Ingredients:
1 tbsp. olive oil
1 lb. lean ground beef
1/2 cup yellow onion, finely diced (1/4 inch or less)
1/2 cup green bell pepper, finely diced (1/4 inch or less)
1 tbsp. fresh garlic, minced
1 tsp. salt
1 tsp. coarse, freshly ground black pepper
1 tsp. ground cumin
2 large russet potatoes, peeled and diced into inch cubes
2 large tomatoes, cored, peeled, seeded and cut into 1/2-inch pieces
Directions: Heat large skillet over medium heat, then add olive oil. Add ground beef and cook until lightly browned. Add onion, bell pepper, garlic, salt, black pepper and cumin, and cook 10 minutes, stirring often. Place potatoes in skillet, cover, reduce heat to medium-low and cook about 40 minutes. Add tomatoes, and simmer 5 more minutes while covered. Remove from heat and serve over 1 cup rice or with whole-wheat flour tortillas.
