porch anymore. I took down the bird feeder and in three days the birds were gone. Add ground beef and cook until lightly browned. Add onion, bell pepper, garlic, salt, black pepper and cumin, and cook 10 minutes, stirring often. Place potatoes in skillet, cover, reduce heat to medium-low and cook about 40 minutes. Add tomatoes, and simmer 5 more minutes while covered. Remove from heat and serve over 1 cup rice or with whole-wheat flour tortillas.

Sooo on sunday i experienced my first NASCAR car race ever. Infineon Raceway up in NorCal, it was incredible. Ingredients: 2 tsp. salt 1/4 tsp. black pepper 1/2 tsp. cumin 1 tsp. garlic powder 2 1/2 lb. chicken, cut into pieces 1/4 cup vegetable oil 2 cups ripe mango, cut into 1/2-inch cubes, divided 1/2 tsp. salt 1/3 cup finely chopped red onion 1/2 cup orange juice 1/2 tsp. orange zest (finely grated orange peel) 3/4 tsp. fresh ginger, finely minced or grated Chopped fresh parsley for garnish Preparation: Combine salt with black pepper, cumin, and garlic powder. The Will To Try
If you really love someone then let them go. You can't hang on to them if they don't love you back. You can't force someone to love you no matter how much you want to. It is hard to let them go. Life is so unfair. Well life has to be unfair. If life was fair then we wouldn't know the things that we do. Our society would be alot worse than what it is. Chicken Kabobs Mexicanos
Ingredients: 2 tbsp. olive oil 1 tsp. cumin 2 tbsp. chopped fresh cilantro 1 lime, juiced Salt and ground black pepper to taste 2 boneless, skinless chicken breast halves, cut into 1-inch pieces 1 small zucchini, cut into 1/2-inch slices 1 onion, cut into wedges and separated 1 red bell pepper, cut into 1-inch pieces 10 cherry tomatoes Preparation: In shallow dish mix together olive oil, cumin, chopped cilantro, and lime juice. Season with salt and pepper. Add chicken and mix well. Cover and refrigerate at least 1 hour. Preheat grill for high heat. Thread chicken, zucchini, onion, red bell pepper, and tomatoes onto skewers. Brush grill with oil, and arrange skewers on hot grate. Cook approximately 10 minutes, until chicken is cooked through, turning to cook evenly. Serve with rice, salsa, and warm tortillas. Makes 4 servings.

Garlic-lime Chicken
Ingredients: 1/2 cup soy sauce 1/4 cup fresh lime juice 1 tbsp. Worcestershire sauce 3 garlic cloves, minced 1/2 tsp. dry mustard 1/2 tsp. coarsely ground pepper 4 boneless, skinless chicken breasts Preparation: In glass bowl mix soy sauce, lime juice, Worcestershire sauce, garlic, dry mustard, and pepper. Place chicken in reclosable plastic bag. Pour marinade over chicken in bag, close bag securely, and toss to coat chicken well. Place bag with marinade and chicken in refrigerator 30 minutes or more. Drain and discard marinade. Sprinkle chicken with more coarsely ground pepper. Grill until cooked (can also be pan-fried). Makes 4 servings.

Margarita Chicken Drummettes
Drummettes, the bottom portions of chicken wings, make tasty and tidy appetizers. Ingredients: 1 cup tequila Juice of 2 limes 1/4 cup olive oil 1/4 cup plus 2 tablespoons honey 2 teaspoons salt 4 pounds chicken drummettes Lime wedges and salt for garnish 1 teaspoon Sal y Limón prepared seasoning mix Lime zest for garnish Preparation: Whisk together the tequila, lime juice, oil, honey, and salt in a large glass bowl or non-reactive casserole dish. Add the chicken. Cover and refrigerate for 8 hours or overnight. If possible, turn the chicken at least once during marinating. Preheat oven broiler to 500°F. Remove the drummettes from the marinade and arrange on a broiler pan. Broil for about 10 minutes on each side, or until skin is lightly browned and chicken is cooked through. To serve, rub the rim of a glass plate or platter with a lime wedge. Dip edges of plate in salt, as if preparing a margarita glass. Mound the chicken in center of plate. Ingredients: 2 cups uncooked, long-grain white rice 1 lb. fresh poblano chiles, stemmed, seeded and quartered 1-1 1/2 lb. boneless, skinless chicken breast cutlets Kosher salt Freshly ground black pepper 1 tbsp. olive oil 1 medium onion, halved and thinly sliced 1 cup Mexican crema 1/4 cup chopped fresh cilantro 1/4 cup chopped fresh flat-leaf parsley Preparation: Begin cooking long-grain white rice according to package directions. Preheat broiler. Broil chiles, skin side up, until skin blisters and begins to blacken, about 5 minutes. Remove from broiler and place in sealable plastic bag; close bag and let stand 10 minutes. Remove and discard skin from chiles, then cut them into thin strips. Season both sides of chicken cutlets with salt and black pepper, to taste. In large, nonstick skillet over medium heat, heat olive oil. Lightly brown chicken on both sides, about 2 to 3 minutes per side. Don't overcook. Ingredients: 1 1/4 lb. whole chicken, quartered Boiling water, enough to cover chicken 5/8 tsp. salt, divided 2 1/2 cups tomatillo sauce (also sold as enchilada sauce) 5 tbsp. vegetable oil, divided 1/4 cup sour cream 1 tbsp. minced onion 12 corn tortillas 1/3 cup shredded Monterey Jack, cheddar cheese or combination Preparation: Place chicken quarters in boiling water, add 1/4 tsp. salt, reduce heat and simmer until cooked through. Remove chicken from pot and cool. Skin and bone chicken, then shred. Sprinkle with 1/8 tsp. of the salt. Preheat oven to 350°F. In medium saucepan heat tomatillo sauce over low heat 5 minutes. While sauce heats, put 1 tbsp. of the oil in another pan, add shredded chicken and warm over low heat. Stir in sour cream, onion, and remaining salt, cover and set aside. In medium-size skillet, heat remaining oil over medium-high heat. Using tongs, fry each tortilla 5 seconds on each side. Drain and cool slightly. Pour 1 cup of sauce onto plate.

I've seen the Mumms and the Bulletins, and well of he was a nobody then nobody would care. I don't know what the NTSB stats are for that day, but I bet allot of people dies that same day, and no one cares about all of 'em. When I interview wrestlers, I usually ask how they'd like to be remembered. The reason for the question isn't openly discussed, but it's probably pretty transparent. Pro wrestling has an alarming number of premature deaths. Any time I interview a WWE star, there's always that horrible thought that no matter how young or healthy the wrestler may seem, the next story I write about them could be an obituary. I thought I'd sit and write some stuff while there is not work to do here. I had to do some editing off my family list cause a few took me off of theirs. I'm pretty pissed but nothing unusual for me. I Know What Boys Like.
Maybe it's the fact that I am not controlling, that drives men to me. I don't care what you do as long as you are faithful to me. Yeah, it's one of those days! My birthday & anniversary were both on Saturday. Pretty uneventful, really. Nothing special happened. The best part was having a family outing. I bought a bird feeder. I hung it on my back porch and filled it with seed. Within a week we had hundreds of birds taking advantage of the continuous flow of free and easily accessible food. But then the birds started building nests in the boards of the patio, above the table, and next to the barbecue. Then came the poop. It was everywhere: on the patio tile, the chairs, the table...everywhere. My All Time Favorite Scarry Movie.
My all time favorite scarry movie is "The Pit and the Pendulum" Starring Vincent Price. Man that dude was scarry. I was like 8 years old when I saw this movie. I went to the Deanza Drive-in with my Aunt and cousins. She had an old pice of shit car. We had to stop at every other gas station to let the damn thing cool down from over heating. I Did Not Think I Would Blog Again This Week...
But I was wrong. Yesterday, June 25, 2007, WWE legend Chris Benoit was found dead along with his wife and son. I'm not here to speculate on how or why. That wouldn't be right, and it's not my job. Tonight, I just want to remember Chris Benoit for the worker he was. I saw him wrestle live in person one night in Cincinnati. It was May 2, 2006, WWE Smackdown from the US Bank Arena. A spot in the next round of the King of the Ring was on the line that night in a match against Finlay. This match showed me what kind of a technical genius Chris Benoit really was. Benoit did not win the match that night - but he earned my respect as one of the best damn technical wrestlers alive. He was a fighting champion - I remember his matches with Booker T and Orlando Jordan over the US Title. Hell, I even remember Best of Seven series I in the 90s for the TV title - when he showed what kind of sportsman he was by refusing to take a victory by disqualification. That right there spoke volumes.

Ok ... those of you that have spoken with me at length know somewhat of what I deal with. I Am Back
I am back did you miss me :) ok quick and the dirty on me for real I WAS active Air Force for almost 7 years now I opted to get out with the whole force shapping thing, I lost my grandfather (which I loved very much) from there I had a nervious break down was rapped apparently in the process by my airman, my friends or so called friends bailled on me for real! I tried to commit suicide (apparently it didn't work ) hahhahah I don't remember alot of the events due to being plastered on barbituates and the suicide attempt caused some memory problems long and short but I am getting along now it would seem, I am currently on terminal leave and will soon be a civilian once again wha hoo I am sad a bit because I did so love serving my country but I am afraid I just can't deal with the stress of it anymore, I accomplished making sargent sooo I am pleased with that out of the whole thing all in all I am thankful for the experience I hate that I was hurt but it just made me so much stronger.

Canadian pro wrestling superstar Chris Benoit, his wife and son have been found dead at their suburban Atlanta home, and police said Monday they are treating the matter as a possible murder-suicide. Tired!
I haven't posted in an eon on here. For three days a week I've been watching a friend's children. Her oldest plays softball and is only five years old. I love going and watching her play. I'm trying to make my peace with the fact that it would be dangerous for me to have children considering my health problems. Sometimes it's difficult. Ok, a lot of the time, it's difficult. I lost it in the car when a family friend was watching me with them and said "you'd make a great mom" These kids are so beautiful. Would you believe that I'm about to be a Godparent to these three beautiful babies? I can't wait. I know that it is a big responsibility. Otherwise, I'm doing fine. I'm tired, but what do you expect after a 12 hr shift. Benoit was 40 years old. A trainee of the legendary Stu Hart, Benoit began his career in 1985 in Calgary after training with Stu and the Hart Family in the infamous Dungeon. Benoit idolized former World Tag Team Champion Dynamite Kid, and the high-flying style Benoit utilized throughout his career was influenced heavily by the British Superstar. However, his training in the Dungeon helped mold him into one of the best technical grapplers in sports-entertainment history as well. I must of touched a nerve of someone for them to have blocked me because I made a comment in their Mumm. It was the leader of a pack on here that promotes the thought and the farse of downrating. There is no such thing as being down rated, any point is an up rate. I just pointed out they counter dictate what they supposedly stand for. CANTON, Ohio — Supporters of a police officer accused of killing a woman and her unborn child huddled Sunday at a closed prayer service scheduled before police found what they believe is her body and arrested him. A massive search for the nearly nine months pregnant woman ended Saturday when authorities announced they found a body they believed to be that of 26-year-old Jesse Davis. Bobby Cutts Jr., a police officer they suspect is the father of the unborn child, was arrested on two counts of murder. A church service to show support for Cutts that was scheduled before the body was found was closed to the media. Cutts' pastor, the Rev. C.A. Richmond, declined to comment on his way into the service. Davis was due to deliver a baby girl on July 3 but was reported missing after her mother found Davis' 2-year-old son home alone, bedroom furniture toppled and bleach spilled on the floor.
