INGREDIENTS:
* 6 lean pork chops, about 3/4-inch thick
* salt and pepper
* 3 to 4 sweet potatoes, uncooked, peeled and cut in half lengthwise
* 2 medium onion, thinly sliced
* 1 can (6 ounces) orange juice concentrate
* 1/2 cup brown sugar
* dash cinnamon
* dash allspice or ground cloves
* salt
PREPARATION:
Season pork chops with salt and pepper and brown lightly in a large skillet. Place pork chops in a baking dish; place sweet potatoes around pork chops; cover with onion slices. combine orange juice concentrate with the brown sugar and spices; pour over the pork chops and sweet potatoes.Sprinkle with salt. Cover and bake at 350° for 45 to 60 minutes, until chops and sweet potatoes are tender.
Pork chop casserole serves 6.
