I've made a hundred fried rices, a thousand times with a thousand restrictions, and for a thousand leftovers.
I've even used leftover fried rice to make fried rice.
I think I could use some MSG if I'm ever going to compete with the commercial grades.
And no- there's not a single fucking thing wrong with MSG- its sea kelp broth dehydrated into solid flakes.
Now where was I?
Ah yes, I'm always looking for the next big idea when it comes to rice. I mean- let's face it, 70% of the world uses it as their main dinner staple. It's dry, its easy, it keeps forever. Don't be a retard about this.
So I was watching iron chef hoping to catch a few new fried rices, I saw crab fried rice, lobster fried rice, beef fat, pork short ribs, liver, fish- the works
but it wasn't about the rices, it was about the sauce and the protein.
Then I watched a chinese chef make his signature rice, and I ... couldn't stop thinking about it for a week.
It's so simple, and yet... so brilliant.
Boil some long grain rice, crack a couple eggs, beat them into the warm rice, and then fry that mixture LIGHTLY in salt pepper soy sauce garlic- whatever gets you off.
The finish didn't have those lil beads of oil so typical of fried rice. In fact my first round with this method I only added salt and pepper, it was the lightest fluffiest tastiest fried rice I had ever had. And I only used about an 8th of the oil I usually did.
The eggs were cooked through- made a crsipy finish in a couple places, and the flavors were balanced and went all the way through
as I was eating it I wanted some soft cheese added to the mixture and just a sprinkling of garlic and soy sauce, but man... this method is easy and wonderful.
So this
is my new fried rice method.

The guy that I borrowed this from actually fried twice, and the latter was a light fry because he didn't want to wilt the lettuce he had just added.
I think any light fry item (blocks of cheese, tofu, greens, even tomato) would be great for that second fry method.
And yes... I lose sleep over this shit.
